Stiind ca recolta de la un singur arbore de cacao are ca rezultat 450 g de ciocolata, vom pretui fiecare tableta mai mult.
Arborele de cacao este foarte dificil de cultivat, intrucat nu este fructifer in afara zonei cuprinse intre Tropicul Capricornului
si Tropicul Racului, supranumita "centura de cacao", care se intinde de-a lungul Ecuatorului. Odata polenizate, florile se
transforma in pastai ("cabosside"), care contin cam 30-40 de seminte in forma de migdala, cunoscute sub denumirea de
"boabe". Acestea sunt inconjurate de o substanta dulce si zemoasa. Planta nu are un sistem propriu de deschidere a
fructului si de scuturare a boabelor de cacao: aceasta inseamna ca fructele trebuie taiate una cate una de muncitori, care
deschid pastaile cu un cutit cu lama subtire si ascutita, urmarind cele 4 stadii succesive de productie descrise in randurile
urmatoare.
Fermentarea
Dupa ce sunt taiate pastaile, boabele sunt scoase si acoperite cu frunze de bananier,
pentru a grabi procesul de fermentare. Aceasta reprezinta cea mai importanta etapa din
procesul de fabricatie, deoarece in acest moment se formeaza aroma distinctiva de
cacao si, in acelasi timp, se reduce gustul amar si aciditatea semintei. Procesul de
fermentare dureaza 5-6 zile, in functie de diferitele varietati de cacao.
Uscarea
Boabele se usuca la soare timp de 1-2 saptamani. In timpul acestui proces ele isi schimba culoarea si isi pierd mai mult de
jumatate din greutate. Gradul de umiditate al semintei se reduce de la 60% la aproximativ 5-6%.
Prajirea
Acesta este de fapt punctul de plecare al ciocolatei si are o foarte mare importanta, deoarece prin acest proces se amplifica
gustul si aroma de cacao, printr-o serie de transformari chimice care permit scaderea in continuare a umiditatii boabelor si
transformarea intr-o substanta mai fina si fragila.

People ask us all the time how we pack all of those chocolate boxes, especially at busy holiday times of year. The answer is
that we do it all by hand. Unlike large corporations, we do not have auto-packing machinery that does this for us.
Then we pack one flavor at a time. This turns out to be much more efficient than packing a single box, then moving on to
the next box:
The vast majority of chocolate brands in the Unitedc States have given up on “set up boxes” and gone to “folding
boxes.” The reason has solely to do with cost: fold-up boxes are much, much cheaper.
I’m proud to say that Dan’s Chocolates continues to use setup boxes for our gift boxed chocolates. We have for
seven years, and as long as I’m running the outfit, we always will. This is what a setup box looks like:
They are much sturdier than fold-up boxes, which protects the chocolates and gives the gift recipient the feeling
that they are receiving something of value. They can also be reused for storage of one’s personal trinkets and other
collectibles, which is common among our customers.
Chocolate set-up boxes are about 300% the cost of fold-up boxes, or 3X as expensive, which is why so few
companies use them anymore. But Dan’s Chocolates gifts are not inexpensive, and I believe customers notice the
difference. We’re about high-quality products, not about cutting corners.

In urma cu aproape 100 de ani, belgienii au realizat praline umplute cu o crema fina de ciocolata. Pentru ca erau asa
