Electricals, Cabling work before Control Panels Insurance & Unloading VAT/ CST or Any other Tax If applicable on delivery date. Civil Work Including Drilling & Closing of Holes. Plumbing Works. No Gen set or Related work. Plant and Street Lighting, Light, Fans & Any Light wiring work. The buyer firm has to supply main electric transformer, Distribution panels and cables & and fixtures between the Control panels of Machines. The buyer at his owns risk and cost shall arrange unloading of equipment at the site with the help of crane/labors. Food & Residence arrangements of the site teams. Other exclusion as per ANNEXURE - 2 Scope of Supplies as Detailed only. Packing and forwarding Final Paints Freight & Loading 10% extra on quoted price for contingency if any. Saradhana Ajmer, hereinafter called in short term the Erector. 1) The scope of work as the Mechanical Erector is as follows: To do the complete mechanical erection of the WHOLE WHEAT ATTA PLANT (WONDER MILL) - 100 TPD CLEANING SECTION , CONDITIONING, BLENDING AND PACKING SECTION after fully leveling one single line of grading of Wheat , 8 Wonder mills for De hulling , one line of post De hulling Section as per key chart provided by the Consultant or M/s Patanjali Ayurved Ltd., Haridwar Utarakhand ,India To fit the all the Machine as per machine list as per Annexure 3 To fit the electric motors and gear boxes etc. Fabrication of STEEL STRUCTURE - -----Ton ( Iron and Steel will be Buyer Scope) Fabrication of BINS 10M^3 Two Pc. ( Iron and Steel will be Buyer Scope) Fabrication of Ducting and Chutes ( G.I Sheets, Iron and Steel will be Buyer Scope) To complete the fabrication of spouting & aspiration system. lying of Cables and cable Trey with Connection of Motors and panels. To do the trail run under the supervision of the Miller. 2 The following work is not in the scope of the Erector Dismantling/lifting/descending of machine. Plumbing work, Electrical work, Carpentry work and Masonry work. unloading, shifting and lifting of the machine.

3 The traveling fare, Meals and Accommodation for the erection team will be provided by the Buyer. The traveling boarding, lodging expenses of the Erection Supervisor/ Engineers will be borne by the Buyer. 4 The necessary tools, workshop equipment, Mechanical holding equipments will be SVIPL scope. 5 All the machines, Panels and fabricated equipments, (like elevators, worms, cyclones as per key chart) materials, consumable stores, etc. duly turned, bores etc. will be provided by the Mills before starting the erection work. 6 Before the trail run, the Mills has to appoint Miller, operator and other workers in Consultation with SVIPL. 7 The erection work will be completed by the Erector within three months from the date of handing over the building and arrival of all the machines and material at site. 8 Foundation bolts, chipping and filling of the holes in the building will be done by the Buyer.

Electrical Control Panel Specifications
1.0 SCOPE: 1.1 This specification covers the design, material, construction features, manufacture, inspection and testing at our Works and performance testing of control panels for control of equipment. 1.2 The input conditions shall be Power voltage: 415 V +/- 10% Frequency: 50 +/- 5% Hz Maximum ambient temperature: 50 deg C 2.0 CODES AND STANDARDS: 2.1 The design, material, construction; manufacture, inspection, testing and performance of control panel shall comply with all currently applicable statutes, regulations and safety codes as noted below. The equipment shall also conform to the latest applicable standards mentioned here under. 2.2 Supply items which are bought out by us shall be procured from approved manufacturers acceptable to the PURCHASER. 3.0 CONSTRUCTIONAL FEATURES: 3.1 Control Panels shal1 be dust, weather and vermin proof providing an enclosure degree of protection of IP 54 for indoor use. 3.2 Control Panels shall be provided with hinged door(s) with locking arrangement. 3.3 All doors, removable covers and plates shall be gasketed all round with neoprene/silicon rubber gaskets. All accessible live connections shall be shrouded and it shall be possible to change individual switches, MCBs without danger of contact with live metal. 3.4 Door locks shall be key operated to open. The doors shall lock itself on closure. Safety interlock switches to be fitted to all doors of sections that are not intended to permit access to non-electrical personnel. Note that standard micro switches are not permitted to be used for door interlock switches. 3.5 All live parts shall be provided with at least phase to phase and phase to earth clearances in air of 25mm and 20 mm respectively. 3.6 Cable glands shall be screwed-on type (double compression) and made of brass. 3.7 Fans and filters to be fitted if the static heat dissipation inside the panel is insufficient to keep components below critical temperatures. It is preferred that panels are sized to preclude the fitting of fans. 3.8 Fans to be wired to a terminal block so that a single volt free contact can be used to inhibit all fan operation during gas discharge from panel fire detection system. 3.9 Alarm to be provided as a warning signal to indicate machine faults. 3.10 The installation of smoke detectors if required will be inside the top of panel. Therefore, clear areas must be provided in the panel. Buyer shall place the smoke detector if desired in the future. 4.0 MCBs (Miniature Circuit Breakers): 4.1 MCBs shall be hand operated, air break, heavy duty, quick make, quick break type conforming to applicable standards. 4.2 MCBs shall be provided with overload/short-circuit protective device. 5.0 CONTROL SUPPLY: 5.1 All AC control equipment shall be suitable for operation on 220V AC, 1 phase, 50 Hz, centre tap earthed system. It is preferred that the control voltage be 24V DC. This supply may be obtained from 415V main supply shall be protected on

