GENERAL DESCRIPTION
GMS 90 is a food emulsifier containing a minimum of 21% -monoglyceride that has been hydrated to optimize the proper
dispersion in dough. GMS 90 is a superior crumb softener used in yeast leavened dough products such as breads, buns, sweet
dough, Danish, croissants, tortillas, frozen dough and yeast raised doughnuts to improve texture and crumb softness, extending
product shelf life. This product contains less than 1% trans fats and will help aid in producing a product that will meet the less than
0.5 grams per serving in your product.
GMS 90 is manufactured by hydrating distilled monoglycerides with the addition of propionic acid, and phosphoric acid as
preservatives. GMS 90 is approved for use in foods as described in FDA: 21 CFR 184.1505.

GMS 90 is available in 50 lb. polyethylene lined cartons pre-palletized in 2,250 lb. units, 450 lb. poly-laminated fiber drums prepalletized in 1,800 lb. units and 35lb. plastic pails pre-palletized in 1,260 lb. units. Product from unopened containers that have been
stored under recommended conditions (55-85F/13-29C) may be used for up to 12 months from the date of manufacture.
