TheStrategiesforSuccessTitleIIIinitiativeisamajor,fiveyearproject(20092013)fundedby
atwomilliondollargrantfromtheU.S.DepartmentofEducation.Thisinitiativeisintendedto
transformMiddlesexCommunityCollegebyimprovingtheacademicachievement,persistence,
retention,andengagementofitsstudents.

The project focuses on reformed curricula and comprehensive advising. Reformed Curriculum
involvesthedesignofdevelopmentalandcollegeGatewaycoursesandlearningcommunities
embedded with Core Student Success Skills related to critical thinking, communication,
collaboration,organization,andselfassessment.Overall,45courseswillbeimpactedoverthe
five years of the project. Comprehensive Advising involves the design of integrated advising
servicestoincludeidentificationofacademicandcareergoals,creationofrealisticeducational
plans,andcontinuoustrackingandinterventionwithanemphasisontheCoreStudentSuccess
Skills.ComprehensiveAdvisingServiceswillbespecificallytailoredtoeachprogramofstudy.
Crossdivision curriculum and advising design teams composed of faculty and staff are
designing,piloting,andassessingthecurriculumandadvisinginitiatives.

The Title III grant provides resources to support faculty professional development related to
designing and piloting new curriculum and advising students. The grant also supports the
purchaseofadvisingsoftwareprogramsandthehiringofaPedagogicalInstructionalDesigner,
Learning Engagement Specialist, Advising Coordinator, and two academic advisors. The
resources provided by the grant offer an exciting opportunity for the college community to
worktogethertodevelopthestrongprogramsandservicesthatwillincreasestudentsuccess.

Introduction

BUS153,IntroductiontoHospitalityIndustry,wasdevelopedtoprovidehospitality,traveland
culinaryartsstudentswithabroadoverviewofthehospitalityindustry,andthecareers
availablewithinthatindustry.Thiscourseaddressesmanagementpracticesinthegaming/
casinoindustry,thecruiselineindustry,entrepreneurshipinthehospitalityindustry,aswellas
clubandrestaurantmanagement.Italsoexploresethics,marketingandindustrybest
practices.Ideally,thiscourseshouldincludesitevisitsandguestspeakers.

ThegoalsoftheTitleIIIgrant,StrategiesforSuccessaretoincreaseachievement,persistence,
retentionandengagementofstudents.Thekeyskillsofcommunication,criticalthinking,
collaboration,selfreflectionandorganizationhavebeeninfusedinthecoursewiththeintent
ofreachingthesegoals.Theconceptistoleadstudentstoapplytheseskillsasamethodfor
learningcoursecontent.Theexpectationisthatbypracticingtheseskillsinthiscourse,theywill
developintomoresuccessfulcollegestudentsoverall,andasaresult,persistintheircollege
studies.

Inordertosucceedinthecourse,studentsareexpectedtoreadthetext.PowerPointnotes
areprovidedforeachchaptertobeusedasaguideforreading,aswellastopromote
organization.Classactivitiesaredesignedtoenhancestudentknowledgeoneachtopic,aswell
aspromotecriticalthinking,communicationandcollaborationamongstudents.Studentswill
begivenjournalassignmentsforeachtopicasameansofselfreflection.Thecourseincludes
severalwritingassignments,quizzesandexamsaswellasafinalsemesterproject.

Activity#1:
BadServiceStudentswillbeaskedtothinkaboutanexperienceinhospitalitywheretheyreceived
badservice.Studentswillthengoaroundtheroomanddescribetheirexperience.Studentswillbe
askedtocommentoneachothersexperiencesandofferrecommendationsastohowthissituation
couldhavebeenimproved.Thisisagreaticebreakeractivitytohelpgetstudentscomfortablewith
eachotherandwithspeakingtotheclass.Studentsaregenerallyexcitedtosharetheirbadservice
experiences.Studentsshouldformchairsintoacircleforeasierdiscussion.Instructorsroleisto
facilitatethediscussion,keepeveryoneontopicandsteerconversationtowardsteachablepoints.
Instructorshouldworkwiththestudentstohelpdeterminethecauseofthebadservicethatthey
received,andhowthatsituationcouldhavebeenavoidedorrectified.Industrybestpracticeswillbe
introducedduringthisactivityasstudentsstarttomakeconnectionsbetweenthebadservicethatthey
received,andhowserviceimpactsthesuccessofahospitalityoperation.

Activity#2:
BestPracticesintheServiceIndustry.Thepurposeofthisactivityistointroducebestpracticesinthe
hospitalityindustryasmodeledbyDisney.DisneyServiceModel:Studentswillformgroupsof34
anddiscussquestionsregardingDisneyvideoandarticle.Groupswillthendiscusstheiranswerswith
theclassasawhole.

Studentswillhaveajournalassignmentreflectingonasituationinwhichtheyreceivedgoodservice.

Watch15minutesegmentfromKitchenNightmares,featuringalocalrestaurant,followedbyaclass
discussion.KitchenNightmaresvideowillprovideanopportunitytodiscussthemistakesmany
restaurantsmake,aswellashowthoseproblemscanbeavoided.AreviewfromChapter4regarding
ChainversusIndependentrestaurantsshouldbeincludedinthisdiscussion.TheKitchenNightmares
videowillprovideanexampleofanIndependentrestaurant.

Students will have a journal assignment reflecting on restaurant success. They will be tasked
with assembling a plan for achieving success if they were to open a restaurant.

Instructions:
Activity #1:
The purpose of this activity is to identify the many differences between chain and independent
restaurants.
Chains vs. Independents:
1. Divide class into two groups. One group will represent Chain restaurants. The other
group will represent Independent restaurants.
2. Each group will prepare a list of pros and cons of that type of restaurant from both the
management and the employee perspective.
3. Information will be written on board and discussed in class.
Activity #2:
Watch Starbuck video on green practices, followed by a class discussion. Topics to be
discussed: What is sustainability? Why is it relevant in the restaurant industry? What green
practices can / should a restaurant employ? Why should a restaurant do this?
Assessment:
Journal Assignment: Students will complete a journal assignment reflecting on sustainability in
the restaurant industry. They will be asked to provide examples of restaurants that are using
green practices, as well as explain why restaurants engage in such practices.

Dividetheclassintosixgroupsof24.Assigneachgrouponeofthefollowingjobsfromacruiseline.
Eachgroupmustusethetexttoresearcheverythingabouttheirassignedposition.Thegroupswillbe
thenmixedupsothateachnewgrouphasonememberrepresentingeachofthejobsresearched.Each
groupmembermustthenteachtheirgroupaboutthepositionthattheywereoriginallyassigned.
Eachgroupisthengivenabriefquizonthevariousjobsonthecruiseship,tobetakenindividually.The
groupwhoscoresthehighestgrouptotalonthequizwillreceivefivebonuspointsfortheclass.

Class will sit in a circle. Each class member will be assigned a section of the article to read and
explain to the class. Students will go around room and explain their section of the article and
identify the critical learning points from that segment.
