Jamaica.
Ah weh wi ah guh guh? Taxi drivers would ask this because it means where are
we going to go to? We can just answer by giving location.
Dem nice an a it mek mi love dem. We can say this when we compliment
something and want to buy it. It means we like what we see and we love it.
Ello dere! This is how they say Hello there in Jamaican language. It is ver
similar to English and can be used to greet a native there.
The ofcial language is English but they have their
national language called Patois.

Recipe #1: Simple rice and pea
Ingredients
1 medium sized can red kidney beans
1 can coconut milk
2 cups of rice
1 small onion, chopped
1 clove garlic, chopped
1/4 teaspoon dried thyme
1 table spoon oil
1 scotch bonnet pepper (whole, do not chop up)
water
How to Cook:
Separate the liquid in the can of bean and
add water and coconut milk into the liquid.
Pour in enough to make it fill 4 cups of
measuring cups. Mix the liquid and pour it
in a pot of beans, onions, garlic, thyme and
oil. Add rice and keep stirring for one
minute. Lower heat and add in 1 scotch
bonnet pepper. Close it with a lid and wait
for 30 minutes till the rice is cooked.

Recipe #2: Carrot sweet potato
casserole
Ingredients
! cup grated carrots
1 and 1/4 cups mashed, baked sweet potatoes
(best done with American sweet potatoes)
" cup our with dash of baking powder and
salt
" cup vegetable oil and " stick margarine
1 cup milk
" cup brown sugar
# grated nutmeg
small piece of fresh ginger grated
How to Cook:
Mash the baking powder, salt and four
with the baked sweet potatoes. Add the
rest of the ingredients inside the
mixture. Mix until it blends equally. In
the end bake it in greased casserole
dish for 45-60 minutes in a 350
degrees heated oven.
