Perfect wine begins with perfect grapes

Within the vineyards of Kerem Ben-Zimra lies the plateau, rising to


870 meters above sea level and extending over 20,000 square meters
of land. With an optimal “terroir”, Adir Winery’s special plateau
combines the perfect land, climate and grapes. These vineyards benefit
from the unique climatic conditions of this region, characterized by
night chills which enhance taste and quality.
Dedicated to creating the best grapes that nature can grow, the vines
are diluted to achieve less density per square meter, allowing them to
enjoy more of the nutrients the land has to offer. Average density levels
for this section reach about 600 kilograms per 1,000 square meters.
Produced solely in the years when the harvest reaches the utmost
standards of excellence, grapes intended for this exceptional series
undergo a stringent process of selection and production. Following
harvest, clusters are hand selected to ensure that only the highest
quality ones are chosen. After crushing, a 72-hour cold soaking and
fermentation, the wine is then placed in French oak barrels where it is
aged for 24 months. These wines undergo an additional eight month
aging period in bottles. The Plato series, inspired by the Latin word
for "plate", is a distinguished member of Adir Winery, offering a high
quality wine experience.
Plato 2005 received four prizes in the Terravino 2008 International
Wine Competition, including Double Gold Medal, Best Israeli
Wine, Best Israeli Small Boutique and Grand Champion in the in the
category of up to $50. Plato tastes are sophisticated and multifaceted.
It is a very robust wine, incorporating a perfect balance between a
wide range of aromas and flavors.

The Kerem Ben Zimra series is of high quality and aroma and offers a
unique combination of tastes. Grown along the slopes of the vineyard’s
special plateau and harvested during the early morning hours, these
wines are aged in French and American oak barrels for 12-14 months,
followed by an additional five months after bottling. These wines
benefit from the unique regional climatic conditions and selective
production process which has become an inherent characteristic of
Adir Winery. The outcome is apparent in every bottle.
Kerem Ben Zimra wines are easy to drink and offer a highly pleasurable
experience. These wines combine a blend of tastes to produce a light
and enjoyable flavor suitable for many occasions.
