Feta Turkey Meatballs


Adapted from Inspiralized

Ingredients
2 shallots, minced
1 piece of whole wheat bread, for breadcrumbs
1 lb ground turkey
1 t oregano
6 T finely chopped fresh parsley
1/2 c crumbled feta cheese
2 garlic clove, minced
4 tablespoons of warm water
salt and pepper to taste

Instructions
1. Preheat oven to 400
2. Spray a large baking sheet with cooking spray.
3. Make breadcrumbs from the slice of bread, I used my hands but you can use a food processor
too.
4. In a mixing bowl, add the shallots, water, breadcrumbs, garlic, turkey, oregano, parsley, feta,
garlic, salt and pepper. Mix with your fingers thoroughly.
5. Make 18 meatballs, by using your hands to mold them into golfball-sized balls
6. Place on baking sheet and put in the oven for 10 minutes then flip and cook in the oven for 1012 minutes longer until they start to brown.
7. While meatballs are cooking make Tzatziki Sauce
8. If freezing, freeze meatballs individually on a baking sheet covered in wax paper. After
meatballs are frozen place in freezer bag.