` the primary side by MPCB (Motor Protection Circuit Breaker) / MCCB (Molded Case Circuit Breaker) and by MCB on secondary side. 6.0 AUXILIARY POWER SUPPLY: 6.1 A separate feeder controlled by a DP MCB (Double Pole Miniature Circuit Breaker) shall be taken for 1, 240 V, 50Hz supply for panel space lighting. 7.0 RELAYS: 7.1 Necessary auxiliary relays for alarm, as required shall be mounted inside the panel. Relays shall be equipped with hand reset, positive action operation indicator. 7.2 Auxiliary relays shall be rated to operate satisfactorily between 80% and 110% of the rated voltage. 7.3 Make and type of relay shall be subject to the PURCHASER's approval. 8.0 INDICATING LAMPS: 8.1 Indicating lamps shall be of multiple LED type and low watt consumption. Lamps shall be provided with built in transformers/resistors. 9.0 INTERIOR LIGHTING AND RECEPTACLE: 9.1 Control panel shall be provided with a incandescent lighting fixture for interior illumination controlled by a door limit switch and earth type receptacle conforming to relevant Indian Standard. 10.0 PANEL INTERNAL WIRING: 10.1 Control panel shall be supplied completely wired, ready for the PURCHASER's external connections at the terminal blocks. All control and auxiliary wiring shall be carried out with 600V grade, PVC insulated, flexible multi stranded Cu conductors. Power circuits shall be wired with flexible multi stranded copper conductors of adequate sizes to suit the rated circuit current. The minimum size of the wires shall be Power circuit: 2.5 sq mm up to 5 HP, 4.5 sq mm up to 10 HP, 10 sq mm up to 25 HP, Control circuit: 0.75 sq mm 10.2 Engraved identification ferrules, marked to correspond with the wiring diagram shall be fitted at both ends of each wire. All wiring shall be terminated on terminal blocks. Terminals shall be adequately rated for the circuit current. 10.3 Clearance between terminal blocks and gland plate and between two rows of terminal blocks shall be minimum of 200 mm, if two or more rows are required. Terminals for AC & DC circuits with different voltages have to be grouped and separated by barriers. No live surfaces shall be exposed (covers or recessed terminals shall be provided). 10.4 Power circuits and control circuits must not be mixed - their components shall be separated by means of layouts and barriers. 10.5 Wiring for controls and power shall be kept separate, as far as is practicable. 10.6 All cable ends to be separately terminated with the appropriately sized and shaped crimps. As far as practicable, crimps will be of the compression type (as opposed to the soldered type) being fitted using the correct crimping tool. 10.7 If terminal blocks of the spring clamp technology are being used the cable ends shall be prepared by removing correct length of insulation and terminating the exposed copper conductor into terminal block ensuring that no bare copper conductor is exposed outside the terminal block. 10.8 Cable shall be run continuously from terminal to terminal without joints or splices. Grouping of conductors at one terminal will not be accepted, a separate terminal shall be provided for each cable. 10.9 The number of wires put through trunking inside the panel must not exceed the maximum number permitted by regulation or manufacturers. 10.10 Wires inside trunking must be arranged in a tidy manner with cable ties and must be properly supported so that they do not fall out when the cover is removed. 10.11Unless requested otherwise cable color shall comply as summarized below DUTY COLOUR Control Ckt. The bus bar shall be indelibly marked with green and yellow to identify it as earth bus bar (stripes or dots). 11.2 Earth Lead: Earth terminal of control gear components mounted inside the panel shall be connected to main earth bus bar by means of earth leads of adequate sizes. 11.3 Earth connections: For termination on to main earth bus bar lug and stud type terminals shall be used with adequate number of pre-drilled holes of appropriate sizes. Insulated wires used for earthing shall be of green or yellow color. 11.4 Main earth stud: 2 Nos. of main earth studs one at each end shall be braced or welded to the structure of panel. It must withstand the short circuit current specified. 11.5 Auxiliary Earth Rails: Auxiliary Earth Rails (e.g., component mounting DIN rails) can be used under the following conditions: A) They are directly connected to main earth bar via a suitably sized earth lead. B) Internal earthing and bonding must only be done on main earth bus bar. C) Signal terminations for outgoing/incoming signals, to be mounted on such rails. 11.6 Earth Terminals: All earth terminals shall be green or yellow color or provided with earth symbol for easy identification. 11.7 If separate earth bus for electronic / communication system is provided, it must be interconnected to the main earth bus at one point. 12.0 SAFETY CIRCUITS: Optional for DCS panel 12.1 The function of these circuits is to effect for safe disconnection of Power to those line parts which give rise to Danger. This will include emergency Stop Device, Safety Interlocks, High Temperature of windings etc. The Seller shall ensure immediate stoppage of the Line using PLC's which are in accordance with IEC 61508(Safety Integrity Level 3) and EN 954 - Category 4. 13.0 LABELS AND DIAGRAM PLATE: 13.1 Every equipment mounted in the panel shall be provided with individual labels with equipment designation/rating. In addition, the panel shall be provided on the front with a non-rusting label engraved with the designation of the panel as furnished by the PURCHASER. 13.2 Inside the door a circuit diagram in paper shall be placed inside a PVC pocket in the panel door. 14.0 DRAWINGS AND DATA: 14.1 The following information is furnished: A) Panel general arrangement drawing showing dimensioned views, cable entry location and mounting details. B) Schematic wiring diagram of the control panel, with ferrule and terminal numbers. C) Bill of material listing equipment designation, make, type, ratings etc., of the various equipments mounted on the control panel. D) O & M Manuals shall be given along with panels.

