Okay, so Coconut Cream Pie is about the best thing ever. Really. It is practically summer in pie form.

This recipe calls for using coconut milk in the coconut custard. While that definitely gives the most flavorful result, you can substitute with whole milk or half-and-half, if needed. It also calls for my homemade pie crust. Now, that recipe is as simple as well pie to make, but if you need to use a refrigerated pie crust instead in a pinch, it works just fine. Okay, lets get down to it. Heres my Coconut Cream Pie recipe. I hope you love it as much as we do!

Coconut Cream Pie is a classic. Get this delicious coconut cream pie recipe that will quickly become a family favorite!

Ingredients
1 pie crust recipe For the Toasted Coconut Topping cup flaked, sweetened coconut For the Coconut Custard 1 cups coconut milk 1 cups half-and-half 5 egg yolks cup sugar 4 tablespoons cornstarch 1 tablespoon butter teaspoon salt 1 cups flaked, sweetened coconut 1 teaspoons vanilla For the Whipped Topping 2 cups heavy whipping cream cup sugar 1 teaspoon vanilla
Instructions
1. Prepare pie crust according to blind-baking instructions of recipe. 2. For the Toasted Coconut Topping 3. Spread coconut evenly on a rimmed baking sheet. Place into 350 F oven for 8-10 minutes until coconut has just begun to turn brown. 4. Set aside to cool. 5. For the Coconut Custard 6. Pour coconut milk and half-and-half into a liquid measuring cup. Add egg yolks and whisk together with milks. Set aside. 7. Add sugar and cornstarch to a heavy-bottomed saucepan over medium-low heat. Whisk egg and milk mixture together once more and then slowly begin to add to the sugar and cornstarch, whisking together constantly. 8. Bring custard mixture to a boil. Switch to a rubber spatula or wooden spoon and continue to stir constantly. Boil one minute. 9. Remove from heat and add butter, coconut, vanilla and salt. 10. Spread custard into pie crust. Cover lightly with plastic wrap and chill in the refrigerator until set, about 30-45 minutes. 11. For the Whipped Topping

12. Add sugar and heavy whipping cream to large bowl. Whisk with an electric mixer just until stiff peaks form. Add vanilla and whisk just until combined. 13. Spread whipped cream on top of coconut custard. Refrigerate until ready to serve. 14. When ready to serve, top with toasted coconut.

Hi Ron, Since cream of coconut is a great deal sweeter than coconut milk, I think if you do decide to use it youll want to reduce or even omit the sugar. Ive not used cream of coconut in this recipe, so I really cant give you specific substitution information. Good luck!

Hi Robyn, We finally had a chance to make the pie over the weekend and took out the sugar based on your advice since we were using the cream of coconut and it was fantastic! After one day of being in the fridge, it was even better. I shared some with my brothers family and they loved it as well. Thanks for the recipe and this is something we will definitely make again! Yum. Coconut is not my favorite but a friend made a killer coconut cream pie at a bbq recently. Now Im not so sure that coconut isnt my favorite. I will have to try this!

I agree. Coconut Pie is probably the best thing ever and that photo of your coconut cream pie is amazing! Is it possible to actually NEED a slice of pie? Possible or not, I think I NEED this pie.

This looks absolutely amazing! Last week I made a strawberry pie using your AMAZING pie crust recipe and it turned out fabulous! Everyone loved the crust more than the filling! Now I absolutely love coconut and was wondering can I make this pie using dessicated coconut (its not sweet) because where I live, I cant find sweetened coconut. Would I need to add more sugar then? Thanks!

I made this recipe yesterday, so excited to try it out on my parents since this is one of their favorite desserts! The flavor came out greatthe coconut milk really enhanced it, but I could have served this in a bowl as a parfait instead of a pie, it didnt set the way a custard pie should have and it looked like soup on a plate. I followed the recipe to the letter so I have no clue why it didnt turn out they way it should haveI even had it chilling in the fridge for 3 hrs (when the recipe only called for 30-45min). Great flavor, but disappointing in presentation

You can save them for another recipe, like meringues, divinity, egg white omelets, etc. They arent used in this recipe.
This the 2nd time that I am making this recipe and it is a challenge but worth the effort .my husband says that it is just like the one at Perkins restaurant.it is really delicious..
