PROCESSING OF MILK

At mother dairy, processing of milk is done through state of art

microprocessor technology which integrates and completely automates all
function of milk processing and ensures high product quality, reliability, and
safety. The various stages of milk processing are :

Clarification

• The chilled milk from the silos goes to the clarifier after pre-
heating. The clarifier spins the milk at very high speed, removing all
dust particles that are invisible to the naked eye.

Standardization

• Milk from different breeds of cows and buffaloes varies in its

composition. Hence, to make milk uniform in composition, it is
standardized by raising or lowering its fat and SNF percentage to a
desired level. So as to deliver the milk to consumers as per prescribed
PFA norms.

Homogenization

• In this process, the milk is subjected to a very high pressure due

to a very high pressure due to which the large globules present in milk
are broken down into tiny droplets. The milk fat gets evenly destribuled
and milk appears whiler . Milk is homogenized for consumers. Who do
not like creamy layer on top. Homogenization improves palatability of
milk.
Pasteurization

• In this process. The milk heated at 720C for 15 seconds and then
is rapidly cooled down to 40C this process kills all the pathogenic
bacteria present in the milk making milk sale for consumption
Pasteurization unlike boiling does not affect the nutritive value of the
milk.
• Pasteurization, named after French Scientist Louis Pasteur who
invented the process was first applied to milk by dr. soxhiet of
Germany.

FORTIFICATION WITH VITAMIN ‘A’

Homogenized toned milk during processing is fortified with Vitamin ‘A’

The deficiency of vitamin ‘A’ can lead to night blindness and skin horning.

After processing. Milk is dispatched in hygienic & sterile milk tankers or

packed in high grade material and transported under cold chain to your
nearest milk booth. Everyday, as part of quality assurance process, milk
Samples are collected from milk shops randomly and are tested.

The above processes help us in maintaining our stringent quality standards

in order to ensure that the milk you get is fresh, pure and healthy.

MILK AVAILABILITY

Mother dairy ensures milk availability across all the retail outlets through a
control room set up at the dairy premises. The control room is very vital
for efficient distribution of milk to all the retail outlets. It organizes,
distribution routes so that shops do not run out of milk.
Each milk tanker is fitted with a wireless set. As soon as the person in the
control room learns that a shop is running out of milk, he contacts the
tanker nearest to the shop on wireless which, then delivers the milk to the
shop.
PACKAGED MILK

Packaging of milk has undergone remarkable innovations in the past few

decades. Tamer proof, hygienic and labeled pouches/packs have replaced
the traditional bottle. These innovative methods of packaging milk have
rendered it free from adulteration and tampering. This has enabled us to
provide consumers with different variants of milk labeled and color coded
to their requirement.

CARE FOR THE ENVIRONMENT

Mother dairy not only takes care of people’s health by providing good
quality milk & milk products but also cares a lot for the environment.

• Solar Panels

In an effort to conserve fuel, Mother dairy utilizes the abundant solar

energy to preheat the water going into the boilers. This also minimizes the
pollution caused by burning of fuels like coal, oil, etc.

• Rainwater Harvesting

For maintaining ground water level, Mother dairy has installed rainwater
harvesting plant in the dairy premises.

• Effluent Treatment Plant

The water used for cleaning equipment and tankers is treated at the effluent
treatment plant in the dairy before being discharged into the sewage
system.

SALES UNPASTEURISED MILK
The sales Unpasteurised milk process starts right in the
many villages where the local dairy cooperatives sell their
unpasteurised milk straight to consumers from the cooling
tank. In the towns, other dairy farmers sell their milk direct
to the consumer. In all, 44% of Indian milk production is
sold unpasteurised to consumers in this way.

The remaining milk is transported from the village co-

operatives to the co-operative milk-processing industry,
which is organised at state level. These businesses make
pasteurised milk and other consumer products from the milk
delivered to them.

The number two business, the Mother Dairy cooperative

based in New Delhi, recorded a turnover in the 2003/04
financial year of almost EUR 150 million. All dairy co-
operatives have their own sales channels for packaged and
loose pasteurised milk and other dairy products.

Mother Dairy’s turnover has been growing at the rate of

20% (CAGR) over the last 3 years and is expected to exceed
Rs. 2700 crores by end ’07-’08. Mother Dairy plans to