TERMS AND CONDITIONS OF SALE AND DELIVERY

These terms and conditions shall apply for Shri Vishvakarma(E.S.) Industries Pvt. Ltd. (hereinafter referred to as CHOYAL). Within India or out of India, the basis of our terms and conditions of sale and delivery is ANEX-SVIPL01, that apply to the extent the terms and conditions have not been deviated from by the below provisions: SPECIAL CONDITIONS: Drawings and descriptions Any information about weight, dimensions, capacity, technical and any other data stated in catalogues, leaflets, circulars, advertisements, photos, dimension sketches and price lists is approximate and without any obligation on the part of CHOYAL. At the execution of the order, CHOYAL reserves the right to make changes that CHOYAL at any time may consider technically necessary. Offer: Offers are made subject to alteration and subject to the products being unsold. CHOYAL shall reserve the right to alter or revoke outstanding offers without notice. Order confirmation: Any order, including hereunder orders based on offers made by CHOYAL, shall be confirmed in writing by CHOYAL before a binding agreement of delivery shall have been concluded. Prices: All prices are current prices in the currency stated. CHOYAL shall be entitled to alter its prices if changes occur in the supply of materials, raw material prices, wages, exchange rates or any other conditions beyond the control of CHOYAL, including hereunder Tax, duties, freight and insurance rates, etc. Payment: Payment for supplies shall be effected as according to the order confirmation, or in the absence of same, according to the terms and conditions of payment printed on the invoice. The buyer shall not be entitled to retain payment due to any counterclaims. At payment later than on the above-mentioned date of payment, a penalty interest rate of 14% p.a. above the official Bank Interest discount rate applying at any one time shall accrue as from the due date and until payment is affected. Upon forwarding reminder letters after the due date, a fee will be added to cover any such costs. Ownership reservation: The products shall remain the property of CHOYAL until the purchase price has been paid in full. Insurance : The buyer shall be obliged to have the products supplied fully insured at its utility value as from the time of delivery until payment has been effected. Cancellation: Orders may only be cancelled as according to written agreement with CHOYAL and against payment of CHOYALs accrued costs. Delivered products cannot be returned unless it has been specifically agreed with CHOYAL and in which case a deduction of at least 20% of the value of the returned products must be made as return charges. Delivery: Delivery is effected Ex Works (Saradhana - Ajmer). CHOYAL shall not be responsible if the time of delivery shall be changed or delayed due to industrial disputes or any other circumstances beyond the control of CHOYAL, such as fire, war, currency restrictions, lack of means of transportation, general shortage of products, etc. Default of the buyer: If the buyer does not observe the agreed conditions regarding the payment of the purchase price or the receipt of products, CHOYAL shall not be committed to supply the products and CHOYAL shall then be entitled to cancel confirmed orders and claim damages. Complaints/Inspection: The buyer shall, as soon as possible, carry out a reasonable inspection of the products supplied and not later than two weeks later having forwarded a written complaint to CHOYAL. The buyer shall not have the right to claim defects that could have been found at such an inspection. Liability for defects CHOYAL shall be obliged to remedy any defect due to design, manufacturing or use of faulty material, provided that the defect shall be detected within a year as from the day on which the delivery is notified to be ready for dispatch from CHOYAL. Where the nature of the defect is such that in the opinion of CHOYAL it would not be appropriate to carry out repairs at the site of the installation or where CHOYAL deems replacement delivery necessary, the buyer shall return the products/parts bought that are defective hence CHOYAL may repair or replace the parts or undertake replacement deliveries. Transportation of defective parts to CHOYAL shall be at the buyers own risk and expense, whereas tr ansportation of the repaired or new parts from CHOYAL to the buyer shall be at CHOYALs risk and expense. Replaced defective parts shall be

