Our biggest news of the summer was a
major order we made at the Paris Air Show
with Airbus for 110 new A321 aircraft, referred
to as the new engine option. The new engine
option means more fuel-efcient operation
for us and continued low fares for you. Those
aircraft will begin delivery in a few years,
but in the meantime, we continue to take
new A320s from Airbus. Weve taken three
new aircraft in the past few weeks, to bring
our fleet total to 62 aircraft, all designed to
ensure you fly in the youngest aircraft fleet
in Europe.
We recently announced that in
mid-September we will be starting direct
flights from Birmingham in the UK to
Budapest and Warsaw. Birmingham will be
our eighth UK airport. We also opened two
new bases, one in Kosice, Slovakia and one in
Tuzla in Bosnia and Herzegovina. Later this

year, we will begin flights from Cluj-Napoca,


Romania to the business centre of the Middle
East in Dubai.
In our last issue, I introduced you to our
new aircraft livery and our new logo as we
launched our rebranding campaign to better
reflect the changing environment of air travel
in Europe. As part of our brand rejuvenation,
we launched a new website for mobile
devices to complement our existing desktop
website and smartphone apps. This makes
the whole WIZZ travel experience even easier
and more user-friendly.
Im relentless when it comes to improving
our service to you, and our team has
developed the new Plus Fare as another
choice when you want more service and
greater flexibility above our Basic Fare
when flying with us. When booking the Plus

t is impossible for Olia Herculess


enthusiasm and infectious personality
not to rub off on you. With her trademark red-lipstick-and-headscarf combo,
this hip young chef s cooking style is as
effortless as her fashion sense. In a time
when the superfood is king and healthy
is the recipe buzzword, Hercules has
burst onto the foodie scene with a whole
new brand of cooking. Its not unhealthy,
but it is raw, back-to-basics, and taps
into cultures that are yet to have their
moment in the foodie spotlight.
It took Hercules just four months to
write her debut recipe book, Mamushka.
Once I start a project, I dont hang
about, she chuckles. Its a collection of
recipes that have been passed down from
her family members, both in Ukraine and

other parts of Eastern Europe. However,


writing a book was not always Herculess
plan. Unfortunately, what prompted
me to write these recipes down was the
conflict in Ukraine last year, so it started
as a personal project, really, she says.
My family was so close to the trouble,
and it was scary. I was worried that the
traditions and cultures Id grown up
with would get lost, so I wanted to really
capture and preserve the essence of
Ukraine. It is clear when you read her
book that the personal stories are just
as important as the food to Hercules.
I tried to bring a little of the human
element to the recipes, she says.
After getting the book deal, Hercules
spent a month in Ukraine with her
mother and grandmother, documenting

family recipes. They have always known


how to make these dishes but had never
written them down, she explains. I
was running around their kitchens with
scales and measuring spoons they were
saying, Thats not how we do it here, but
I insisted that it had to be perfect.
Hercules has modernised and put
her own stamp on some of the recipes,
though. I believe cooking should be
dynamic and fluid. I want people to learn
about Ukrainian food and traditions but
also make my recipes work for them
thats what the best cooking is all about.
She admits her surprise at how quickly
her food has garnered interest in the
UK: I hadnt ever thought of it as being
different, thats just what we ate and how
we did things in Ukraine.
In the book, Hercules dispels the
stereotypes of Eastern European food as
heavy, although Mamushka still features

deliciously indulgent recipes. Ukraine is


so vibrant in the summer, she enthuses.
It can get as hot as the Mediterranean.
My mother grows amazing vegetables in
the garden, and has an orchard. She also
keeps chickens and ducks.
Quality ingredients, of course, play a
big part. Ukrainian food uses very little
spice, so theres nothing to mask the
flavour. You dont need to spend a lot to
recreate those authentic flavours though.
To make a great borshch, you need good
quality beef, but you dont need kilos of
the best cut. Just a few bones will do.
The book includes everything from
fragrant broths, dumplings and fermented vegetables to seasonal salads.
Vegetables are big in Ukraine, Hercules
says, I really like the aubergine rolls
theyre just lled with Ukrainian soured
cream or yogurt, dill and peppers.
Other personal favourites are her

Moldovan flatbreads, garlicky spatchcock chicken and strawberry dumplings


with maple syrup. Theyre good with
blackberries, apricots or sour cherries,
too, she says.
So what does the future hold for Olia
Hercules and Ukrainian food? Things
are changing all the time in Ukraine
people are not as close to the land as they
were, she says.
Herculess aim is to get younger
Ukrainians excited about their food, and
to keep cooking it so those traditions stay
alive. Next on her list is to explore more
of Eastern Europe: Im interested in
discovering whats going on in places like
Azerbaijan, Armenia and Georgia, and to
try and revive those cultures, too.

