Ian Knox, executive chef for

the Blair House, the president of
the United States guesthouse, has
cooked for a long list of world
leaders and dignitaries, including
five U.S. presidents and major
world leaders such as Queen Elizabeth II of England.
Last Monday, students at
Springville Elementary School
were added to Knoxs list of diners.
Students at Springville Elementary School got a chance to
meet Knox during two healthy
eating assemblies. Knox prepared
a few fish and vegetable dishes for
the students at the event.
Knoxs trip to Springville was
made possible thanks to Joe
Buonadonna, a parent of a student at the school. Buonadonna
works for Samuels and Son
Seafood Company in Philadelphia and has sold food products to
Knox in the past. Buonadonna
said he was excited to spread the
message about healthy eating to
students at Springville through a
well-known chef.
Knox has taken an active role
in promoting healthy eating in recent years, working with First

Dan McDonough Jr.

ix years ago, in 2009, a man had

a vision of changing the way a
long-standing industry operated. He felt the way the industry was
run wasnt the most efficient, wasnt
the most effective, hadnt adapted with
the times and didnt provide consumers with the best experience at the
best price.
Today, that mans company, Uber, is
well known and is in cities across the
country.
The company uses the person-to-person model to offer taxi-like services to
people through a mobile app. Users
download the app, select a car in their
area they want to use for the ride and
pay for the fare. The fare is listed based
on the trips length, and no cash is
needed while taking the trip.
Uber is catching on like wildfire
from users, who enjoy its accessibility selecting a ride with a few taps on
the phone instead of calling a taxi
company and waiting long times for

the drivers arrival and also its

cheaper price.
Uber also provides jobs to drivers
who are looking to earn extra money.
But this could all come crashing to a
halt, Uber says, if a New Jersey bill is
passed that would put onerous regulations on the company.
The legislation would require ridehailing companies such as Uber to display a Motor Vehicle Commission
marker when drivers are searching for
fares and would require background
checks for drivers, safety inspections
for vehicles and higher insurance regulations.
An Uber spokesman said the company already provides more insurance

than taxi companies do, and said if the

bill is passed, the company might be
forced out of New Jersey, resulting in
the loss of more than 5,000 jobs.
A similar bill in Kansas was struck
down by Gov. Sam Brownbacks veto,
and we couldnt agree more with his
reasoning:
Kansas should be known as a state
that embraces economic growth and
innovation. The jobs created by this
new industry can bring opportunity to
many Kansas families. An open and
free marketplace often results in higher quality products at a more affordable price.
New Jersey, similarly, should be a
state that embraces economic growth
and innovation. Uber found a way to
compete in the transportation market.
Good for them. They should be praised
for that, not overregulated to the point
of extinction.
If taxi companies cant compete, too
bad. Thats called business.

Delaware Valley Chapter of Scleroderma Foundation seeks volunteers

By MIKE MONOSTRA
The Sun
A little more than three years
ago, Cherry Hill resident Bill
Cowan was taking part in a
friendly trivia contest with his coworkers at Merrill Lynch in Mt.
Laurel. The contest was a
fundraiser, where the winning
team would receive $3,500 to donate toward a nonprofit.
Our team won the trivia contest all because one of the partners knew a lot about music,
Cowan said.
After winning, Cowan convinced his team to donate the
money to the Delaware Valley
Chapter of the Scleroderma
Foundation. Cowan had partici-

pated in events with his brother

Bruce in North Jersey after
Bruces wife died from scleroderma in 2000.
The group used the money to
become a sponsor at the foundations Philadelphia walk. Cowan
attended the walk and has been
an active member of the foundation ever since.
The Delaware Valley Chapter
of the Scleroderma Foundation is
preparing to kick off its 2015 walk
schedule. The first walk the chapter hosts will be in Ventnor City
on May 2. There will also be
walks at Allaire State Park in
Howell on June 6, York Pa. on
Aug. 8 and Philadelphia on Oct. 4.
Cowan has known about scleroderma for many years and sup-

ported the cause. However, he didnt become an active volunteer

until the 2011 walk. The chapters
headquarters are located on
Kings Highway in Cherry Hill,
very close to Cowans home.
For many years, I knew of the
Scleroderma Foundation and
knew of the disease, he said. I
realized I could do more, right
here in my own backyard.
Scleroderma is an autoimmune disease where a persons
organs become hardened. While
the disease is known to harden a
persons skin visibly, it can also
affect a persons internal organs,
such as the heart or lungs.