` the property of CHOYAL. CHOYALs liability shall not include defects arising from material delivered by the buyer or from an independent third party or from a design ordered by the buyer. CHOYALs liability shall include only defects arising under the terms of function assumed in the agreement and by the correct use hereof. The liability shall not include defects arising out of defective maintenance or incorrect installation by the buyer, changes made without the written consent of CHOYAL, faulty repairs carried out according to written consent of CHOYAL by the buyer or ordinary wear and tear or deterioration. CHOYAL shall be entitled to remedy any defect whether the defect is remedied before or after delivery. Product liability: CHOYAL shall not assume any product liability of any kind. CHOYAL shall not be responsible for damage to real and personal property occurring while the supply in question is in the buyers possession. Neither shall CHOYAL be responsible for damage to products manufactured by the buyer or to products where these form part. In relation to product liability in other respects reference is made to ANEX-SVIPL02 including any limitations as stated in these conditions. To the extent CHOYAL may be imposed product liability towards third party, the buyer shall be obliged to indemnify CHOYAL to the same extent as CHOYALs liability shall be limited as ac cording to the four preceding paragraphs. If any third party puts forward a claim towards one of the parties for compensation as according to this paragraph, this party shall immediately without delay inform the other party. CHOYAL and the buyer shall be mutually obliged to let actions be brought against them at the court dealing with any such claims for damages raised against one of them on the basis of the damage claimed to have been made to the products delivered. Any disputes between the buyer and seller should, however, always be settled by arbitration. Consequential loss etc. In relation to claims raised against CHOYAL in the form of liquidated damages reference shall be made to in which it is stated that CHOYAL shall only be liable for any such claims in special circumstances and if so only by a maximum amount specified. CHOYAL shall in relation to defects in the products supplied, delay, in product liability cases and in any other case not assume any liability for loss of production, loss of time, loss of profit, consequential loss or any other indirect loss whatsoever. Should CHOYAL by arbitration or by any other court or tribunal have such liability incurred, the liability of CHOYAL shall never be in excess of Rs. 100000.00 per claim. Installation: Installation is not included in the offer of CHOYAL unless otherwise expressly stated. The same applies to any construction work, foundation and electrical installations. If CHOYAL workers are detained at the site of installation for reasons that cannot be ascribed to CHOYAL, the ensuing costs shall be defrayed by the buyer. Arbitration Any dispute arising out of and related to this agreement cannot be tried at the courts but shall be settled by the Ajmer Courts as according to the legislation and rules applying for arbitration proceedings in India. Any dispute arising out of this agreement shall be settled under Indian law. Hindi or English shall be the procedural language.

Shri Vishvakarma (E.S.) Ind. Pvt. Ltd. warrants only to the original purchaser of this product from a Choyal-authorized seller or distributor that this product will be free from defects in material and workmanship under normal use and service for one year after date of purchase. SVIPL warrants the owner of this product against defects in materials or workmanship as declared below: SVIPL will repair or replace the product at no charge for a period of one (1) year from the date of purchase from a SVIPL authorized dealer/seller, after one year, the consumer must pay for the repair or replacement. This warranty does not cover shipping, installation, removal or any other costs. Proof of purchase is required and should be retained. This warranty does not cover cosmetic damage, acts of God, misuse, accidents, any modifications to the product, improper connection, improper use, or attempted repair by unauthorized dealers other than SVIPL. This warranty is also void if the product is damaged by a connecting product that may have cause damages through misuse or malfunction. A proof of purchase may be in the form of a bill of sale, with the model of the product and the date of purchase stated. SVIPL reserves the right, before having any obligation under this limited warranty, to inspect the damaged SVIPL product, and all costs of shipping the SVIPL product to SVIPL for inspection shall be borne solely by the purchaser. In order to recover under this limited warranty, Purchaser must make claim to SVIPL within 30 days of occurrence, and must present acceptable proof of original ownership (such as original receipt, warranty card registration, or other documentation SVIPL deems acceptable) for the product. SVIPL, at its option, shall repair or replace the defective unit covered by this warranty. Please retain the dated sales receipt as evidence of the original purchaser's date of purchase. CHEAPTER -2 PRODUCT DESCRIPTION & SPECIFICATIONS


