From childhood we learn that on Valentines Day


we send cards, flowers, chocolates and other gifts
to the people we care for. These customs are the
ordinary ways of recognizing February 14 in most
cultures. However there are still some cultures
that celebrate Valentines Day in other ways. For
example, in Norfolk, England, a character named
Jack Valentine knocks on the back doors of houses
and leaves sweets and gifts for the children. And
despite the fact that this character was leaving
treats, many children actually fear him as some
mystical monster.

Additionally, in Slovenia the figure of Saint


Valentine, also called Zdravko, was one of the
saints of spring, the saint of good health and the
patron of the beekeepers and pilgrims. A proverb
states Saint Valentine brings the keys of roots. It
is believed that this day marks the first day that
plants and flowers start to grow in the new season.
And actually in Vietnam, given how close February
14 is to the first day of the lunar New Year (February
19), when all of the countrys peach blossom trees
flash for the first time their bright pink smiles, to
call it the coming of spring is not far off.
In other places of the world, Valentines Day has
been celebrated as the day when the first work
in the vineyards and in the fields begins. And, in a
rather humorous interpretation and combination
of spring and romance, another proverb states that
the birds propose to each other or get married on
this day.

As shown, Valentines Day marks the beginning of


spring in some places more than it represents a
holiday of romantic love, flowers, chocolates, and
cards. Only relatively recently has Valentines Day been celebrated as
the day of love. For if we want to talk about love and the saints, we
might want to mention a few other names as well. For example, Saint
Gregory, who traditionally was honored on March 12 during Saint
Gregorys Day, the day of love. Or Saint Vincent, who on February
22 was celebrated in honor of the day of love. And finally, the
patron of love, Saint Anthony, whose day has been celebrated
on June 13.
All in all, there are some other wonders to consider
when celebrating this day. Because isnt the
blossoming of new spring plants just as

The streets are suddenly ablaze with peach blossom and kumquat trees,
traffic slows so we may spend more time lingering with our thoughts about
the passage of time while waiting in traffic. The rush of crowds can almost
swallow you but then it makes the quiet calm all the more peaceful on the
actual Lunar New Year Day when city dwellers return to their places of origin.
In a world where modern developments and fast paced change are ripping
through every part of the world, the strength of traditional customs around
this time of year still feels untouched.
Traditions reverberate loudly through this time of year. Wishes of good
luck, concerns for the astrological makeup of guests, a clean house, a
settled debt. And of course, people have their own personal traditions of
how they want to spend the first days of the New Year, whether that be
riding a bicycle around Hoan Kiem lake or singing karaoke after swimming
in cups of rice wine.
On February 19 this year, we will move from horse to goat. On this day of
great transition, the official start to the New Year is marked by food, because
what else could possibly mark the start of a new year other than a meal?
Eating and family and friends and teachers. All take part in sharing the flavors
known in the very blood of tradition. Flavors like banhchung, the green
square of sticky rice covered pie with bean and pork in the middle, wrapped
in dong leaf, sometimes for a crunchy bite. Other flavors that embody this
holiday aregio cha, a sausage made from pork and pork skin wrapped in
green leaves, mut, sugar coated fruits, xoigac, red sticky rice, hat dua, fried
watermelon seeds, and "canh mang", bamboo shoot stew with pig trotters.
The time of Tet carries a feeling that is hard to name. For though it is a cold
and crowded and stressful time, there is also deep emotion and almost
magical sense of ancient tradition. The past comes back and the future
comes forward, meeting each other and sitting together at the same table,
eating from the same bowls.
Whether you choose to spend Tet in the quiet, peacefully deserted city of
Hanoi, or to take advantage of the holiday to travel outside the city, the
moment of change will surely be lodged in your heart.

What do you do on your time off from work?


There is not much time off when you work with passion in the
hospitality sector. On the chance that I take a full day off, I like to start
my day at 5:30 am with a little run around West Lake followed by a
Continental breakfast at Annam Caf Gourmet. Its then time for a 70min foot massage to remove all the pressure and stress accumulated
during the week. I usually follow that by having lunch with friends,
then watch a movie and finally try a new restaurant in town for dinner.
What do you most enjoy about working at The Press Club?
First, the venue itself. There are around a thousand restaurants
listed in Hanoi and none of them looks like the Press Club. Our
building with its chic interior attracts high-end Vietnamese guests,
entrepreneurs, businessmen, travellers and sophisticated expatriates
who gather to relax or dine in an elegant setting. I also love the fact
that our little Press Club can rival any of the most luxurious hotels of
the Capital in terms of dining experience, events hosting, catering
and banqueting options.
Secondly, working for the parent company, Openasia Group, which
has niche sector investments in hospitality (Press Club, Emeraude
Classic Cruises, Alba Hotels) and luxury retails (Hermes, Hugo Boss)
just to name a few examples, makes me feel that, in some small way,
were participating in Vietnams economic progress.

the Assistant Food and Beverage Director at The Press
Club in Hanoi. Resident of Vietnam for three years,
the Frenchman has worked in hotels in France and
Switzerland and traveled across continents before
stopping over Asia. Here, he shares with us a few of
his favorite culinary things, how he likes to de-stress,
and his philosophy on life.

Last but not least, the Press Club team members make every single
day enjoyable and it is a great privilege to work with all of them.
Where do you get inspiration for your cocktails? What, on the menu,
is your favorite cocktail that you have created?
I look at international cocktails first and then choose local relishes
and flavors. I finally find the best method to balance both using
fusion techniques. One of my favorite signature cocktails is
the Press Club Renaissance; its a concoction of Ciroc Vodka,
Tanqueray Gin, Flaming Cointreau, Cranberry Juice, Fresh Raspberries,
Fresh Ginger, Honey, Cinnamon Powder and Cinnamon Stick. Cheers!
What are your favorite dishes at the Press Club?
Perhaps the Mini Beef Tartar Duet: one is traditional, the other is
Rossini styled. Theres also the Grilled Scallops and Mushroom Risotto
with Saffron Butter Sauce which is delicious.
Do you think the glass is half full or half empty?
I like when the glass is full, then half full, then empty. However, what I
like most is when the glass is full again!

Croque Monsieur

2 slices of bread
2 slices of ham
2 slices of Emmenthal cheese

This month Press Clubs chef reveals the


secrets behind the perfect traditional Croque
Monsieur sandwich. Follow the steps impress
your next dining guests.

Bchamel sauce: 20g flour,


20g butter, 250 g milk, salt
and pepper, nutmeg.

St Bchamel: 20gr bt m,

Preparation
Lay two slices of cheese on top of the bread. Add two slices ham
and cover.
To prepare the Bchamel sauce, boil milk with nutmeg while melting
butter on the side. Add flour and mix well. When boiled combine the
milk, butter, and flour then cook until it gets thick. Put the sandwich on
a baking tray to put in the oven. Add Bchamel sauce and some grated
Emmenthal cheese on top. Keep it in the oven until the cheese is melted
and golden. When ready, serve on a plate with a mixed green salad.

The Majesty of the

Mekong Delta
Rising on the Tibetan Plateau and flowing southeast to its labyrinthine delta, the
