Goa is not only popular for its fish & seafood specialities but is also known for its

meat preparations especially pork & beef. Roasts & chilli fries are loved & enjoyed throughout the year irrespective of festive occasions. Todays post is a Goan Roast Beef Chilli Fry. The best part of a chilli fry is that you can fix it instantly & in a jiffy. You can make it very spicy with lots of green chillies or reduce the heat by discarding the pith & seeds. You may add fried potatoes or boiled potatoes in the chilli fry or serve with mashed potatoes baked !asselback "otatoes or #rench fries on the side. You can make it more flavorful by adding spice powders & lots of fresh coriander.You may even used crushed or broken dry red chillies in the chilli fry or use fresh red chillies too. $t is all up to you as to how you would like your chilli fry to be% &emon'limes or vinegar adds in that bit of tang to a chilli fry. You can enjoy as a starter or as a light meal bread or a pulao. This Goan Roast Chilli Fry is wonderful as a light lunch or as great picnic sandwiches with !asselback "otatoes or enjoy as an any time snack or even a starter. $t is ideal to relish this steaming hot & freshly prepared chilli fry in the rainy weather as well as in winter in the comfort of your home. (e love this dish & $m sure you will too. !ere is my version for you to try out) *njoy% Ingredients : For the Marinade : + kg ,eef -undercut or sirloin. / one inch pieces fresh 0inger -peeled & bruised. + tbsp. fresh 0inger paste 12 gms. fresh 0arlic paste + tsp. Turmeric pwd. 3 "eppercorns 1 4loves 5 one inch 4innamon 6ticks 7uice of 5 &imes or a dash of 8inegar 9 tbsps. 8egetable :il'0hee 9 dry ;ashmiri 4hillies -destemed deseeded & broken. + cup (ater 6alt to taste

Procedure : (ash the chunk of beef & drain well. "ierce with the fork all over the meat. Rub ginger<garlic paste turmeric pwd. lemon juice & a little salt all over the meat. =arinate for about 9 hrs. or preferably overnight in the fridge. !eat the pressure cooker body with oil'ghee till hot. >dd broken dry ;ashmiri chillies peppercorns cloves cinnamon sticks bruised ginger & saut? well. >dd the marinated beef & saut? till the meat is browned on all sides. >dd + cup water or more if re@uired. "ressure cook upto 9<1 whistles till the meat is tender. &et the cooker cool down & then open it. $f there is excess water then let the meat cook with the pan open. Reduce till the gravy is thick. &et the meat sit in the gravy till it absorbs the flavors. You may baste the meat with the thick gravy from time to time. (hen the chunk of roast cools down then proceed to prepare the chilli fry. For the Beef Chilli Fry : Ingredients : 5 cups ,eef Roast -thinly sliced'julienned or cut into cubes. + med. "otato -peeled cubed & soaked in water. -optional. 9 large :nions -peeled & sliced or diced. + med. Tomato -sliced or cubed. A tsp. ,lack "epper pwd.'(hite "epper pwd. / flakes fresh 0arlic -finely cut. + tsp. fresh 0inger -grated. -optional. 3<B fresh 0reen 4hillies -finely cut or julienned. C tsp. Turmeric pwd. > pinch of 6ugar 9 tbsps. 8egetable :il 6alt to taste > handful of fresh 4oriander -roughly chopped.

To prepare the Roast Beef Chilli Fry : !eat a wok'kadhai with oil till hot. Reduce heat & add the green chillies garlic<ginger & fry briefly. >dd the drained cubed potatoes turmeric some salt & fry till the potatoes are cooked through. >dd the chopped onions & saut? till translucent. Then add the chopped tomatoes & a pinch of sugar & cook till soft. >dd sliced'cubed roast beef pepper pwd. & give it a good stir. 6tir fry on high heat. >dd some of the roast gravy if you like & stir well.