The main products of the Chakki flour mill are Atta, Daliya and Bran. Obtained by milling of wheat. Wheat is consumed in many form and the largest form of consumption is chapattis ,wheat based products are also used for various type of baked products. The development of the small scale flour mills on a decentralized basis could play an important role in the processing wheat products such as Atta, Maida & Suji etc. to achieve a large output, reduction of wastages and better utilization of by products. The bran a byproducts of roller flour mill is used by animal feed industry. Flour milling industry has been instrumental in popularizing the consumption of wheat and wheat products not only in rice producing belt but also in wheat producing regions. What is one of the foremost consumable foods of India. Chakki flour milling units produce Atta, Daliya and Bran. Wheat being the food of nearly half of the people of India the economy of the country is related with this crop. Flour mill Industry has certain unique features which distinguishes itself from other industries Its raw materials and the market for and products are ensured by the Government . The wheat will be allotted to the state to meet their requirements from month to month basis ,which depends upon the relative requirements of other states, market availability and other associated factors . So there is no search for raw materials for the plants. GRADE OF FLOUR It is important to understand the specialized nomenclature applied to commercial flour grades The principal grades are: 1 Straight flour The total amount of flour milled from the wheat: all of the flour streams combined 100% of the extraction of about 72% of the wheat. Patent flour flour made from purified endosperm middling's. It is lighter in color and lower in ash than straight flour .A fancy patent represents about 40-60% and a short patent about 70-80% of the total extraction. Clear flour-the flour remaining after the patent flour streams have been diverted. i.e. the straight flour minus the patent flour. It is stronger darker and spec kier than patent flour from the same wheat. A of the fancy clear is the portion remaining after separation of the fancy patent, and a first clear flour remains after separation of short patent. Stuffed straight flour-a straight flour to which some clear flour has been added. Cut straight flour a straight flour from which only part of the middling's have been removed

USES AND APPLICATIONS Milling of wheat was brought about through efforts to removes impurities and foreign materials and after the discovery the inside of wheat kernel tastes better then the outside. Grinding of what also a domestication and milling is necessary to produce flour for use in fabricate foods. Such as bread. Flour are milled for many purpose such as bread, pastries. cakes, cookies as or macaroni. Durum wheat flour is so highly glutinous that pastes made from it will support their own weight. therefore ,it is used in making spaghetti and macaroni some wheat flour is used for making whiskey and certain other qualities of bear. ATTA BRAN It is directly consumed in households by preparing Roti, Chapatti, Porathas etc. It is used as cattle feed, poultry feeds etc.

RAW MATERIALS WHEAT Wheat is actually a grass and belongs to the genus Triticum species aestivum. Wheat is grown globally and is the second most important cereal crop in the world behind maize and ahead of rice. Below is a map showing the major cultivation areas across the globe. Wheat plants grow several side shoots called tillers from a crown which is just below ground level. Each of these tillers grows a long stem which bears a flowering head at its top. The length of these tillers varies greatly between different wheat, some being extremely short (less than 20cm) while other are extremely tall (over 1m!). Modern wheat is generally 80cm to 1m tall. The wheat flowers are self-fertilized by the movement of pollen from the male part of the wheat flower (stamen) to the female part (the stigma). Each flowering head fertilizes its own flower. Once this has occurred the grain begins to grow and develop. Starch and protein are stored in the grain and used as an energy source by the new plant. The grain reaches its maximum size a month after fertilization this is usually in midsummer. Once the grain is fully developed the wheat plant begins to die and the grain slowly dries out. It is at this stage that harvesting interrupts the growing cycle of the wheat plant, as once the grain is dry enough, the wheat is harvested. The grain is harvested by a machine (called a combine harvester) which cuts the whole plant and separates out the grain. Grain can be stored in bulk bins if the amount of moisture in the grain is kept low. The Structure of the wheat grain A grain of wheat is a seed which can grow into a new wheat plant, and is also the part of the wheat plant which is processed into flour. Wheat grains are generally oval shaped, although different wheat have grains that range from almost spherical to long, narrow and flattened shapes. The grain is usually between 5 and 9mm in length, weighs between 35 and 50mg and has a crease down one side where it was originally connected to the wheat flower. The grains are commonly a red color, although many wheat have white grains and more unusually purple, black, brown or green/grey varieties exist. The wheat grain (or kernel) is divided into several parts, as shown in the diagram. The three main parts are: Bran The outer coating or 'shell' of the wheat kernel is made up of several layers. These layers protect the main part of the kernel. Bran is rich in B vitamins and minerals. Endosperm This is the main part of the wheat kernel and represents about 80% of the kernel weight. It is from this part that white flour is milled. The endosperm is rich in energy-yielding carbohydrate and important protein. Germ or Embryo This part grows into a new plant if sown. The germ lies at one end of the grain and represents only 2% of the kernel. It is a rich source of B vitamins, oil, vitamin E and natural plant fat. It needs to be removed during milling because the fat is liable to become rancid during flour storage. Wheat germ is still very valuable though and is used in many products.

