A PERFECT MATCH!
Strong Beer & strong cheese (e.g. Blue Cheese):
Strong beers pair well with bold-flavoured cheeses, like Blue cheese and aged
Cheddars. The alcohol note in these beers will meld with the sharper notes in the
cheese, allowing some of the underlying sweet or buttery notes to shine through.
Rich Malty Ales & older/hard cheese (especially those with
pronounced nutty and/or complex flavours):
Rich malty ales are a great pairing for sweeter cheeses, like aged Gouda and
maple flavoured cheese. This decadent combination will bring out sweeter caramel
tones in both the beer and the cheese and can be a tasty after-dinner treat.
The possibilities are endless. Have some fun, experiment,
and find your own cheese and beer combinations.

Here are some tips on how to enjoy them together:


Delicate Beers & young, fresh cheese:
Delicate beers provide a great match for fresh cheeses, like Mozzarella and Ricotta.
The understated, fresh flavours of these beers will help highlight subtle aromas and
flavours in the cheese, while carbonation provides a lovely contrast in texture.
Malty Beers & nutty/aged cheese:
Malty beers fare well with younger semi-firm cheeses, like Swiss and young Gouda.
The earthy toasted notes in these beers will tie in nicely with the nutty aromas and
flavours of the cheese, resulting in a seamless mellow flavour combination.
Highly Hopped/Bitter Beer & tart/sharp cheese:
Hoppy beers are a classic pairing for sharper, tart cheeses like medium Cheddars.
Another fun pairing for Hoppy beers is herbed cheese. Because hops too are herbs,
the herbal notes in these cheeses will parallel the hop aroma and flavour in the beer.

Ingredients:

tbsp (30 mL) butter


lbs (900 g) stewing beef cubes
large leek, thinly diced
cloves garlic
cups (1 L) different coloured carrots, peeled
and cut into 1-inch (2.5 cm) pieces
2 cups (500 mL) parsnips, peeled and cut into 1-inch (2.5 cm) pieces
2 cups (500 mL) rutabaga, cut into 1-inch (2.5 cm) cubes
1 bottle (341 mL) of Ontario Craft Dark Beer

2 cups (500 mL) low-sodium beef broth
Dairy Farmers of Canada
2 cups (500 mL) water
4-5 sprigs of fresh thyme
Salt and freshly ground pepper, to taste
7 oz (210 g) Canadian Havarti cheese, finely diced
1 tbsp (22 mL) cornstarch
Preparation:
In a large saucepan over high heat, melt butter and brown beef cubes. Add
vegetables and cook 3-4 minutes, stirring constantly. Pour in beer, broth and
water. Bring to a boil. Add sprigs of thyme and season with salt and pepper.
Cover and cook on medium-low heat for 2 hours or until meat is tender.
Coat Havarti cheese with cornstarch and add to stew to make it thick
and creamy.
Remove sprigs of thyme, adjust seasoning and serve.