Rothko comes home


The work of contemporary artist Mark Rothko is back where it
belongs in the Latvian town of Daugavpils

sprawling nineteenth-century
fortress on the outskirts of a
city in Eastern Latvia is not the most
obvious place to come in search of contemporary art. But then, the meaning of
Mark Rothkos paintings is not exactly
obvious, either.
You have probably heard of Rothko,
and know his large-scale abstract artworks, which seem to contain innite
layers of colour. He is regarded as one of
Americas greatest post-war artists. When

foreboding, but when I meet a member of
the gallery staff she says that all reactions are valid. Sometimes people ask
us to explain the paintings, she says.

his large sunset-coloured canvas Orange,


Red, Yellow sold at auction in 2012, it set
a new price record for any work of
contemporary art.
It is less likely that you have heard of
Daugavpils, or knew that Rothko was
born here in 1903, either. Dont worry.
Until recently, no one else did, not even
the experts. People knew that the artist
was born in Dvinsk, then a city in the
Russian Empire. But when Rothkos
American biographer was researching a
book in the 1990s, he wondered where
Dvinsk actually was. He found the answer
in this city, surrounded by the lakes and
forests of rural Latvia.
Now, 100 years after Rothko left for
America, I am visiting a new centre
dedicated to showing his work in his
home town. Inside the former arsenal of
the fortress, beneath vaulted ceilings,
there are interactive displays explaining the artists roots in Dvinsk. He was
born as Marcus Rothkowitz, into a
middle-class Jewish family. The Jewish
community comprised a large part of the
citys population in the early twentieth
century, reaching almost 50%. But the
persecution Jews faced may have encouraged the Rothkowitz family to emigrate
to the USA when Mark was 10.
After discovering more about the
intellectual and artistic trends that
influenced Rothko, I reach the furthest
ground floor room. This has six original
Rothko paintings, loaned from his children, illustrating his development. They
hope to add more in future. It is illuminating to see Rothkos early gurative
work. But undeniably the biggest draw
are two paintings in his famous colour
eld style. These works have a powerful effect on the viewer, and even make
some people cry. Rothko once said that
these people were having a religious
experience. I cant claim to have shed
any tears, but the paintings are curiously
hard to move away from.
The gallery aims to develop the local
artistic community through events,
workshops and symposiums, and providing space for artists from Latvia
and beyond. When I visit, there are

Meet the man who is changing the face of Polish music

t is the sort of mesmeric


sound that stops you in your
tracks and makes you ask the DJ
what he has just put on. It has elements
of disco, rock, funk and psychedelia. It is, at
once, retro and futuristic a bit like the geniuses
behind the music: The Very Polish Cut-Outs.
The label, co-founded in Pozna by DJs Zambon
and Kacper Kapsa, takes the Slavic brand of disco,
funk and rock that ruled the airwaves in Poland
in the 1970s and 1980s while the country was still

behind the Iron Curtain and edits them


into something altogether groovier.
The vinyl albums they release, wrapped
in gorgeous sleeves by the graphic
designer Bartosz Szymkiewicz, with a
distinctive rooster logo that was once
used by a 1970s childrens TV programme, Teleranek, have become collectors items. They provide a fascinating
glimpse into Polands musical past. But
for one of the driving forces behind The
Very Polish Cut-Outs, the future of music
in the country is just as important.
DJ Zambon has now launched his
own label, Transatlantyk, to scout and

showcase talent from across Eastern


Europe. Through the label, I want to
promote Polish underground music producers on the electronic music scene and
to release good music, the DJ explains.
Polish music has its own unique Slavic
flavour, to my ears, especially when we

Zambon has managed to keep his
nger on the pulse of Polish music by
running nights at Wosk, a hugely
successful club in Pozna that caters
to art students and music geeks seeking
out fresh sounds.
The club is cosy, has a good sound
system and atmosphere and one of
the most amazing DJ booths in the
world, DJ Zambon says. I also like their
booking policy, and the ideology only
vinyl is allowed.

the Swedish city is the birthplace of

Vikander is blazing a trail like no other
young actress working today.

expected anything like this, says
Vikander, 26. Ive been doing more trav-

Vikander explains. It was so cool to be

The success the actress is now enjoying comes after years of hard work that
go all the way back to her childhood in

production about Swedish emigration.
She later joined the Royal Swedish Ballet
School and started living on her own in

I starting working as an actress, and now
its all coming together.
Vikanders surge to stardom reaches a
high point in August with the release of
The Man from U.N.C.L.E., the big screen
reboot of the iconic TV series, directed
by Guy Ritchie, in which she plays the

that she is dating the lm star Michael
Fassbender means the paparazzi are never
far away when she leaves her home. It
all adds up to a hectic life that, for now,
the girl from Gothenburg is enjoying to
its fullest.
Whats happening does feel like it has
a momentum of its own, she says, laughing. Its a lot of fun, though, and I dont
want it to stop, at least not now!