COMPOSITION Cereal grains are complex consisting of many distinct parts. The milling operation separates the floury edible evdo sperm from the various branny outer voncerings and elimination of the germ or enbroye. Because wheat vary in chemical composition flour composition also varies. Table below shown the approximate composition of wheat and white flour. Gluten can easily be washed out of flour by allowing a dough made of the flour and water to stands in water a short time followed by careful washing of the dough in a gentle stream of water removes the starch and leaving the gluten. For goods bread making characteristics the gluten should be semi elastic not too stiff and unyielding but not soft and free flow although a free flow quality is required for biscuits (cookie) manufacture. The gluten, always containing a small amount of adhering starch ,is essentially hydrated protein. With careful drying, it will retain its elastically when a gain mixed up with water and can be used to increase the protein content of specialized high protein breads. STROAGE : The efficient storage of cereals at any of the stages /points makes the cereals highly vulnerable to insects and rodent attack .The losses have been to the extent of 40% in some cases. A recognizant danger lied in the respiration of the grain if the moisture content of the grain is low (10-12%) arise in temp. resulting from respiration is unlikely but is the bulk is larger and the moisture content high (ever 16% may not be dissipated) causing the temp .to rise and further increases the rate of respiration consequently cereal stocks are turned over to ventilate the grain and to keep temp low. Molds and fungi are other sources of spoilage, cleaning processes removes as much as possible of external models, but under not conditions the problems remain serious. Heat is also frequently a cause of loss of weight ,loss in milling value and loss in food value through its provisions of a favorable environment for different kinds of insects. Wheat Storage Nearly all mills will have large scale storage facilities on site for their grain to ensure continuity of supply for running. It is not unusual to have a month or more of storage capacity on site. This buffer stock is stored in flat storage sheds, or silos, prior to transfer to the mill. There are many ways that wheat arrives at the mill. Each country or region will have its' own methods that overcome the logistical obstacles that present themselves. The location of the mill itself will also present its' own challenges. The merits and techniques of road, train or direct ship deliveries, or indeed whether silos should be steel, concrete or flat storage etc. are complete topics in themselves, and as such will not be dealt with here. Whichever method of delivery is used, there will be impurities in the grain that need to be removed prior to storage. These impurities picked up during harvest, intermediate "elevator" storage or during transport, can range from rocks and boulders, vermin, chaff, straw, other grains such as oats, barley and rye to rogue varieties of milling wheat. At point of intake it is first essential to verify the grade of wheat and its' quality data. Typically tests will be done to determine specific weight, moisture content, protein content, enzyme activity and impurity admixture. These tests are relatively quick to do, and are used to verify the product against a purchase contract. Claims may be made at this stage against the supplier if agreed specifications have not been met and a revised price negotiated. DNA testing or "electrophoresis" testing can be used to determine specific varieties or levels of contamination by other varieties if necessary, but this is a time consuming and expensive exercise and is not normal practice. The next step is to remove any impurities that may damage equipment or pose a safety risk to the plant. A coarse sieving and some form of dust aspiration are usually employed to render the product operationally safe. Large impurities may damage transport elements or machinery, and grain dust is highly explosive if certain concentrations are exposed to an ignition source. When stored under the correct conditions grain can be kept for years with no adverse affects on quality. However, it is important to remember that grain is a living organism, and as such needs to breathe. As part of this process the grain takes in oxygen and gives out carbon dioxide and a small amount of heat. The amount of respiration increases with the moisture content of the grain; The accepted safe limit of moisture content for storage of grain is 15% above this level the rate of respiration and heat generation is such that germination of the grain begins, as enzymes are activated in the grain. This not only renders the grain almost useless for bread making, but also creates hot spots in the grain which can lead to spontaneous combustion. Wheat Cleaning The purpose of flour milling is to provide quality flour that is fit for purpose and free from any foreign matter or tainted in any way. To make this happen, the miller must prepare the wheat for milling by ensuring that all foreign matter is removed prior to the milling process. Typically raw wheat can be contaminated by the following on arrival at the mill: Diseased or shriveled grain, straw, chaff, other cereal grains, seeds of all descriptions, string, paper, wood, stones, sand, dust, nuts, bolts, wire, glass. The larger contaminants and some dust are usually removed at intake to prevent potential damage to equipment, so the task of final clean is done in an area of the flour mill called the screen room. The design and layout of screen rooms and machinery used in the modern flour mill can vary greatly from one country or mill to another, but one thing remains constant - they all employ the following five principles of separation to remove these impurities:

MARKET SURVEY The Chakki flour mill industry is based on agro based processing industry engaged in the manufacture of product based on wheat, namely, Atta, Daliya and bran. Number of units registered with DGTD are 376 .The average capacity utilization of these units is found to be 60% Future Demand Demand for Flour mill units emanates from the market for wheat products. The market for wheat products can broadly be divided in three categories they are:1 Bakery industry. 2 Hotel Industry 3 Households. Atta produced by Flour mills is mostly consumed by hotel industry and the remaining amounts is sold to households through public distribution system. Whereas Maida which comprises of 55% of total production of roller flour mills is mostly consumed by Bakery industry. Suji which consists of 5% of total production is sold to households as well as to hotel and bakery industry. The bakery industry constitutes the major industry for Maida. The share of bakery industry has risen due to rapid hotel and households. The hotels and the household demand depends on factors like population income level, disposable population as well as the disposable income ,the demand of Maida will increase substantially in future, Suji and Atta are also of these products follows the same pattern as that of Maida. Apart from these poultry industry has shown a phenomenal growth in the last decade. Considering all these factors a minimum growth rate of 10% is envisaged for wheat products. The estimated requirement of wheat products is 20000 thousands tones by 2015. Assuming that the overall capacity utilization will increase to 70% the capacity requirement is 17000 thousand tons per annum. Against this, the presents capacity in 10000 thousands tones. Thus there is a good scope for setting up new flour mills.

CHAPTER 5
MANUFACTURING PROCESS MANUFACTURING PROCESS There are three main operations in the process of wheat milling, there are : a. Cleaning and washing of wheat b. Milling of wheat into Atta and bran c. Packing and storage of finishing products WHEAT SELECTION AND BLENDING: There are different qualities of wheat grown in India varying in the composition of proteins .Carbohydrates. Vitamins etc. The wheat chosen for mills milling depends upon the final products .Wheat flour variety i.e. quantum nutritions value of composition value or composition of protein vitamins etc. .It should have .There are some hybrid product of wheat which contains the qualities of different types of wheat together in it, Sometimes wheat of different grades are blends together for milling in for milling processes. WHEAT CLEANING: Cleaning is done with machines that use sieves and air current to separate dirt, chaff and foreign seeds from wheat other devices are available to remove metal or stone contamination and wash wheat before it is milled. Generally the followings states are involved in a cleaning process .The grain is passed over a number of sieves to separate the wheat from impurities. Dust as is removed by blowing with fans. The wheat from here is passed on to a disc separator .The machine consists of disc having hole through which smaller grains of barely, coats and other seeds pass. The discs separate seeds from broken wheat grains. The clean wheat is then passed over a magnetic separator to remove the iron contamination i.e. the piece of nail or other starry iron .Removal of its important to avoid damage to machinery and to avoid the risk of sparking and thus ignition of dust of flour which is highly explosive .The final cleaning operations is carried out by passing the grain through a washer and whizzer. The wheat is carried in to machine in a stream of water and is rapidly sluiced round and high speed. WHEAT CONDITIONING OR TEMPERING Water and often heat are added in the process called tempering or conditioning before the actual milling operations beings. To prevent to the bran form fragmenting unusually during milling and to maintain proper milling conditions. In order to obtain this conditions. the wheat from the washer and a whizzer is fed to a conditioner conditions is a holding tank which has provisions for temperature control and control of air. It is generally considered that most wheat can be best conditioned if they are held at 200c to 25 0 c for 48 hours at moisture content of 15.5% conditioning occurs more rapidly at higher temperatures so that at 500c the time way be reduced seconds can be achieved by applying a temperature of 700c to 750c .This temperature must be precisely controlled or the grain will be harmed. The purpose the conditioning is to accelerate the transfer the moisture within the grain.

WHEAT MILLING The milling operations consists of breaking ,bolting sieving, purifying reducing, classifying and some combinations of nurturing . Bleaching and static or enriching. The initial step in actual milling after the cleaning and tempering is cracking wheat to small piece between steel rolls that the corrugated with small grooves. This is called the breaking system. The pieces of broken kernel of various sizes and dimensions are separated by rolling sieves by purifiers which combine sieves and air currents to separate the particles on the baas of size and density (classification) the stocks thus produced are directed to either additional rolls or smooth steel reduction rolls. The whole operations is described as below. First the grain is passed between break rolls. These rollers are fluted and are not in contact with each other. The upper roll revolves with a speed of about 2.5 time the speed of lower a roll. Thus the grain is held in the fluted serrations of the lower and the cut of broken by the faster roll. Four or five additional break rollers, with successively finer corrugations and each following by a sifter are usually used to rework the coarse stocks from the sifters and reduce the wheat particles to granular middling's as free from bran as possible. Germ particles being some what elastic will be flattened by later passage through the smooth reduction rolls and then it can be easily separated. The reduction rolls reduce the purified granular middling's to flour. Maida, Suji, Atta and bran thus obtained are collected separately and subsequently packed.

