No-Bake Strawberry Icebox Cake (adapted from The Kitchn)
2 pounds fresh strawberres, washed
3 1/2 cups whppng cream, dvded 1/3 cup confectoners sugar 1 teaspoon vana 1/2 teaspoon amond extract (optona) 4 seeves (about 19 ounces, or 24 to 28 whoe crackers) graham crackers 4 ounces dark chocoate, ney chopped Take out a few of the best-ookng strawberres and set them asde for the garnsh. Hu the remander of the strawberres and sce each berry nto thn sces. Wth a hand mxer or n the bow of a stand mxer, whp 3 cups of cream unt t |ust hods sth peaks. Add the confectoners sugar, vana, and amond extract (f usng) and whp to combne. Spread a sma spoonfu of whpped cream on the bottom of a 9x13 nch bakng pan, or a smary-szed patter. Lay down sx graham crackers. Lghty cover the top of the graham crackers wth a thn ayer of whpped cream, and then a snge ayer of strawberres. Repeat three more tmes, unt you have four ayers of graham crackers. Spread the ast of the whpped cream over the top and swr t ghty wth a spoon. Add a few more strawberres. To make the ganache, heat the remanng cream unt bubbes form around the edges, then pour over the chopped chocoate. Let t stand for a few mnutes, then whsk unt the mxture s thck and gossy. Drzze ths over the ayered dessert wth a spoon, or transfer to a squeeze botte and use that to drzze. Refrgerate for at east four hours, or unt the crackers have softened competey. Garnsh wth addtona berres. Peanut Butter Pie (found at Tasty Kitchen) I used lowfat cream cheese and whipped topping and my pie was delish. 1 chocoate graham cracker or cooke pe crust (homemade or store-bought) 8 oz. cream cheese 1 c. peanut butter 1/2 c. granuated sugar 1 tsp. pure vana extract 8 oz. frozen whpped toppng, thawed whpped cream, chocolate syrup, and grated chocoate; optona garnshes Wth an eectrc mxer, beat cream cheese and sugar unt smooth. Bend n peanut butter and vana. Fod n whpped toppng. Spoon mxture nto prepared pe crust. Refrgerate for at east 4 hours. Garnsh wth whpped cream and chocoate syrup, wth a sprnkng of grated chocoate. Keep refrgerated. Thn Mnt Cooke Trumes Ingredients: -1 (9 oz) package of Gr Scout Thn Mnt Cookes (or Keeber Grasshopper cookes) -1/2 package (4 oz) cream cheese, softened (I used fat free and t worked great) -1 (12 oz) bag Guttard's Green Mnt Chps (I |ust found these at the grocery store)* irections: In a food processor, puse the Thn Mnts a few tmes, and then bend them down unt they are |ust crumbs. It mght be easer to do ths n two batches (even f you don't have a food processor, you can st make these. Throw the cookes n a bg Zpoc bag and start poundng them wth a hammer unt you have a ot of ne crumbs). Next, mx the cream cheese and cooke crumbs together n a bow unt we-mxed. Ro the mxture nto 1 nch sze bas, and pace them on a wax paper covered bakng sheet. Pace the bakng sheet n the frdge for about 30 mnutes, so the bas are easer to dp n the chocoate and do not fa apart. Once the trumes have been n the frdge for a whe, met the green mnt chps n a mcrowave-safe bow n the mcrowave. Heat the chps for 30 seconds at a tme, strrng n between each heat burst. Repeat unt the chps are a meted. Ro each ba n the meted chps unt t s fuy covered. I usuay use two forks to push the trume around unt t s a covered. Then, usng the two forks, carefuy pck up the trume and aow the excess mnt chocoate to run oh before pacng back on the wax paper. Repeat wth a the trumes. Stck the trumes back n the frdge for a coupe of mnutes or unt the mnt chocoate s hardened. If you want to decorate your trumes as I dd, met about 1/2 cup of whte chocoate chps (or amond bark or whte candy coatng-whatever you want) the same way that you meted the mnt chps. Spoon the whte chocoate n a sma Zpock bag and cut a tny bt of one corner oh the bag. Start sma at rst, then f you need, make the hoe a tte arger. Drzze the whte chocoate over the green trumes. Pace back n the frdge unt you are ready to