he appeal of flying in a Zeppelin is


easy to understand. Imagine flopping
into a seat offering 360-degree views
before the airship slowly lifts and heads
for the clouds, eventually drifting along
over some stunning landscapes. It is an
experience that is so thrilling, it frequently leads to big romantic gestures.
Weve had quite a few people proposing midway through flights, laughs
Oliver Jaeger, a Zeppelin pilot for
Deutsche Zeppelin-Reederei (DZR),
which runs sightseeing tours from
its base in Friedrichshafen, southern

Germany. And weve also had people


getting married on the ground and then
afterwards going for a spin with their
guests. People see being on a Zeppelin as
a really exciting, romantic thing. They
get on board with big smiles and get off
with even bigger smiles.
In addition to scenic flights, during
which 12 passengers at a time enjoy
jaw-dropping views, DZR also offers
flying lessons and hangar tours as
people clamber to reintroduce themselves to a type of aircraft that rst took
to the skies as far back 1910. It is a rich
history that, for many passengers, adds
to the enjoyment.
We still have passengers who saw
some of the old Zeppelins (named after
airship pioneer Ferdinand von Zeppelin)
so there is a lot of interest to fly in the
new one, Jaeger says. They tend to be
very well-informed before they even get
in. They want to know about the material
of the aircraft and are interested in the
instruments. Passengers like to know
about the evolution of the Zeppelin,
which has been remarkable.
Modern-day Zeppelins are
certainly a very different beast to their
forefathers. Zeppelin NT (it stands
for New Technology) airships, rst
launched in 1997, have a rigid triangular
form made from aluminium and carbon
bre, giving strength and stability.

helium (as opposed to the hydrogen
used in old airships) that is enclosed in
a highly tear-resistant material. The airships also handle like a dream, thanks to
an innovative propulsion system using
swivelling propellers.
Flying a Zeppelin is somewhere
between a helicopter, a plane and
a balloon, says Jaeger, who moved
from flying choppers to airships. It
has incredible manoeuvrability and
is extremely safe. Its a magnicent
machine. According to the handbook we
can actually fly as high as 10,000 feet,
but because of the weight of the
passengers and the helium needed we
cant do that with customers on board.
The Zeppelins unique attributes
mean it can be used for more than

tourism, with scientists recently using


the ample interior of one ship to set
up equipment and test air quality while
flying around. While Jaeger foresees
more experiments being carried out,
DZR has its hands full for now, with
tourists desperate to get a different point
of view of southern Germany at a leisurely pace helicopters cannot match.
We cruise at around 60kph through
the air, so there are a lot of opportunities
to see everything below, he says. If
you are from this area, you can spot
your house from the Zeppelin and
still have more than enough time to
see everything else.

t is, quite literally, like something out


of a horror lm. In the heart of Riga,
a small group of friends is desperately
trying to get out of a cold, dark room as
creepy music plays in the background.
Making things much harder, each person
is chained to a pipe against the wall, and
has a hood over their head. Bizarrely,
they have not only all willingly put themselves in this horrible position, but they
are paying good money to be here. This,
for those brave enough, is Saw, one of the
many next-generation escape rooms
captivating the world.
Real-life room escape adventures,
where participants have an hour to
get out of a locked chamber by solving
puzzles, are, of course, nothing new.
Escape rooms, which have roots in
point-and-click video games of the

ROOMS OF MYSTERY
The latest adventure at Escape Room in Riga (escaperoom.lv) is based
on the horror lm Saw (above) while you can also try getting out of a
long-abandoned apartment with seven locks to negotiate (below)

Latvians are
naturally good at
drawing up and
solving puzzles
1980s such as Crimson Room, started
opening in Japan and Eastern Europe
almost a decade ago, and became
especially popular in Budapest. What has
changed over the years is the effort and
money being put into these chambers
of mystery, to the point where they now
offer sophisticated, hugely immersive
experiences. A case in point is Saw, based
on the 2004 horror movie in which two
men are held captive by a serial killer
called Jigsaw in a dilapidated bathroom.
We have tried as much as possible
to repeat the design of the bathroom in
the movie, to create a real atmosphere,
says Damir Hisamejev, co-founder of
Escape Room in Riga, where the game,
which has a 18+ age restriction, is staged.

in the room. Players will have to work in


a team, because its the only way they can
help free each other. Our task, as much
as possible, is to immerse people in the
game, so there are puzzles designed to
evoke emotions like fear and horror.
In addition to the recently unveiled
Saw, Escape Room has a number of
other games, including a bunker, an
abandoned apartment, a secret prison
and an underground casino. Every month,
1,500 people from around the globe line
up to test their mental prowess. It is no
coincidence that Riga has some of the
worlds best escape rooms, with Latvians
proving themselves to be naturally good
at drawing up and solving puzzles.
City Chase and others code breaking/
geolocation games played at night were
very popular in Latvia even before the
arrival of escape games, Hisamejev says.
So, simple puzzles and riddles hold no
real surprise for locals, and they tend to