PROCESS OF STONE MILLING A wheat kernel consists of the endosperm, germ and bran. Milling separates the endosperm from the germ and the bran by breaking the kernel into smaller and finer particles. Slow turning millstones grind the endosperm and germ (containing its nutritious wheat germ oil) into flour in a cool natural way, creating a healthier food product. The cool stone grinding process preserves valuable nutrients which are lost in conventional high-speed, high heat roller type milling. When this slower method is coupled with the highest quality wheat, it produces naturally wholesome unbleached flour. The Stone Mills flour is stone ground in a very special way. This stone grinding process ensures a particularly natural and healthy end product which bakers find more economical to use than standard commercial alternatives that are available. Standard commercial flour-mills employ equipment requiring 14 sets of steel rollers or hammers to break the wheat. These rollers or hammers generate extremely high temperatures, inevitably damaging the wheat germ and also destroying valuable vitamins and enzymes in the process. During the process the fine, top-quality flour is continually abstracted for use in cake flour and self- rising flour, whereas stone ground flour retains all the healthy wheat germ, natural oils, vitamins, enzymes, thus making it nutritiously good and wholesome. The traditional Stone Ground method grinding of wheat between stones is used to develop a flour of the highest quality. It is this slow process that helps to retain the flours natural state of minerals, vitamins and proteins. The stone ground flour motto of, "nothing added nothing removed" means exactly that. The goodness that goes in the top of the mill, is what comes out at the bottom. No iron or preservatives or any other colors or bleaching agents have been added. The milling process breaks open the wheat kernel and reduced the particles formed as to separate the outer and inner portions of the kernel. Bran and gram are almost completely separated from the white interior portions in the milling of refined flour. When the entire kernel is ground and so separations are made the product is whole white flour .The following steps are involved in milling wheat selection blending sieving .purifying reducing classifying and some combination of maturing is not necessary that all these operations be performed is every flour mill .But either these operations are performed as such as or combination of these operations to serve the same purpose are performed in the flour mill.

NEW EDGE GRAIN MILLING Wheat is one of the oldest foods in the world. It is thought that the Romans were the first to have started a milling industry using animals or teams of slaves to drive the wheels to grind the wheat. FOREWORD 0.1 This Indian Standard (Second Revision) was adopted by the Indian Standards Institution on 2 April 1968, after the draft fried by the Processed Cereals and Pulses Sectional Committee had been approved by the Agricultural and Food Products Division Council. 0.2 Wheat ATTA, popularly known in English as wheat meal as distinct from MAIDA (set IS: 10091968), contains bran as well, though the larger particles of bran are preferably sifted out. Practically all the great bulk of ATTA consumed in rural areas in India is produced by grinding wheat in stone mills worked either by hand or by animals. In urban areas, it is produced largely in mechanically operated stone mills and in roller flourmills. This standard is, therefore, intended to cover all types of wheat A TTA whether produced in stone mills or in roller flourmills. 0.3 The Sectional Committee responsible for the preparation of this standard took into consideration the available data on the composition of wheat ATTA manufactured from different varieties of wheat produced in various parts of India and imported from abroad. In addition to this due consideration has also been given to the relevant rules prescribed by the Government of India under the Prevention of Food Adulteration Act, 1954. This standard is, however, subject to the restrictions imposed under that Act, wherever applicable. 0.4 The Indian Standard specification for ATTA was first published in 1957. In 1965 it was revised to include two grades of ATTA besides incorporating modifications in the requirement for crude fiber content. Since then, the position in the supply of wheat has changed considerably and compulsory washing of wheat before milling has been introduced in the country.

GENERAL LAB TESTS: Flour Quality Parameters Flour Color - A very simple way to determine color differences in different batches of flour is to look at the color of different types of flour under a sheet of glass. This can be done with more than one flour at a time. This method not only facilitates a comparison of the whiteness of different flours but also allows for an inspection for impurities. The flour should be of "perfectly regular consistency and not contain any specks. This obviously does not pertain to mixed grain or to other than white flours. Several methods exist for the measurement of color, all of which relate to the quantity of reflected or absorbed light. Texture and Feel- The texture and size of granulation plays an important role in kneading and also determines the speed at which the dough rises. In general, bread flour is slightly coarse and falls apart when pressed into a lump. Pastry flour is smooth and fine and can be squeezed into a lump. Cake flour is smooth and fine, can be squeezed into a lump, and stays in a lump more solidly when pressed. Absorption Ability- Absorption measures the amount of water that can be absorbed by a given quantity of flour. In bread making, it is usually preferable to have flour that can absorb a large amount of water. Measurements of absorption are done to determine the amount of water the dough can absorb, which in turn indicates dough yield and shelf life. Optimum absorption represents the maximum amount of water, as a percent of the flour weight that will produce a high yield of bread during the baking process. Moisture : Air oven are commonly used to determine the moisture in flour .The usual condition are 2660 F for 1 hour .with content air movement. Protein : Time tested technique .The product is digested by the application of hear and strong sulphuric acid, usually in the presence of a catalyst. The nitrogen is covered to Ammonia which from a salt with sulphuric acid. After the solution has cooled the NH3 distilled in to a standard acid solution has cooled.
