Beef Stroganoff Serves 2 Easy difficulty

Preparation time 15 minutes > Cooking time 35 minutes > Presentation time 5 minutes
Ingredients
o 2 tablespoon of Olive Oil
o Half a brown onion
o 125g button mushrooms
o cup of plain flour
o 350g of lean beef stir-fry strips. If non applicable, rump steak is suitable as well
o cup of salt reduced beef stock
o 1 tablespoon of Worcestershire sauce
o 1 tablespoon of light sour cream
o 150g of fettuccini
o Approx. 35cm baguettes
o 30g of softened butter
o 1 garlic clove
o tablespoon of fresh flat-leaf parsley leaves

o Serrated knife for cutting the onion, bread and crushing garlic
o Colendar
o Medium fry pan
o Scrap Bowl
o Glass Bowl
o Large Saucepan
o Wooden Spoon

Method * meaning optional
1. Preheat the oven to 220C or 200C fan forced.
2. Cut bread into roughly 2.5 cm thick slices without cutting all the way through.
3. Combine Butter, garlic and parsley into a bowl.
4. Season with Salt and Pepper *
5. Spread the mixture over the cut sides of the bread.
6. Wrap bread in foil.
7. Bake in the oven for 12-15 minutes or until the butter is melted and bread is
crispy.
8. Thinly slice the onion
9. Peel the Mushrooms and then thinly slice them.
10. If you have the rump steak, thinly slice it into long strips.
11. Heat 1 tablespoon of Olive Oil in a medium fry pan on the stove over the heat
of medium.
12. Add mushrooms into to the fry pan and cook for three minutes.
13. Add the onions to the fry pan and increase heat to high.
14. Cook this mixture for 4 minutes or until tender.
15. After you have done this set aside the mixture.
16. Fill a Large saucepan with water and bring it to the boil.
17. Add Fettuccini to the saucepan and gradually move the pasta around with a
wooden spoon. (If cooking with a lid on, this could cook the pasta faster, so
over time keep checking on it.)
18. After 9-10 minutes drain the pasta by putting the colendar in the sink and
pouring in the pasta into it.
19. After doing this set aside.
20. Meanwhile, place flour, salt and pepper onto a plate or shallow dish.
21. Lightly coat the beef strips in the flour mixture.
22. Add tablespoon of oil into the frying pan.
23. Add half the batch of beef strips into pan and cook over high heat.
24. Shake the pan to cook the beef until it turns brown.
25. Remove the meat and set aside.
26. Add the other batch of meat and repeat steps 20, 21, 22.
27. Return the remaining beef that has been set aside into the fry pan.
28. As well as this, add the onions and mushrooms to the frying pan.
29. Add stock and Worcestershire sauce whilst reducing the boil to medium
low.
30. Simmer for 8 minutes or until the sauce has thickened slightly.
31. Season with Salt and Pepper *
32. Remove frying pan from heat and combine the mixture and sour cream
together thoroughly.
33. Using tongs, grab the fettuccini onto plates/bowls and Spoon over stroganoff.
34. Serve with Garlic Bread

I believe that in a recipe it is essential include a work plan. This guides you
throughout the whole of the cooking time of what to do in allocated time
slots. Below is my work plan for Beef Stroganoff experiment 1 within an hour.


Positives Minus Improvements
With the stroganoff
sauce as it is meant to
be thick, the sauce was
a perfect thickness as it
wasnt too thick or too
runny.
The beef was cooked
perfectly, as it was nice
and tender, not chewy
and tough.
The onions and
mushrooms in the dish
werent too
overpowering as they
were sliced into a
reasonable size, still
having the flavour but
still making the beef
and stroganoff sauce
the star of the dish.






I felt as if the fettuccini
was too heavy for the
beef and stroganoff
sauce. As this has
occurred I will be
cooking rice for my
experiment two. This is
because rice is light
and fluffy, perfect for a
thick sauce.
Also, the presentation
of the dish looked a bit
unappealing. As I am
alternating to rice, I
have a different
presentation that I have
already practiced and
it does look appealing.

The recipe in which I
brought to my
experiment, I found it a
bit hard to understand
in regards to my time
plan. To improve this I
can insert a time
management table in
which I can follow
throughout my
experiment so that I
have the appropriate
time for cooking,
cleaning and
presentation.
On the day of the
experiment I
undercooked my garlic
bread as the bread
wasnt crisp enough
and the butter hasnt
melted thoroughly. To
improve this I will put
the Garlic bread on for
20 minutes.
Also, when I presented
the garlic bread on the
plate it was too much
into the beef
stroganoff. This resulted
in the garlic bread
became soggy. To
improve this I will
present the garlic
bread away from the
sauce.
The following table below, I will be evaluating my first recipe, Beef
Stroganoff into a P.M.I chart of Positive, Minus and Improvements. This is so
I know that if I need to add or takeout for my recipe that I will be cooking
for a second time.




The sauce was a perfect
consistency, not to think
or too runny.
The beef was cooked
well throughout, not
chewy or tough but nice
and tender.
The onions and

sauce. This is where I will
resort to rice.
The presentation of this
dish looked quite

where I will alternate to
rice, also to make the
presentation appealing.

of time in the
oven I
undercooked

bread. This is
where I will
cook it for
longer so that
the butter has
melted and the
bread is crispy.
As I placed, the garlic
bread next to the
stroganoff sauce, the
garlic bread became
soggy. To prevent this I
will place the garlic
bread away from the
stroganoff sauce.