For those who design escape rooms,
the only limit is their imaginations. In
Budapest, you can hunt for the biggest
diamond in the world or lose yourself in a
cluttered apartment of an adventurer. In
Prague, you can try out a time machine,
or be a secret agent, while in Las Vegas
you are locked in an abandoned mansion
with a ghost. At Escape Room in London,
by London Bridge, I am transported back
to ancient Egypt, thanks to a game called
Pharaohs Chamber. A basement room
has been transformed into a tomb, with
striking Anubis statues keeping an eye on
proceedings. The puzzles are endishly
clever and require proper lateral thinking.

not too fussed about winning when you
start the game, the thought of letting your
friends and fellow gamers down soon gets
you into the spirit. Just what it means to
actually escape the curse of the Pharaoh
is underlined in the entrance hall, where
dozens of images of beaming successful
escapees are plastered on the wall.
Escape Room co-manager Boris
Kozma points out: Unlike similar
attractions like, for instance, horror
houses, players here actually interact
with each other, encouraging teamwork,
and their success is entirely up to them.

mysterious murder, or stop an evil
plot to destroy the world? The bottom
line is that its a highly interactive team
experience, and that is the main reason
for their wide success.

and run the escape adventures cannot
afford to come up with something that
is merely average.
With each new quest, we have to
raise the level of the game, Hisamejev
says. You need a superior interior, video
and audio effects and more complex
mechanical and electronic puzzles.
Kozma agrees: It is becoming a highly
competitive market, and we have to do
our best to provide the most immersive,
fun and challenging experience for our
players be that through improving our
current rooms or building a new one.
With so many competitors, the standards
rise, and we must keep up.

the hunt for a paranormal-loving
professor who has mysteriously
disappeared, or try to nd the Holy
Grail, says: Several times we did not
manage to meet the deadline because we
endeavoured to perfect the rooms.
We respect emotions in fact, we sell
emotions, therefore we devote much
time to working on the atmosphere. In
several quests, we offer the players the
chance to put on special garments. It
allows the players to be absorbed in the
game. Our task is to make the players feel
that they appear in another reality, and
they are the heroes.
With this game of one-upmanship
between escape room designers gathering
pace, it begs the question what will the

big. I think the future is more virtual
reality integration, Kozma says. With
VR technology being heavily researched
and commercialised, it will become
widely available in the next ve years. Just
imagine having to put on a VR set that
completely changes the room and,
for instance, lets players experience the
past events in order to nd the clue to
solving their next puzzle. The possibilities
are endless!

The horses race past in a blaze of
red, white and green, kicking up clouds
of dust in their wake. The crowds clap
and cheer, the announcer barks out the
result, then the details of the upcoming
race, and the drama starts all over again.
But this is not a horseracing track
or a show-jumping course. This is
Heroes Square, historic showcase of
the Hungarian capital, where the luxury
boulevard of Andrssy t spreads into
a grand plaza bookended by some
landmark art galleries.

(vagta.hu), loosely translated as The
National Gallop, three days of Magyar
horsemanship from 18-20 September
raced across 6,000 square metres of
equine-friendly sand in a space normally
patronised by photo-snapping tourists
and skateboarders. Just imagine Ben
Hur staged on Londons Trafalgar
Square with overtones of medieval
jousting and a touch of Grand Prix
about it, and youll be close.

The man behind this equine revival
was not a hussar or a captain of cavalry
but Pter Geszti, a former rap star
and an original jury member of the
Hungarian version of The X Factor,
the TV talent show.
Back in 2008, Geszti was trying to
come up with some kind of popular
celebration that would bring Budapest
and the rest of the country together,
says the current competition director
of the Nemzeti Vgta, Kristf Nagy
Szotyori, who helped develop the
concept with him.
We were trying to nd a common
point, and came to the conclusion that
horses are integral to the culture both in
the capital and in the rural provinces.
We also had the Palio di Siena in mind

when we were trying to visualise


the whole thing.
Right away, Heroes Square, created
for the Hungarian Millennial celebrations
of 1896 and lined across one side with
a colonnade of iconic national gures,
became the obvious choice of venue.
It was the perfect size and length,
Szotyori says, to provide a level playing
eld for the teams competing from
all over Hungary and offer visitors a
great spectacle in safely controlled
surroundings.
To design the technical aspects of
the course and the event itself, Geszti
and Szotyori brought in the renowned
Lzr brothers, Vilmos, four times
individual world coach driver champion,
now president of the Nemzeti Vgta
organisation, and Zoltn, ve times
two-in-hand and twice four-in-hand
world champion.
The Nemzeti Vgta, unveiled in 2008
with the medieval King Mtys as the
theme, evolved year by year. With
English thoroughbreds, brought to
Hungary nearly 200 years ago by the
Anglophile Count Istvn Szchenyi,
dominating the event, it was decided in
2011 to allow non-thoroughbreds only.
To create a full, three-day programme
over the course of a weekend, races
for different ages and categories, in
various equine disciplines, and displays
were scheduled around the blue ribbon
event of the Nemzeti Vgta itself.
Disciplines like carriage driving,
horseback archery and jousting are
all part of more than 1,000 years
of Hungarian horsemanship and
the hussar tradition.

