Lemon Butter Prawns Butterfly cleaned prawns Cook over high heat quickly in garlic butter & salt.

Do not overcook. In a sauce pot melt * 125g garlic butter * aromat,parsely * add 4-5 tab lemon juice * salt if needed * slowly add 250ml fresh cream while stirring * dilute 1tbsp maizena in a little milk & add to sauce. Keep stirring as it thickens Simmer but do not boil. Pour over cooked prawns and grill in the oven 2 dry out a little bit. Not too much. Top with chopped parsley & lemon wedges on the side. Serve hot with spicy rice & crispy chips.

Prawns wit Lemon Butter Sauce 1kg prawns 1/4 cup lemon juice 1 tsp ground garlic 1/2 tsp mixed herbs pinch of ground pepper 125g butter 250ml fresh cream 1 tsp corn flour (maizena) Clean prawns. Slit in centre creating butterfly shape. Wash & drain in collander. Marinate with lemon juice, garlic, pepper & mixed herbs. Leave in the fridge for about 5 hours. In a casserole dish melt the butter. Spread the butterflied prawns. Pour the remaining marinade over & bake at 200 degrees. In a bowl mix the corn flour wit the fresh cream. Wen prawns is almost done pour the cream over & grill for 15 minutes. Prawns can be cooked wit lemon butter, garlic butter, choice butter or rama.

Adegas Pasta 500g prawns ( shelled and cleaned ) 1 tsp gorimas chili garlic paste 1 tsp lemon pepper 1 tsp chili powder 1 tsp salt 3 Tbsp lemon juice 3 Tbsp tomato puree 2 Tbsp mayonnaise 2 Tbsp butter 125 ml fresh / pouring cream bell pepper ( red and green ) Marinate prawns in all ingredients except butter and cream for 1 hour. Boil pasta and keep aside. Heat butter in a non stick pan and cook prawns on high for 4 minutes. Add red and green peppers ( julienne ). Marinade should reduce but not dry out completely. Lastly add cream and throw in pasta. Transfer to a casserole dish. Grate fresh parmesan over. Serve immediately

Prawn Pasta Prepare pasta according to packet instructions. Add 250g rama or butter into a saucepan. Saut 1 large onion with roughly crushed peppercorns and fresh garlic. Add the zest of one lemon and salt to taste. Add 1kg XL cleaned, shelled and deviened prawns in ( add shrimp as well if you want that little something extra ) Add 4 tablespoons tomato puree and allow to simmer under 8 min's on high. Lastly add 2 cups of double cream and finely chopped parsley. Toss into warm pasta, garnish with dried italian herbs and serve.

Creamy Hake melted butter lemon juice lemon pepper mayonnaise 1/4 cup fresh cream little salt garlic green chilies fish spice Make a thick sauce with the above and pour over fish. Pre-heat oven to 200 degrees. Bake for 30 mins. Serve with baked potato, salad and garlic bread on the side.

GRILLED TANDOORI FISH 900g fresh line fish filleted and skinned 3 tsp fresh chopped garlic 2 tsp salt 60ml ghee 3 tsp paprika 60ml freshly squeezed lemon 3 tsp dhana seeds crushed 4 T slightly ground jeero Use a large flat ovenproof dish. Prepare fish, wash and pat dry. Make a marinate with all the spices. Place the fish in an oven tray lined with foil (shiny side up). Spread marinade over and refrigerate for an hour. Grill in pre heated oven for 10 - 12 minutes. Serve with rice or salad
