CPB 30303 - Oil and Fat Process Technology

Introduction to edible oil processing, processing of edible oil, raw materials feedstock, fat splitting
and glycerine recovery and purification, fatty acids and their derivatives, the analysis of fatty acids
and esters, utilization of fatty acids and their derivatives, test methods for analysis of fatty acids.

Learning Outcomes:
Upon completion of this course students should be able to:
1. Explain the various types of edible oil and its characteristics.
2. Discuss the processing method of palm oil from raw materials to
final product.
3. Relate the principle of operations to the pilot plant experiments and
adjust the process parameters involved.
4. Analyse the product produced by pilot plant experiments with the
apparatus and standards given.
5. Manipulate the operation to achieve the required product
specification
6. Demonstrate the ability to work in the teamS during pilot plant
experiments.

Student Involvement:
Normally, you must study hours for each lecture hour. You should be prepared to spend more time,
if you have difficulty mastering the material. The course emphasizes small group effort and team
building on all workshops, homework and project assignments.
Class Attendance:
Regular and punctual class attendance is required for all students in Edible and Fat Process
Technology
An attendance sheet will be circulated at the beginning of each class period for you to sign. This
sheet should be circulated quickly and given to the instructor. In addition, I will occasionally call the
roll. It is your responsibility to make sure you sign the attendance sheet. It is the official record.
Lateness (over 15 minutes) will be considered as absence.
Office Hours:
The instructor maintains a set of five days / week.
Time table : at anytime (but make an appointment first). This is your time and you have
priority, make use of it. I also have an open-door policy, so you can see me whenever you need help
with a short problem. Please learn to visit me often. I am here to help you to learn CPB 30303.
Course Grading:
Performance in this course will be evaluated using homework and project assignments, attendance,
three tests and a final exam. To determine the course average, grades will be weighted as follows:

Homework / Assignment / Project:
This is a multi task course. It is just not to learn technology but also to enhance the idea and
somehow refurbish the process of edible and fats technology. Also, give you idea as a technologist
what do have to do to understand the basic processes. However, solving homework is a critical part
of the learning process and continuous assignment activity throughout the semester is essential. Due
dates will be given of an assignment. An assignment will contain a problem that need to be
solved by individual to demonstrate their mastery learning on the topics on the assignment. For
the individual problem, you will be asked to make-up and solve a comprehensive problem that
demonstrates your learning.(understanding the principle/concept(and application).
Pilot plant practical work(Group but assessment will be based on the individual)
Students will work as teams to run a process in the lab or field work. Individual will put an effort to
ensure the experiment will successfully achieve. From the result obtained, they will analyze
individually to ensure that his/her was capable of understanding the process. The assessment will be
conducted in the lab immediately after the lab work finish.
Pilot plant Report(Group):
Students will work as team to analyze any process data via internet, books, magazine or journal.
Individual will put an effort to contribute to find data. From the data obtained, they will produce
group report to ensure that they are capable when writing a technical report. It will be, as a part of
training methodology to make sure the students will assimilate to working environment.
Tests & Exam:
Most exam questions will be structured problems.. Problems will be graded based on the answer
selected and on the method used to solve the problem. In general, a correct solution will be
emphasized .But the important things students should have basic idea towards solving the questions.
Course Policies and Responsibilities:
1. No individual make-up exams will be given. Absence from exams without a valid medical
reason will result in a zero grade.
2. Homework should be collect at the start of class period in which they are due. Late
homework will be accepted, but will be penalized.. Homework solutions will be posting in
Micet E- Learning, if necessary.
3. Any grievances you may have with the grading of tests/homework must be brought to my
attention by the end of the class in which the graded exam/homework is handed back.
4. Return of graded material - I will return materials such as test, assignment and within end of
semester.
5. I will do my best to help you meet the course standards, but you must actively participate.
You must attend class, do the homework and study as much as needed to keep pace.

6. Perfect attendance bonus factor. Your overall course grade will be increased by up to 3% if
you are physically and mentally present for all classes. There will be no excused absences
for achieving this award.