Tibor Szkely, Lieutenant-Colonel of


the Traditional Hussar regiment and
chief captain of the Nemzeti Vgta, says:
About 30 years ago, a number of local
historic societies began to spring up.
They re-enacted signicant periods in
the history of Hungarian cavalry, the age
of Mtys, the Turkish occupation, the
1848-49 War of Independence, and so on.
This form of light cavalry is a particular
Hungarian pursuit.
These traditions became intertwined
with the Nemzeti Vgta. We managed to
create a great event that is also a worthy
memorial to, and celebration of, our
equestrian culture and our military past.
The link the event has with tradition
does not only appeal to Hungarians
with more foreign visitors enjoying the
Nemzeti Vgta in recent years.
Three years ago we introduced the
International Race, Szotyori says. This
September we are expecting riders from
12 countries. Much of the information for
visitors is given in English. There are also
huge screens that broadcast the action,
easily visible from the two grandstands
set up on Heroes Square.
As well as the equestrianism, there
are blacksmiths, artisanal displays and
stalls serving grilled meats, local wines
and brandies along the adjoining 56-osok
tere, the square celebrating the uprising
of 1956, and Andrssy t.
The National Gallop is a huge
opportunity to present the best of
Hungary, just the same as the Palio does
in Italy, Szotyori says. For a small rural
village, its the perfect chance to put itself
on the map.
Ultimately, it is the pageantry and the
expert equitation that the crowds come
for. Riders from some 300 communities
across Hungary and its neighbours take
part, with all eyes focused on the curtainclosing main race on the Sunday.
Quite often the winners have been
women. In 2014, Gyngyi Molnr,
representing Tahittfalu, north of
Budapest, won the Nemzeti Vgta for the
second time. Last year the competition
was particularly high, she says, taking a
break from her daily training schedule.

During the race, it was neck and neck. As


a rider, you feel everything much closer.
But my horse was in great shape for a
maximum performance.
On her own horse, Ice Man, Molnr
romped in rst in a time of 75.39 seconds
to take the 5 million forint (15,800)
prize. Its hard to put into words,
Molnr says. When I won the rst time in
2011, they asked me the same question,
what its like to win, and I just said,
Indescribable! Its a fantastic feeling, the
reward for a whole year of hard work.
And 2015? I dont know yet. This will
be my sixth Gallop and were constantly
working for the race. We always try to
prepare for the maximum and if luck is with
us, then we can achieve success again. All I
can say is that Im going for it.

two writers to wear their heart on their sleeve and battle it out over which Scottish
city is really the best

dinburgh looks like something out


of a fairytale. It even has a castle.
But if you want somewhere with more
grit and gumption, a city where vivid
stories outdo tasteful views, go west. At
almost 600,000 people, Glasgow is easily
Scotlands biggest city, and that sense of
teeming, invigorating life is everywhere.
Ask for directions in George Square and
you will probably end up getting more
than you bargained for: Glaswegians,
or simply Weegies, are legendarily
loquacious, proud of their home town
and eager to share insider knowledge.
Over in the east, Edinburghers are
notoriously stand-ofsh, characterised
by the notorious greeting: Youll have
had your tea. (Translation: dont expect
any extra hospitality.)
Glasgows transformation from
industrial powerhouse, covered in smoke
and soot, to condent cultural centre
has been a long and sometimes painful
one. But rather than attempt to ignore

its grimy past, Glasgow celebrates it. The


Peoples Palace on Glasgow Green traces
the history of the city with characteristic
humour it provides a permanent home
for Billy Connollys famous Banana Boots
but doesnt sugar-coat the poverty and
privations that contributed to Glasgows
longstanding reputation as No Mean
City. Even the shiny Riverside Museum, a
gigantic, gleaming Zaha Hadid-designed
zig-zag that opened on the banks of the
Clyde in 2011, is crammed with relics
of Glasgows rough, tough shipbuilding

past. Another spectacular reminder,


the Glenlee, a three-masted Tall Ship
built in 1896, is permanently moored
outside. Entry to these museums, and the
magnicent Kelvingrove Museum and Art
Gallery, one of the busiest and best
in Europe, is free.
The city is still in the afterglow of
staging the Commonwealth Games in
2014, an international spotlight that
jump-started a number of improvements.
The parks have never looked grander,
the river never more spick and span. The

