June is here and just like that it feels like summer has arrived! The school year is coming to an end and
so isthe year for our current board.At our June Member Social we will vote on the board positions
for the 2016-2017 term. We will also have a presentation from a local dance company. It's going to be a
great way to end the year.
Our first Open House last month was a huge success. We metseveralmoms in the community and

had five new members join in May! You canlearn a littleabout each new member below.
Our summer calendar will be filled with park playdates, farm visits, and outdoor activities. If you'd like
to host an event or have an idea, pleaselet a board member know and we willget it set up for you. We
wouldlove to have all of our members host events!

Helping Hands Program


Part of the support we have in MOMS Club of Eugene is helping each other during times of family
additions, upheaval, andstress. This is not just limited to having a baby, things like moving or illness in
the family also warrant a need for this program. Our Helping Hands program provides moms with
assistance, usually giving several meals in a time of need. However, this program can provide more
than just meals. We canarrange assistance with child-care, running errands, even a phone tree! We
want all of our members tobenefit from this program in a time of need and we are more than willing
to customize an assistance schedule that works well for each situation. Please let us know if a
circumstance should arise in your life and you feel this program would help you! Contact Carole

She has a son, Everett (11/30/2014), and a daughter, Eloise (12/30/2015)
Her hobbies include sewing and crafts and she doesn't work outside of the home but will be serving as
the Event Coordinator for Tiny Tots next year.

Sarah Burlingame
Partner: Daniel Roll
She has a daughter, Cecilia (10/13/2012) and a baby boy due in August.
Her hobbies and interests include hiking, gardening, and farming. She occasionally volunteers at
Grassroots Garden.

Kate Johnston
Partner: Todd
She has a daughter, Sofia (1/6/2012) and a son, Elias (1/31/2014)
Her hobbies and interests include photography and book making. She does not currently work
outside of the home.

Paisley Anderson
Partner: Bryan
Son: Ellis (10/10/2014)
She recently moved her from Las Vegas and her interests include art, nature, music, hiking, movies
and exercise.

Rachel Mitchell
Partner: James
Sons: Benjamin (3/15/2011), Samuel (5/20/2013), Gabriel (7/4/2015)
She was a member (also president and founder) of the Springfield Chapter of MOMS Club. Her
hobbies and interests include reading and crafts. She doesn't work outside of the home.

Event Spotlight: Horse Barn Tour


Last week Bridget Beal led us on a tour of her in-laws horse barn. The kids got to see, pet, and feed

horses. We got to watch a beautiful horse run and get exercise in the round pen. Then the kids got to
take a "tractor" ride down to the creek to have lunch and throw as many rocks as possible into the
creek. It was such a fun morning in this majestic setting! We are hoping to do one more later this
summer.

We have two recipes this month!!!


Chocolate Banana Cake

One Bowl(ish)Banana Cake:

1 C. Milk
2 tsp. Vinegar or lemon juice
- combine & set aside
2bananas, the uglier the better
1 1/4 C. Sugar (we use sucanat or rapadura, but whatever is fine)
1 tsp. Vanilla
1/2 tsp. Salt
- put it all in a large mixing bowl & mash until well mixed.
1/2 C. Butter or coconut oil, melted (I do a mix)
2 eggs
- mix in completely
2 C. Flour (we use whole wheat or spelt, but whatever is fine)
1 tsp. Baking soda
- add to bowl in additions, alternating with milk mixture, mixing in gently but completely.
- pour into greased 8" pan
-bake at 275 for 35-45 minutes, or until top springs back when pressed
- remove from oven and cover
- cool to room temp before serving, keeping covered
***We mix all sorts of goodies into this. Chocolate chunks, nut butters, berries, etc. Will last 4-6 days
in the fridge.Freezes great, too!***

Fresh Strawberry Muffins

Ingredients
3 cups Gold Medal UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
3/4 c light brown sugar
3/4 c granulated sugar
2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
4 eggs, beaten
1 cups butter, melted and cooled
2 cups fresh strawberries, sliced and slightly mashed
Instructions
1. Preheat oven to 425.
2. Combine dry ingredients in large mixing bowl.
3. In small bowl, combine eggs and oil.
4. Stir strawberries into egg mixture.
5. Blend in flour mixture until thoroughly combined; but do not over beat.
6. Spoon into greased muffin tins until nearly full.
7. Bake at 425 for 5 minutes.
8. Reduce heat to 350 and bake an additional 15-19 minutes or until a toothpick inserted in
center comes out clean. (Only an additional 5 minutes for mini-muffins.)

nobody else will see them.

New Baby Corner

Please welcomeCrystal's daughter, Lily Mary Leahy, to the world!


Lilly was born on May 28th.
She weighed 6lbs 14oz and 20 inches long.
Big brother Liam is so excited!
We'd like to welcome all new babies in the newsletter, so let any board member know the details and we'll
include it here! And please let us know if we missed you, because we'd be happy to add your new little
one in next months newsletter.

Playgroups are a great way to connect with moms of kids with similar ages. Starting May 2016 we have
changed the groups from birth range to all-ages instead. Locations vary each week based on who is
hosting. Check facebook or the event calendar (/calendar.html) for more information.