devour eat them. *If you can't nd those green mnt chps, these can be made wth amond bark or vana candy coatng. It woud aso be cute to set asde sma amount of cooke crumbs and sprnke them on top of the trumes. Sprnkes aso ook cute on these too! No Bake !lu"y Blueberry Cheesecake Ingredients: 1 (8 oz) package cream cheese, softened 1/3 cup sugar 1 (8 oz) contaner Coo Whp, thawed 1 prepared graham cracker crust 21 ounces can bueberry pe ng (cherry works great too!) Add the vana and sweetened condensed mk to the cream cheese mxture, beatng 45 to 60 seconds to mx a ngredents unt smooth. Spoon ths ng mxture nto the sma baked pastry shes, approxmatey 1 tabespoon or ess per she. Garnsh wth fresh berres such as bueberres, raspberres, or backberres. Some arger fruts, such as strawberres or kw, can be sced nto smaer peces. Refrgerate 1 hour, unt mxture thckens. Ths recpe makes approxmatey 3 cups of ng. Press eveny nto the bottom of an ungreased 913 nch pan. (I dd mne n a 9X9 square pan because I wanted them thcker) In the mcrowave, met the chocoate chps wth the peanut butter, strrng every 30 seconds unt meted unt smooth. Spread over the peanut butter ayer. Refrgerate for at east one hour before cuttng nto squares. 'o$e$ade (nglish To"ee: (Recpe from (at Cake )or inner) 1 c. butter 1 c. sugar 3 Tb. water 1/8 tsp. sat (omt f you use sated butter) 1 1/2 Tb. ght corn syrup 1 tsp. vana extract 3/4 c. chocoate chps chopped nuts, opt. Met butter n a heavy-bottom sauce pan, over medum-ow heat. Add the sugar, water and sat; str we to ncorporate. Brng to a bo and add the corn syrup. Whe strrng, use a wet pastry brush to wash down the sdes of the pan to dssove any undssoved sugar crystas. Contnue bong and strrng unt mxture reaches 280- 285 degrees (this is at high altitude, so if you are not at high altitude, then you will probably need to cook it longer - 290-295 degrees. Remove from heat and add the vana extract. Str to combne and pour nto a we-buttered cooke sheet or an 8x8 casseroe dsh. Do not scrape the sdes of the pan. Use a rubber scraper and spread out to desred thckness. You can ether drop the chocoate chps onto the hot tohee and spread out when meted or you can met the chocoate n the mcrowave and spread over the tohee. Sprnke wth chopped nuts, f addng. 1 bag of pretzes (16-18 oz 2/3 cup o (I used vegetabe o) 1/3 cup sugar 1 teaspoon cnnamon cup cnnamon sugar for sprnkng 1 cup whte chocoate chps irections: 1. Whsk together o, sugar, and cnnamon. 2. Pour pretzes nto a mcrowave safe bow and pour o mxture n. Str unt coated. 3. Mcrowave for 1 mnute, remove and str. Mcrowave 45 seconds more. 4. Spread pretzes eveny onto two cooke sheets covered n parchment paper. 5. Whe st warm, sprnke cnnamon sugar generousy. 6. Sowy add meted butter and puse to combne. Press nto the base of a 9" sprng form pan (wth parchment paper on bottom). Refrgerate. Pour 1/3 cup water nto a sma bow. Sprnke geatn nto the water and set asde for 5 mnutes. Put banana and orange |uce nto a sma sauce pan over medum heat and cook unt banana s cooked through (5-8 mnutes). Remove from heat and set asde. Put cream cheese, egg yok, sugar n the bow of a mxer wth the padde attachment (or use a handhed whsk) and beat sowy unt mxture t smooth and thck. In a separtate bow whp cream unt thck but not sth. Set asde. Str the soaked geatn nto the warm, not hot, banana mxture and str unt geatn s eveny dspersed. Spoon a tte cream cheese mxture nto the banana mxture and str to mx. Then add a tte more. Ths w even out the temperatures of the two resutng n eventy spread geatn and uncooked egg yoks. Contnue unt a s combned and sowy fod n whpped cream wth a wooden spoon unt combned. Pour nto prepared she and ch for two hours, or overnght. En|oy! Chubby 'ubby Buckeye Tru*es +ecipe: (Recpe from The Brown Eyed Baker) Ingredients: 1 cups pretze peces cup creamy peanut butter 1 tabespoon unsated butter (room temperature) 2 tabespoons ght brown sugar dash of