Listen to the steps of preparing egg sandwiches. Fill in the blanks.

It is not difficult to prepare egg sandwiches. First of all, you need to prepare all the ingredients. To serve four people, you need eight slices of bread, four boiled eggs, one small cucumber, two tablespoons of mayonnaise, some butter, a pinch of salt and pepper. If you like it, you can also have cheese slices. First, remove the egg shells. Place the eggs into a bowl. Use a fork to mash them. Then, add the mayonnaise, a little bit of salt and a dash of pepper. Mix well and put aside. Next, cut the cucumber into thin slices and spread some butter onto each piece of bread. Then, arrange some cucumbers on the bread. Spread some of the egg mixture on the cucumber slices and put a piece of cheese on top. Cover them with another piece of bread. Repeat with the other slices of bread. After that, use a sharp knife to cut the sandwiches into triangular shapes. Finally, place the sandwiches on a plate and they are ready to be served. UNIT 3

Nowadays, not many people are knowledgeable in choosing fresh raw food, especially fish. Thus, it will be very useful to know how to choose a good fish. It is important to choose a good, fresh fish because it is tastier and we can avoid any food poisoning after eating it. First, look for a fish with clear eyes. Then, feel its flesh. The flesh should be firm. A good fish also has bright scales. Most important of all, the fish must not have a bad smell.

Last night, there was an accident between a motorcycle and a car near my house. The motorcyclist was speeding and he knocked into a car in front of him. He was thrown o his motorcycle and landed in the monsoon drain by the roadside. Worse came to worst, he was not wearing a helmet. The motorcyclist was taken to the hospital but he passed away not long after that because of the serious injuries to his vital organs

during the accident. It turned out that he was only a young boy aged fourteen. My mother advised me to be very careful on the road especially during the nights. She said that cyclists and motorcyclists should wear bright clothes or safety jackets so other motorists can see them. They must always obey the road rules such as wearing a helmet to avoid any unexpected incident. If they take the necessary precautions, they can stay safe. If all road users practise good manners, many fatal accidents can be avoided. However, many do not learn from what has happened. Road Safety Campaigns should be carried out all the time to raise the awareness of being a good motorist, especially among the young people. UNIT 5

Every Sunday, Mrs. Gapathi takes her daughter, Sandra, along to the market as she has a lot of things to buy. The market is not far from their house so they just walk there. They have learnt about green consumerism to help preserve the environment. So, each of them carries a basket to put the things they will buy later instead of getting plastic or paper bags. Last Sunday, they walked to the market as usual. A motorcycle sped past them and suddenly, the pillion passenger snatched the handbag of a woman standing not far from them. The woman was busily searching for her car key. She was holding a lot of things too. Sandra quickly ran towards the woman. However, nothing could be done because everything happened so fast. Luckily, there were two policemen who happened to be nearby and saw the incident. They chased the snatch thieves and caught them in no time. The policemen returned the womans handbag and advised her to be more careful with her belongings. The woman thanked the policemen for their quick act. Sandras mother also advised her to reuse a big shopping bag instead of having to carry many new plastic bags. Besides preserving the earth, she will be able to hold on to her handbag better because there is only one bag. The woman thanked Sandra and her mother for their concern.
