Compas Computer controlled optimum performance

Easy operation The coloured operator display with easily understandable pictures and icons makes programming and operation of the Compas very simple. The pictures and icons allow the machine to be programmed easily without using text, no special language skills are needed. You can create and name up to 50 individual programmes. Afterwards it is easy to select and start the individual programs. From that point the machine does the work itself and displays the most important current data and text on the coloured display. This simplicity is the reason that non-skilled workers can operate the Compas easily, leaving your specialists do more fulfilling work in the meantime. If the room and dough temperatures have changed, the Compas allows you to make day to day adjustments quickly and easily.

Option To ease the lifting and cleaning of the machine tables and the opening of the safety guards, the Compas can be equipped with pneumatic springs. Optional rollers ease the handling of large dough blocks. In addition the Compas is also available with blue conveyor belts.

You are dependent on consistent, high-quality dough bands. The Compas is an all-purpose machine, thanks to the possibility to adjust the speed and the numerous sheeting programmes. In this way you sheet puff pastry with maximum speed and sensitive dough types such as shortpaste at slower speeds. The Compas is the ideal machine for all companies which focus on high automation and high flexibility.
1 Less dusting flour in the atmosphere By using the automatic flour duster, flour is dusted evenly and accurately over the dough band. A plastic skirt prevents dusting flour from escaping into the atmosphere. The usage of flour is reduced and the air quality improved. 1 2 Perfect sheeting thanks to special scraper system The scraper system consists of four identical and therefore interchangeable scrapers. The upper scrapers are connected with the upper roller, providing consistent pressure. For that reason, even extremely sensitive and thin dough sheets do not tear, this also allows working with a minimum of dusting flour. This scraper system is quick and easy and does not require any tools. 3 Reliable work 2

Gentle reeling The automatic dough band reeler increases efficiency. The dough band is reeled automatically, without tension and you can process it directly. The reeler is activated only during actual reeling and not during the whole sheeting process. In this way, no flour is disturbed and air quality in the workplace is unimpaired.

High-performance and fast The powerful Compas sheeter enables you to process dough at high speed. The robust stainless steel construction and stable base allows you to sheet dough blocks weighing up to 20 kg.

Quick and easy cleaning The Compas has an extremely functional design and a convincing hygiene concept. The smooth stainless steel surfaces make cleaning exceptionally simple. Numerous additional features, such as easily removable and cleanable scrapers, add to the hygienic qualities of the machine.

Variable speed Not all dough types are capable of being sheeted at high speed without causing a decline in quality. To handle these sensitive dough types, the speed of the Compas is adjustable over a wide spectrum.

Same quality every day Day to day your customers expect pastry of consistent high quality. Monday to Friday, irrespective of who is operating the Compas, the quality of your dough blocks and bands has to be the same every time. You achieve this with the Compas. It always sheets the dough identically, always using the same reduction steps, always to the same end thickness and always with the same quantity of flour. In this way the Compas provides a basis for the consistent pastry, demanded by your customers.

The reversal of electronic sheeters is controlled by photocells, which are cleaned automatically with every reversal. This is a considerable advantage of the Compas, because the self-cleaning system guarantees maximum reliability, even for extremely thin dough bands. 4 Optimising working processes While the Compas is sheeting, your operators can do other work, for example feeding a pastry line. This is a valuable contribution to enhancing productivity. 5 Versatile applications With the Compas you are also able to handle special types of dough on an individual basis. For example there are Manual/Automatic programmes available. With these, you first select the reduction steps manually and subsequently save them in a programme afterwards. In this way thin dough can be sheeted more than once to an end thickness of 0.2 mm, for example. This is achieved by repeated reversals of the dough band which slightly stretches until it becomes paper thin. 5 4 3