constantly evolving bar and restaurant


culture to match.
Edinburgh is rightfully proud of its
literary history, having named its train
station after Sir Walter Scotts rst and
certainly not dullest novel, Waverley. But
Glasgow is a UNESCO city of music, an
artform just as transportive as literature,
but generally a much more social
experience. Perhaps that is why Glasgow,
unlike Scotlands capital, can sustain a
thriving music scene, from year-round
rock and pop gigs to the vibrant winter
folk festival Celtic Connections. The
Hydro, a gigantic flying saucer on the
banks of the Clyde that can house 14,000
fans, is the worlds second busiest music
venue. Visitors also flock to King Tuts
Wah-Wah Hut on St Vincent Street, a
tiny 300-capacity sweatbox where Oasis
signed their historic record deal.
Futurologists predict that one day
Scotlands two urban centres will come
together across the 50 miles that separate
them to become one enormous Central
Belt population bloc: an Edingow,
or Glasburgh. Perhaps that concrete

marriage will defuse their age-old


rivalry, although it is hard to imagine a
time where there will not be vehement
disagreement about what should be
added to the traditional sh supper. In
Glasgow, it is always salt and vinegar
on your chips the traditional, correct
choice. Edinburghers insist on salt and
sauce, a pungent distillation of brown
sauce and malt vinegar that looks, smells
and tastes like it could restore terribly
tarnished silverware to its original bright
condition. For not ruining sh and chips,
and in countless other ways, the iconic
1980s marketing campaign featuring
a beatic Mr Happy still rings true:
Glasgows Miles Better.

city is also now more bicycle-friendly


than ever, with simple, automated bike
hire available at more than 30 unmanned
stations. Edinburgh recently spent almost
1bn on a white elephant overground
tram network; Glasgow has stuck by the
third-oldest underground system in the
world, a simple, one-circle operation
currently halfway through a staggered,
non-disruptive upgrade that looks
likely to come in comfortably under
budget. That canny scal responsibility
is admittedly counterbalanced by some
conspicuous consumption. Weegies love
to look their best, and have embraced
bling to the extent that Buchanan
Street has become one of the worlds
top shopping destinations, with a hip,

any cities have castles. Some


cities have volcanoes. Glasgow has
neither. But Edinburgh has both, one on
top of the other the citys famous castle
is raised up over the skyline on a frozen
wave of cooled Carboniferous-era lava.
To look southward from Castle Rock
across the Salisbury Crags and Arthurs

Seat is to survey a prehistoric vista, and


to picture the dinosaurs, cavemen, and
tribal bronze age warriors who roamed
this landscape long before the coming
of PizzaExpress.
This is obviously awesome, giving
the Scottish capital such a dramatic,
geological presence that its bigger
neighbour looks a bit frivolous by
comparison, like a toytown or a
model village. Glasgow was an ancient
settlement too, but the current city has
very little to show for this. Even
its medieval buildings are now mostly
gone, and its oldest surviving quarters
are Victorian.
Though Glaswegians like to claim
that their urban grid system provided
the template for New York City, this is
an outrageous lie, or at least a common
misconception. Modern Manhattan was
in fact designed on lines laid down by
the architect James Craig and his grand

experimental plan for Edinburghs New


Town in 1767. Those picturesque streets
have hardly changed in the intervening
250 years, while the Gothic Old Town
opposite is more or less the same as it was
in the Middle Ages, though with more
souvenir shops, and less bubonic plague.
Even visitors who neither know nor care
about history nd themselves bewitched
by Edinburghs steeples and cloisters,
narrow cobbled lanes and underground
vaults, all preserved and protected by the
citys world heritage status.
It really is as pretty as a snow globe,
and even the uglier chapters of its past
have been turned into selling points, from
the ghost tours to the Edinburgh Dungeon
to haunted old pubs like the White Hart
Inn and the Last Drop Tavern the latter
so named because of its proximity to
a former site for public hangings. And
while the average pub in Glasgow will turf
you out before midnight, Edinburghs

more flexible licensing laws make it


easier to stay up until the wee small
hours. At Whistle Binkies, a live music
bar inside a cluster of subterranean
caverns, you will probably have the night
of your life chatting to a grimy old poet
with lyrical face-tattoos until three in the
morning, as this writer once did.
That is the other thing: Edinburgh
is arty. Glaswegians consider this
pretentious, which is what the less bright
always call the more intelligent. This is
a UNESCO City of Literature (visit the
former house of RL Stevenson or the
Walter Scott Monument), and home of
the Edinburgh Festival, which is actually
a cluster of separate arts festivals run

