Lycopene: tomato & extra virgin olive oil

Lycopene is a very potent natural antioxidant that belongs to the family of carotenoids, wich gives that characteristic red colour to tomatoes, water melons and, in lesser quantities, to other fruits and vegetables. It has benecal properties for our health as it acts protecting our cells from oxidative stress. When eating vegetables, human beings take advantage of just 5% of the lycopene, however, associated with oil it is 90% digestible.
