(I) Targeted group of students, canteen stall and dishes

(II) General dietary requirements of endurance-athletes

Being in Wu Shu, students are required to have stamina, be alert, be flexible and have
strong bones. That is why students have to consume lots of carbohydrates which should
make up around 60% of their meal and have lots of vegetables which contains vitamins.

(IV) Evaluation of nutritional content of dishes

 Firstly, the meal contains too little carbohydrates. Being an athlete, most of the energy
comes from carbohydrates, but only rice in the meal contains a significant amount of
carbohydrate which does not support the strenuous exercise of the students in Wu Shu,
therefore more carbohydrates are recommended within our proposed meal.

 Secondly, the meal has a high amount of proteins. Proteins deprive the athlete of more
efficient fuel and can lead to dehydration. High-protein diets increase the water
requirement necessary to eliminate the nitrogen through urine, increasing the rate of
oxygen consumption. Therefore, protein supplements are unnecessary and not
recommended. However, since proteins are useful for the growth of muscles, moderate
amounts should be consumed and the amount of proteins in the meal can be reduced.
 The meal itself also does not contain much liquid. Since students are doing vigorous
exercise, water is lost through perspiration. Therefore, drinking adequate amounts of
water before training is extremely important. Students are encouraged to drink at least
500ml of water before any exercise.
