The archeological findings have shown that Eastern Mediterranean regions surrounding the rivers Tigris and Euphrates were the first places where the wheat was processed. Wheat is one of the oldest plants that human beings started to cultivate. Archaeological

Wheat exports are relatively low since they are exported in processed forms. In Turkey, wheat is mostly used for in the form of wheat flour, which is processed to bread, biscuits, animal feed, macaroni, bulgur and starch. Today, there are approximately 700 wheat flour factories with varying capacities. The milling capacity per factory can reach up to 1000 tons of wheat a day. excavations showed that ancient people living around anlurfa, a province in the Southeastern part of Turkey, planted Einkorn wheat (Triticum boeoticum), which is the wild form of todays commercial wheat. Today it is still used for animal feed in some areas. Turkey is among the major producers of wheat throughout the world with production figure of 20.6 million tons in 2009. Organic Flour Production in Turkey

Furthermore, as a result of global demand, flour is also being produced organically and production is increasing from year to year. Since Turkey has adopted all the relevant legislation for organic agriculture since 1994 in accordance with EC 2091/92, it is forecasted that international demand to this product will increase globally. As a result of increase in international demand, producer firms also got certified according to JAS Organic. Turkish organic agricultural products are becoming more and more familiar to foreign importers. The

destinations of Turkeys organic agricultural products exports reached 39 countries in 2009. The majority of exports are directed to the European Union Countries. Germany, France, The Netherlands, The UK, Italy and Denmark

are the major export markets of Turkey. The USA, Switzerland, Sweden, Belgium, Australia, Canada, Japan, Israel, South Korea, Taiwan and El Salvador are other promising export markets.