Knox doesnt just talk about
eating healthy. A change in his
diet years ago helped him improve his own health.
Im a type-two diabetic, he

in order by eating healthy.
Spreading the word about
healthy eating is something Knox
is passionate about. He has done
similar assemblies in schools
across the country thanks to a
network of connections and
friends he has forged. He emphasized the importance of spreading his message to todays children.
Its getting out to the community, he said. The federal government encourages us to go in
the community and spread
healthy eating to kids.
During the assembly, Knox,
Buonadonna and Carol Shapcott
from Whole Foods spoke to the
students of the importance of eating healthy. Fish was the main
topic of discussion, with Buonadonna and Shapcott showing the
students different types of
seafood as Knox cooked salmon,
mahi mahi and other dishes.
Shapcott taught the students
the importance of checking what
type of fish they are eating and
keeping the ocean sustainable.
We care very deeply about
where our seafood comes from,
she said.
Buonadonna brought some fish
to show to the students while
Whole Foods provided the cooking ingredients for Knox.
About 100 students from grades
kindergarten to four were chosen
to go on stage throughout the
event to try some of Knoxs dishes. The students were chosen
based on their essays entitled,

At the end of the assembly, students were encouraged to ask

foreign dignitaries Knox enjoyed

But one students question really captured the heart of Knoxs

Goal to raise $50,000, Kazandjian says

is doing, Kazandjian said. The
cause is near and dear to my
heart.
Fundraising officially began
on March 31 and will culminate at
a Grand Finale Gala in Philadelphia on June 13. In between, all
the candidates are encouraged to
raise as much money as possible
for LLS.
Basically, we set a goal,
Kazandjian said. Our goal is to
reach $50,000. If we do that, we
have some say in which portfolios
the money we raise get the money
from it. Itll be a good thing for us,
well ask it to go toward research
in childhood leukemia.
Kazandjian quickly realized he
wasnt going to be able to raise
$50,000 on his own. One of the
first things he did upon his nomi-

nation was contact as many

friends, relatives and supporters
as he could.
Weve sent out emails and Ive
gotten a group for my team itself
with this campaign. Its a lot to do
to raise a lot of money, he said.
The constant stream of emails
has helped lead to a series of
events being organized. Kazandjian volunteers as a coach for Mt.
Laurel Basketball and is planning
to hold a fundraiser tournament
in June at Springville Elementary School.
A number of his friends are
also organizing events, from a
kickboxing fundraiser at AmeriKick in Medford to a fundraiser
in Maryland.
Ive reached out to everybody, Kazandjian said. Its a
large undertaking.
Kazandjian
described
the
fundraiser truly as a team effort.
His wife Janet has helped with

foundation community has been
raising awareness in the medical
community. Cowan said many
doctors struggle to recognize scleroderma immediately.
Largely, the medical community doesnt recognize it at first,
he said. The typical story from
almost every case is the family or
patient struggled for four or five
years before the disease is identified.
The Delaware Valley Chapter
of the Scleroderma Foundation
was founded in 1988 and serves
eastern Pennsylvania, southern
and central New Jersey and
Delaware. Though the organization covers a large area, its com-

munity is dedicated and tightknit.

Diane Lucente became involved with the foundation earlier this year. Her daughter Lauren
is a Cherry Hill resident who was
diagnosed with scleroderma in
January at the age of 27.
Shortly after her diagnosis, I
spent hours and days and weeks
researching, Lucente said. She
got herself hooked into a couple
of online support groups and
began seeing a lot of postings for
events.
Lucente had a friend who died
from scleroderma a number of
years ago, but never really
learned a lot about the disease
until this year. She attended a
couple of educational events with
Lauren and is now becoming actively involved with the organization.
Its sort of like a group of people united in a war, she said.
This is a war against a disease
that theres still not a whole lot
known about.
Formerly an attorney, Lucente
is now retired and is dedicating
much of her free time to the foundation.
This is where my passion now
lies, she said.
The foundation is looking to
get as many volunteers involved
as possible, even those whom the
disease has not directly impacted.
Fee Sepahi, executive director
for the Delaware Valley Chapter
of the Scleroderma Foundation,
said the organization is trying to
reach out to all areas of the community to find more volunteers.
To help reach out to the public,

the organization hosts events

across its region, including
walks, runs and other fundraising endeavors.
We added a 5K run in Hershey
last year called Race for Linda,
Sepahi said. I would love to put
on more events if we grow the
volunteer base.
Cowan said the organization is
looking to get more general public members involved on the
board.
We want people who are looking to join a board and join a nonprofit because of their experience, Cowan said. It would be
one of the things were really trying to do to make our group more
effective.
The public is encouraged to get
involved with the Scleroderma
Foundation, whether it be
through financial contributions
or volunteering.
If you have hands and motivation to help us out, we could always use you at the walks, Sepahi said. Whatever is we need, we
can certainly use (volunteer)
services.
Cowan invites members of the
public to attend one of the foundations walks, even if the disease
does not directly impact them.
When you go to the walks,
theyre fundraisers, but they are
also spirited events, he said.
You meet people and you get to
build rapport and bonds with the
families.
