The Chief Commissioner of Income Tax (CCA), Bangalore region invites applications for the recruitment of Meritorious Sportspersons in different Games / Sports as listed below for the post of INSPECTOR OF INCOME TAX in the pay scale of Rs. 9300-34800 + Grade Pay of Rs. 4600/- and TAX ASSISTANT in the pay scale of Rs. 5200-20200 + Grade Pay of Rs. 2400/-. Introduction: Spices may be defined as one or other of the various strongly flavoured or aromatic substances of vegetable origin obtained from tropical or other plants, commonly used as condiments or employed for other purposes on account of their fragrance and preservative qualities. Within the compass of this broad definition a large number of substances may be included, but since the trade in spices on any significant scale is confined to a relatively few only the principal ones are selected below. The spices used are black pepper, capsicum, cinnamon and cassia, cloves, nutmeg and mace, cardamom, spice seeds as corriander, cumin, anise, fennel, carawag, fenugreek and dill, dry ginger, turmeric etc. The above spices are used in various blends, to produce, the spice mixture in the form of blends, curry powder and paste for the preparation of food items. The two largest manufacturers and exporters of curry powder and paste are India and United KiDgdom. The latter is also the largest importer of these items. At a considerably lower level, Singapore has in recent years emerged as a significant exporter of the. curry powder and paste. PROPERTIES AND USES OF SOME SPICES - Black Pepper: Black pepper consists of the dried, fully developed unripe fruits. It is nearly globular in shape, about 4-5 mm in diameter with a characteristics coat with deep set wrinkles. The pericap is thin and encloses a single seed with a hollow centre. Pepper fruits are used mainly after drying as black pepper or after processing into white pepper. Pepper owes its characteristics, pungency and aroma to its oleoresin which can be obtained by extracting the crushed, not fully ripe fruits with volatile solvents. The numerous types of Indian black pepper are characterised by variations in size, colour, flavour and physico-chemical properties. The following are the compositions of black pepper. Moisture 13.2% Protein 11-5% Fat 6.8% Fiber 14.9% Carbohydrates 49.2% Mineral Matters 4.4% mg/100 gm 0) Calcium 460 (ii) Phosphorous 198 (iii) Phyjin phosphorous 115 (iv) Iron 16.8 (v) Jontsable Iron 3.2 (vi) Thiamine 0.09 (vii) Riboflavine 0.14 (viii) Nicotinic Acid 1.4 Vitamin A value 1,800/gm Presence of oxalic acid 0.4-3, 4% Black and white pepper are among the major condiments employed for seasoning freshly cooked and prepared foods, preservation and curing of meals, added to pickles, sausages etc. Capsicum (Chillies): The dry red chillies with thin pericarp, feed seeds and firm stalk, of medium size, bright colour, glossy appearance, and high pungency, fetch a high price in the market. The pungent principle of chillies is capsaicin Clg H27 03 N (m.p. 64.565C), which has been shown to be a condensation product of 3- hydroxy-4-methdxy benzylamine and decylenic acid. In commercial samples , the Concentration of capsaicin is about 0.1%. The colouring matter of the ripe fruit contains capsanthin capsorubin, zeaxanthin hitein, cryp to xanthin a- and p-carotene and few unidentified xanthophylls. Following is the composition of dry chillies : Moisture 10.0% Protein 15.9% Fat 6.2% Carbohydrate 31.6% Crude fibre 30.2% Mineral matter 6.1% Calcium 0.16% Phosphorous 0.37% Iron 0.0023% Vitamin C 50 mg/100 g Vitamin A 5.76 IU/100 Chillies contain Tocopherol (Vitamin ) in a concentration of about 2.4 mg/ 100 gm. The presence in traces of aluminium, Barium, copper, iron, lithium, manganese, silicon, and titanium has been reported. Dry chilli is extensively used as a spice in India. Curry powder is made by grinding, roasted dry chilli with other condiments such as corriander, cummin seed and turmeric. Cinnamon: Cinnamon is the bark of a small ever green trace of C-Zeylanicum Breyn species. In Hindi it is known as Dalchini. Commercial cinnamon bark is not more than 0.5 cm thick and is of a dull pale brown colour. The inner surface is somewhat darker than the outer and is finely striated longitudinally. It has a delicate fragrance and a warm sweet agreeable taste. The bark either as small pieces or as powder, is extensively used as spice or condiment. It is aromatic, astringent, stimulant and germinative. It processes the property of checking nausea and vomitting. Powdered cinnamon is a constituent of chocolate preparations. Cinnamon is also used in candy, gum, incense, dentrifices and perfume. Cardamom: Cardamom is used as a spice and masticatory, and in medicine. Cardamom seeds have a pleasant aroma and a characteristics warm, slightly pungent taste. It is used for flavouring curries, cake, bread and for other culinary purposes. It is also used for flavouring liquors and coffee. In medicine, it is used as an adjuvant to carminative drugs It is used as aromatic stimulant, carminative and flavouring agent. Powdered cardamom mixed with ginger, cloves and caraway is a good stomachie useful in atomic dyspepsia. Analysis of cardamom capsules, gives the following values in % moisture., 20.0 ; protein, 10.2 ; ether extract, 2.2 ; mineral matter, 5.4 ; crude fibre, 20.1 ; carbohydrate, 42.1 ; calcium, 0.13 ; and phosphorous 0.16% ; iron, 5.0 mg/100 g. Corriander: Corriander (Dhania) is a nature crop of the mediterranean region and is extensively grown in India. The corriander fruit has a pleasant aromatic odour. It is extensively employed as condiment in the preparation of curry powder, pickling spices, sausages and seasonings. It is used for flavouring pastry, cookies, buns, cakes and tobacco products. The fruits are considered carminatives, diuretic tonic, stomatic, antibilious, refrigerant and asphrodisiac. They are used chiefly to conceal the odour of other medicines and to correct the griping qualities of rhubarb and senna. The seeds are chewed to correct foul breath. They are considered also to lessen the intoxicating effects of spirituous liquors. Analysis of fruits gave the following values in % : moisture, 11.2 ; protein, 14.1; fat, 16.1; carbohydrate, 21.6 ; fibre, 32.6 ; mineral matter, 4.4 ; calcium, 0.63 : and phosphorous, 0.37% ; iron 17.9 mg/100 g.