together through the month of August


actors, writers, dancers, musicians,
comedians, and street performers flood
in from around the world, while Glasgow
can only glower with envy and pretend
not to be bothered. There is something
else to consider. Edinburgh can get
pretty cold in winter, as Scandinavian
wind slices in like an icy axe from the
North Sea. Yet it receives only half the
average rainfall of Glasgow, the wetness
and gloominess of which can best be
described with wonderful local words like
dreich and drookit.
The skies over Edinburgh are invariably
blue and bonny, perfect for a walk around
Holyrood Park, which is a broad expanse
of wild countryside right in the middle of
the city. On such a stroll you will pass the
back of the Scottish Parliament, a bold
modern building at the bottom end of
the ancient Royal Mile. Walk on around
Duddingston Loch, and begin your ascent
of Arthurs Seat. From the summit of that
extinct volcano you can take in the whole
city, with the Firth of Forth beyond.
Breathe in the fresh air. Feel the power
and the glory before heading to the New

Town for some quality shopping.


You will realise that this is the capital
of Scotland for a reason. Even if you
are just visiting, you may nd yourself
adopting a slight sense of superiority
the spirit of the true Edinburger as
you look westward toward that other
place, which is rightly known as
Scotlands second city.

introduced the pop-up food fad, the
Canary Island of Tenerife had dozens of
blink-and-youll-miss-them diners and
cafs born out of garages and backyard
farmsteads. These are the guachinches
(wah-chin-chees). Opening seasonally
and serving traditional local food and
wine, these no-frills, 17th century makeshifts are synonymous with a foodie
heritage that is currently enjoying a gastronomic renaissance. We head to the hill
towns of north Tenerife to uncover the
guachinches and their culinary roots.

courtyard, are a cut above most of its
peers. The more-guidelines-than-gospel
menu is chalked on a board at the door
and has few choices for veggies. We
specialise in meats, says Francisco Javier
Rodrgo Gonzalez, reeling off a list of traditional Tinerfeo dishes. My carne esta
is the best Ive ever tasted: thick chunks
of succulent, lean pork with a mild curry
flavour, topped with tasty home-made
fries. Along with a fresh salad, bread and
half a litre of home-produced wine, the
bill comes to just 9 (6.50).

EL RATIO
Further along the road, a cardboard sign points the
way to Guachinche El Ratio, where a dozen tables
are housed inside a large garage, its walls adorned
with traditional agricultural implements. From a
tiny kitchen alongside the bar, Adelima Dniz de
la Cruz serves a menu of traditional meat and sh
dishes. While I wait for my bacalao encebollado (cod
in onions) and goats cheese, owner Josefa de la Cruz
Farrais shows me his back-room bodega, where shiny
vats await this autumns harvest. El Ratios wine lures
a regular clientle of locals to while away their afternoons. Having wined and dined to satiation for a bill

Coupled with the islands legendary
year-round spring climate, Tenerifes
mineral-rich volcanic soil is the perfect
growing medium. Next door to her local
guachinche and far away from the glamour of her alter ego as one of Tenerifes
most successful pop artists, Marta Sols
tends her allotment, where she grows all
her own organic vegetables.
Not using any kind of fertilisers or
pesticides means the vegetables are
much smaller than commercially grown
equivalents, Sols says. But they are full
of flavour and nutrients.
On an island where small is the new
big, organic miniature vegetables are now
nding themselves wearing a designer
label and gracing dishes in the most
exclusive establishments.

The oldest food produce in the
archipelago, goo was the staple food
of the Canary Islands rst inhabitants
more than ve centuries ago and is still
used to thicken and flavour soups and
stews. A ne flour ground from roasted
grains, long before the words power
and food were muttered in the same
marketing sentence, goo was building
muscle and keeping hunger at bay. Molino
La Maquina (+34 922 33 07 03; Calle
Colegio, La Orotava) has been providing
the people of La Orotava with their goo
for more than 300 years, and is as busy as
it has ever been. Lolo Hernndez Cabrera
runs the operation single-handedly, and
if his energy levels are anything to go
by, the worlds athletes may be missing
a trick here. Goo regularly pops up on
gourmet menus, and shows no sign of
falling from fashion any time soon.

The wine, an essential ingredient of the guachinche experience, has
to come from the owners own harvest: its one of the conditions that
must be adhered to in order for the establishment to operate as a
guachinche. Tenerifes wines, once the darling of the wine-tippling bon
vivants of Europe and considered the best in the world, were nudged
from favour by Madeira back in the late 17th century. Today they are
once again popping up on medal-winners tables across the continents.

from all ve Denominations of Origin on the island.

