A Carnival Christmas

The number of floats for the 11th Annual Parade of

Lights was down from past years, but for those who did

participate, the evening was beautiful and they were

having a grand time.

Thanksgiving is Thursday, begin thawing your turkey today

by Roubie Younkin
MSU Extension, Valley County
Choosing to cook a fresh or
frozen bird depends on personal
preferences. If you like to purchase
your turkey early to take advantage
of sales, frozen is the best option.
However, if you have limited storage
space, a fresh turkey is probably a
better choice. When planning your

holiday meal, estimate one pound of

turkey for each guest.
Fresh turkeys can be kept in
the refrigerator for only one to two
days. Store your fresh turkey in the
refrigerator in a pan until you are
ready to cook it. A frozen turkey
should be kept in its original package
and kept frozen until you are ready
to prepare it. Frozen turkeys should

be cooked within one year for the

best results. Pre-stuffed turkeys are
not recommend as they may contain
harmful bacteria if not handled
properly. Also, do not pre-stuff a
frozen turkey before you cook it.
The safest way to thaw your
turkey is in the refrigerator, in its
original package, in a pan to catch

Hi-Line Turkey Federation scholarship

honors the memory of Barb Marsh
Hi-Line Turkey Federation scholarship honors the
memory of longtime supporter Barb Marsh

All high school seniors in Valley County are eligible
to apply for a substantial college scholarship that will be
awarded in February by the Hi-Line Gobblers chapter
of the National Wild Turkey Federation.
The scholarship winner will be announced at the
Hi-Line Gobblers 9th annual fundraising banquet,
scheduled for Saturday, Feb. 21, 2015 at St. Raphaels
Catholic Churchs parish hall.
The scholarship is awarded in memory of Barb
Marsh, a longtime supporter of both the Turkey
Federation and local youth. Marsh died unexpectedly
last January. To memorialize her commitment to the
NWTF, her partner, Joe Younkin, sponsored a special
rifle that was auctioned at last years banquet. Proceeds
from that commemorative rifle, purchased by Norm
Sillerud, are being distributed to eligible high school
students this year.

For details about eligibility and other details on the
scholarship, students are encouraged to visit with career
counselors at high schools in Glasgow, Nashua, Frazer,
Hinsdale, Opheim, and Lustre.
Younkin has donated another commemorative
firearm to the Hi-Line Gobblers 2015 banquet that will
fund 2016 scholarships, and has pledged to sponsor
the scholarships every year. Plan to attend the Feb. 21
banquet to bid on the special scholarship gun and to
recognize the winner of the 2015 Barb Marsh Memorial
Scholarship.
Call Scott Billingsley at 263-7161 or Jenn Jackson at
263-7339 for information about the banquet or scholarship.

Say it
aint so...
An approaching weather system will bring widespread
snow to northeast Montana this week, potentially
making holiday travel difficult. Snow will begin Tuesday
and continue into Thanksgiving Day. This storm has
the potential to drop 3 to 7 inches of snow through the
duration of the event.
Some light freezing rain mixing with the snow on
Thanksgiving Day will also be a possibility.
About the only good news here is that gas is now
under three bucks a gallon.

Three Big Sky Teams in the playoffs

Eastern Washington, Montana and Montana State
will be representing the Big Sky Conference in the FCS
playoffs that get underway on Saturday, November
29th.

The Eagles (7-1, 10-2) received a #4 seed and firstround bye. The Grizzlies (6-2, 8-4), coming off that
impressive 34-7 win over the Bobcats in Missoula, will
host San Diego (9-2) with a 2:00 kick-off. The Bobats
(6-2, 8-4) also host a first-round game as South Dakota
State (8-4) travels to Bozeman with a 2:00 kick-off.

Should the Grizzlies win, theyll be on the road to
take on the Eastern Washington Eagles on December
6th.

Should the Bobcats win, theyll be traveling to Fargo
to play the North Dakota State Bison, ranked second in
the nation behind top-seeded New Hampshire.
This is NDSUs fifth straight appearance in the
FCS playoffs. NDSU is 14-1 in the FCS playoffs
including three straight national championships and
a quarterfinal appearance in 2010. The Bison are
10-0 at home in the FCS playoffs. Montana State has
not played in Fargo since 1979. NDSU won the last
meeting 42-17 in Bozeman in the 2010 second round.

It might be warmer, it might not be warmer...?

The Climate Prediction Center
released its updated 3-month outlook
for temperature and precipitation for the
months of December, January, and February.

The outlook calls for equal chances for
above or below average temperature and
precipitation across northeast Montana.
The outlook also calls for increased
chances for above average temperatures
but below average precipitation across

western portions of the state.

How things play out will ultimately
play a role on important items of interest
such as energy consumption and cost,
snow removal, etc., but right now it is
difficult to say with confidence how the
next three months may shape up across
northeast Montana.

Hopefully the next update will have
a little more color.

Last year on Thanksgiving, the childless farmer and
his wife prayed for all their blessings. But, they also prayed
that their loneliness of having no children be relieved.

Their prayers were answered and the wife became
pregnant. She gave birth to triplets!

A friend remarked, See, prayers are always answered.

The farmer then replied, Yes, but I never prayed for a
bumper crop like this!

Thanksgiving Turkey continued from front

any drips. Allow 24 hours for each 4-5 pounds of turkey.

If you have a 15 lb. turkey take it out of the freezer today
(Monday). Once it is thawed it is safe to keep it in the
refrigerator for up to two days.
Oh no, I forgot to thaw the turkey! A quicker
thawing method involves submerging your turkey in
cold water. Put the turkey in a heavy freezer bag and
close it tightly. Place it in a clean sink and fill the sink
with cold water until the turkey is completely covered.
Change the water every half hour to keep it cold. The
turkey should thaw for 30 minutes per pound. Cook a
turkey thawed this way immediately. It should not be
refrigerated or refrozen.

What about the Microwave?
If your turkey will fit in your microwave you may
use it for fast thawing. Remove all packaging and place
the bird in a microwave safe dish. Follow the microwave
owners manual for the recommended power level and
time per pound. Again do not refrigerate or refreeze a
turkey thawed in the microwave.
Some people prefer to cook their turkeys a day or
two in advance. Once the bird has been cooked, carve it
and refrigerate the meat in small, shallow containers. The
wings, legs, and thighs may be left whole. You can also
refrigerate the juices that collect in the bottom of the pan
during cooking. On the day you plan to eat the turkey,
reheat the meat in an oven heated to at least 325F.

If you choose to stuff your turkey, you may prepare
the stuffing in advance. Keep the wet and dry ingredients
separated and the wet ingredients refrigerated until
just before you cook the stuffing. It is safest to cook
the stuffing separately, not inside the turkey. If you do
choose to stuff the bird, pack the stuffing loosely and
cook the turkey immediately. Remove the stuffing
about 20 minutes after the turkey is done cooking.
You can also safely cook a frozen turkey without
thawing it first. A frozen bird will take 50 percent
longer than a thawed or fresh turkey. Remove the
giblets carefully while the turkey is cooking. Do not
stuff a frozen turkey.

Cook your turkey at 325 for 15 minutes per pound.
Remove the giblets before placing the bird in the oven.
Using a shallow roasting pan maintains a more constant
temperature. The inside temperature of the turkey
should reach 165. Use a food thermometer to check
the temperature at the thickest part of the turkey breast
and the innermost part of the thigh. Let the turkey rest
for approximately 20 minutes before carving. Leftovers
should be refrigerated within 2 hours after serving.
