2010 Sandalford Estate Reserve Cabernet Sauvignon

VARIETAL BREAKDOWN Cabernet Sauvignon 92%, Other 8% REGION Margaret River 100% VINTAGE 2010 was a cracking vintage with some of the most perfect conditions ever seen in Margaret River. Long, slow even ripening conditions lead to marvellous balance between the winemaking parameters of sugar, flavour, acid and secondary compounds such as tannins. WINEMAKERS COMMENTS The fruit for this wine came exclusively from our 40 old, dry-grown Margaret River Estate vineyard. After crushing and de-stemming the fruit underwent fermentation in small 10 tonne static fermenters. The traditional method of pumping over was employed during fermentation to optimise colour, flavour and tannin extraction. Post-ferment the wine was left on skins for two weeks prior to pressing. The pressings were mixed back with the free-run wine and then inoculated for MLF with selected bacteria. After the completion of MLF the wine was racked and transferred to 60% new and 40% one year old French oak. After 18 months of barrel maturation the various wine components were blended and then bottled. TASTING NOTES COLOUR - Dark cherry with a magenta hue. NOSE - This is a very pretty wine with lifted notes of violets, cassis and hints of fragrant cedar. PALATE - Perfect like the vintage comments. Medium to full bodied with silky tannins and moderate acidity. Perfumed flavours as for the nose along with the unmistakable Margaret River nuances of choc-mint, rosemary and bay leaf. Clear crimson-purple; a wine built for the long haul, its foundation high-quality Margaret River cabernet with a central core of cassis complexed by 18 months in new and 1-year-old French barriques and ripe, strong tannins.