Seventy years old this year, Nicolaus Copernicus University in Toru


(Uniwersytet Mikoaja Kopernika w Toruniu) continues to rank among

Sarah May Grunwald, professor of wine and owner of Taste
Georgia, explores the 2015 Tbilisi New Wine Festival
Wine and viticulture are the link Georgians
have to the past and to each other. Wine alone
has survived substantial fundamental changes,
both religious and cultural. It has seen empires
rise and fall, and yet it remains constant. Wine
is a celebration. It is honoured humbly in all
homes, but also increasingly at public events
such as the Tbilisi New Wine Festival.
I attended the fifth edition of the festival, in
May 2015. The annual event brings more than
60 different producers together, and provides
a great opportunity for Georgians to celebrate
their 8,000-year history, while also offering a
chance for aficionados to taste a huge variety
of wines and curious travellers to experience
that famous Georgian hospitality.
Three newcomers to the festival are the
pride of Georgian wine at the moment: Tea
Melanashvili, Marina Kurtanidze and Mariam
Iosebidze. These women are making their own
wine, a job that has traditionally been reserved
for men. I had the opportunity to talk with
them about their aspirations.
Tea and Marina established Mandili winery
in 2012 after finding inspiration in other
international female wine-makers. They
explained that they wanted to make a wine that
was both Georgian and conveyed the essence
of being made by women. They had the help
of friends and encouragement from fellow

producers in fact, they did not experience


any kind of negativity from the tight-knit wine
community. The wine not only represents a
huge shift for women, but it is also delicious.
In the nearby Ateni Valley, 25-year-old
Mariam made her first vintage in 2014 using
organic Takveri grapes

The addition of the revolutionary A321 to the WIZZ
eet from November is a big deal in more ways than one
It is big, beautiful and offers Wizz Air

Whichever way you look at it, the addition
of an Airbus A321, the largest member of the
benchmark A320 series, to the WIZZ family
of planes is cause for huge celebration.
The arrival of 26 new A321s from November
means Wizz Air will be the rst airline/operator

carrying 230 passengers in low-cost European


flights. No single-aisle aircraft is better
prepared to help keeping airfares low. The
statistics surrounding the A321 are impressive.
It has a stretched fuselage with a length of
44.51 metres and an extended operating range
of up to 2,400 nautical miles. Environmentally
conscious passengers will enjoy the fact

that this aircraft type offers the lowest


fuel burn, emissions and noise footprint
in its class.
One of the WIZZ A321s standout
features is the Smart-Lav, a fully
equipped on-board toilet. It offers
state-of-the-art design with continuous
surfaces, reduced split lines and indirect
wash table illumination that make the
lavatory more appealing and hygienic.
Bulky equipment has been integrated
below the wash table level and behind
sidewalls to keep the upper area visually
free from obstacles. This innovative
lavatory design and its optimised
footprint will allow a much better use
of the cabin length, increasing the
total seat count and reducing the unit
operating cost while keeping the same
level of comfort offered to Wizz Air
passengers today.
The A321 is a member of the
extremely popular A320 family, which
has collected a number of extraordinary
statistics. The A320 flies everywhere
in the world, on all continents. Since
entering service in 1988, the A320 has
carried more than 10 billion passengers.
Every seven hours, an A320 family
aircraft leaves one of the three A320
family nal assembly lines in Toulouse,
Hamburg or Tianjin.
An A320 takes off or lands every
two seconds. This means that every
time you take a breath, an A320 family
aircraft takes off or lands. A320 family
engines produce so much thrust they
could keep six elephants stationary
against the force of gravity. The
cruise altitude reached by an A320 is
equivalent to 15 Burj Khalifa towers. At
the end of its lifecycle, 85% of an A320
can be recycled in terms of weight. That
will go up to 95% in the next few years.

in commercial aircraft. As of 30 June
2015, Airbus has delivered a total of
6,623 A320 family aircraft, of which
6,357 are in service.
WIZZ has announced that, after
a competitive selection process,
it has signed a memorandum of
understanding with Airbus relating to
the purchase of 110 Airbus A321neo
aircraft with deliveries to start in 2019.

DEBRECEN BASE

FOR DUBAI
WIZZ has announched it will be
running a new route to Dubai from
its Cluj-Napoca base. Starting from
19 December, WIZZ will operate two
flights per week, on Tuesday and
Saturday, from Cluj-Napoca to Dubai
World Central Airport.
WIZZ was the rst airline operating
flights to Dubai World Central in 2013.
The airport is designed to become
the main aviation centre in the region
and is expected to become one of the

worlds busiest airports in the next


decade. With this new service, WIZZ
is now offering a combined total of 93
routes to 42 destinations in 15 countries
from eight Romanian airports, with two
routes now connecting Romania to the
United Arab Emirates.
Wizz Air spokesman Daniel de
Carvalho said: The new route
consolidates our offering of popular
holiday destinations for Transylvanian
consumers.

Wizz Air will be running new direct
services from Birmingham to Warsaw
and Budapest from mid-September,
each operating with two flights per
week. The services to Birmingham,

and Saturdays.