sat 3 tabespoons powdered sugar 1 cup mk or semsweet chocoate chps (I used mk) 1 tabespoon vegetabe shortenng Directions: Pace the pretze peces n a reseaabe pastc bag and crush nto very sma bts (a rong pn works great for ths- put your kds to work!). In a sma bow, mx the peanut butter, butter, brown sugar and sat together. Mx unt a of the ngredents are competey bended and smooth. Add the pretze bts to the peanut butter mxture and mx we. Add the powdered sugar and mx unt competey combned. Lne a sma bakng sheet wth wax paper. Get about 2 teaspoons of the peanut butter mxture and genty shape nto a ba wth your ngertps. Pace the ba on the wax paper-ned cooke sheet and repeat wth the remanng peanut butter mxture. Pace the bakng sheet nto the refrgerator and ch for at east 30 mnutes. When ready to dp the trumes, mcrowave the chocoate chps and vegetabe shortenng together n a sma bow at 50% power n 30-second ncrements, strrng after each, unt competey meted and smooth. Workng one at a tme, dp one peanut butter-pretze ba nto the meted chocoate and use a fork to ro t around, ensurng that t s competey coated wth chocoate. Let any extra chocoate drp oh and pace back on the wax paper-ned sheet. Repeat wth a of the peanut butter-pretze bas. Return the bakng sheet to the refrgerator and agan ch for at east 30 mnutes. Super Bowl Snickers Popcorn 'dapted from (ookies and (ups 4 quarts popped corn (about 1 cup kernes) 1 cup sated butter 2 cups ght brown sugar, packed 1 tsp sat 1/2 cup ght corn syrup 1 tsp bakng soda 1 cup sated peanuts 30 fun sze Snckers bars chopped up 3 oz meted choc chps Preheat oven to 200 degrees. Pop your popcorn and put popcorn and peanuts n a bg brown paper grocery bag. Over medum heat bo butter, brown sugar, sat and corn syrup for 5 mnutes (strrng constanty). Remove from heat and str n bakng soda. Pour over popcorn n the brown paper bag, ro cosed and shake we. It bends so much easer than tryng to t t n a bg bow and str. After the popcorn s coated we, spread onto a cooke sheet. Spread chopped Snckers over top of popcorn and put n oven for 5 mnutes. Remove from oven and drzze meted chocoate over top of popcorn. Irsh Banana Cream Pe by Shugary Sweets Ingredents !or the Crust: 1 1/2 cup Na wafer crumbs (see note) 1/4 cup granuated sugar 6 Tbsp butter, meted !or the !illing: 1 1/2 cup whte chocoate, chopped 1/3 cup Baey's Irsh Cream 1 cup heavy cream 2 whoe bananas 1 box (3.5 oz) Instant French Vana puddng 1 1/2 cup mk !or the Topping: 8oz Coo Whp 8 whoe Na Wafer cookes, for garnsh Instructons For the crust, puse Na wafers n food processor to make crumbs (see note beow). Puse n the sugar and meted butter. Press crumb mxture nto bottom of 9nch pe pan. Bake n a 350 degree oven for 8-10 mnutes. Remove and coo. In mxer, beat heavy cream unt sth. In sma saucepan met whte chocoate wth Baey's unt smooth. Fod nto heavy cream. In sma bow whsk the puddng mx and the mk together. Pour nto Baey's and cream mxture. To assembe, sce bananas and ay on bottom of crust. Pour puddng mxture over bananas and top wth coo whp. Refrgerate 4 hours or overnght. Garnsh wth remanng cookes, sce and en|oy. **Note: To get about 1 1/2 cup of crumbs I used about 1/3 of a 12oz box of Na Wafers. +eese.s Peanut Butter +ice Krispies Treats Source: Sweet Bas 1 Cup Sugar 1 Cup Corn Syrup 1 1/3 Creamy Peanut Butter 4 1/4 Cup Rce Krspes 1 Pnch of Sat 4 Reese's Peanut Butter Cups, chopped (or 12 bte-szed Reese's Peanut Butter Cups) 1/2 cup Chocoate Chps In a arge sauce pan over medum heat, met the sugar, corn syrup, and peanut butter unt smooth and eveny combned. Wat about 1 mn and add the candy, qucky fodng the mxture together so as to not smash up the candy. Lne a bakng sheet wth parchment paper and drop rounded tabespoons onto the sheet. Let coo (or you can eat them whe they are warm and gooey- try and resst them!) and en|oy! I got about 30 Rce Krspy "bas" out of ths recpe- t |ust depends what sze you make them.
