I absolutely love them and think you
should add more projects like this in
future issues! A few years back I found
a few Your Family magazines from the
late 1970s that my mother-in-law had
saved. What drew my attention was
the patterns for dresses, etc inside.
That was around the time I first started
experimenting with sewing. Ive bought
Your Family ever since. Its a pity
I didnt keep one of the old magazines
to show you. We moved overseas for
a few years and I had to let go, but we
recently moved back to SA and when

Michelle Langford, 34, teaches baby stimulation classes and is also


a baker. She lives in the northern suburbs of Joburg with her husband
Sean, 39, and daughter Zo Ann, 3.
THE ONE THING MOTHERHOOD HAS TAUGHT ME is unconditional
love, because nothing is too much to do for our little person. Its so
important to have the support of family, and were having such fun
continuing traditions and doing things with Zo that my mom did with me.
MY FAVOURITE MEAL TO COOK FOR MY FAMILY is lasagne, salad
and garlic bread.
WEEKENDS ARE SPENT entertaining with family and friends, letting Zo
enjoy quality time with her friends and cousins. Some weekends are spent
away from home in the Kruger Park. Having fun and making memories are
whats most important.
THE SWEETEST THINGS MY CHILD SAID TO ME RECENTLY I cant
wait to get to school to see whats in my lunchbox, and, Oh my golly gosh!
MY HOBBIES INCLUDE baking kiddies birthday cakes and Christmas
cakes Christmas is my favourite time of the year.

Appliances like your dishwasher, fridge and
tumble dryer are costly to repair and even
more expensive to replace. Keep them in tiptop shape and you might extend their lifespan!

Avoid expensive call-out fees
for a handyman, and long lead
times for repairs or for parts to
become available by doing some
simple preventative maintenance
yourself. How to do it

tip Before attempting any DIY on


your appliances, ensure that theyre
unplugged or switch off the electric
power to the unit.

YOUR FRIDGE
The best way to maintain your fridge
is to clean it often, both inside and
out. Clean the coils and vents, which
are either located underneath or at
the back of the unit, using a vacuum
cleaner. The condenser coils remove
heat from the fridge so any dust or
dirt makes them work harder in order
for the fridge to maintain an optimum
temperature. The harder the coils have
to work, the more energy the fridge
uses, and youll start to notice the
rising costs on your electricity bill each
month. Remember to clean the inside
of your fridge on a weekly basis. Wash
the rubber door seal warm soapy
water and a cloth will do. Sometimes
this seal needs to be replaced. Its fairly
easy to do and a replacement seal
can be bought directly from the local
agent for your brand of fridge. Find
a tutorial on Youtube.com. Check the
door gaskets are working correctly by
closing the door on a piece of paper. It
should be difficult to pull out. The ideal
temperature is between 0 and 5C.
Be sure to check your fridges
thermostat often. If your model has
a water filter, replace this every six
months. Check the placement of your
fridge ideally it should be in a cool,
shady spot.
tip Always follow (and keep!) the
instruction manual that comes with
each appliance. They come in handy
for troubleshooting problems!

YOUR FREEZER
Unless its a frost-free model with an
automatic defrost system, youll need to
defrost your freezer every six months.
Build-up will reduce its ability to work
efficiently and can cause the cooling
system to fail. How to do it: Turn off
the thermostat or set the machine to
defrost. Unplug the unit from the wall and
carefully scrape away ice with a blunt
plastic tool. Once its all removed, wipe
down and wash removable items such
as trays and drawers. Allow to dry before
resetting the thermostat, switching the
freezer back on and refilling.
tip Make sure your appliances are
set on a level surface if its uneven
or the appliances are tilted this can
result in leaks and electrical danger.

YOUR DISHWASHER
It goes without saying, ALWAYS
rinse your dishes before placing
them in the dishwasher! However,
youll still need to check and clean
the filter once a week in order to
prevent a build-up of food and
fat that could get trapped there. If
you open your machine and find
a puddle of water sitting at the
bottom of the machine, its a sign
your filter is blocked. Youll need to
pull it out and remove the cause
of the problem. You should also
clean your machine once a week
by running an empty load and
adding a cup full of vinegar to the
inside of your machine. Check the
water inlet valve if its clogged
the dishwasher wont be able to get
the right amount of hot water and
youll need to replace it spares

of machine. The same goes for the
outlet valve. If your dishes arent
coming out clean, remove the
spray arm by unscrewing it from
the top of the machine and cleaning
it. If you find that your machine is
leaking, check the door gaskets.
Found a puddle on the floor under
your machine? Its possibly a hose
thats come loose or is damaged.
Youll need to unscrew the lower
panels of your machine and get
in to check the hoses that way.
Sometimes its a hose connection
that simply needs tightening.

YOUR WASHING MACHINE


The number one rule when it comes to
taking care of your washing machine?
Never overfill the drum as this will place
strain on the motor and, over time, cause
it to break. Check and clean the filter
after each cycle. Plus, once a cycle has
completed and youve removed the
washing, never close the door. This will
allow the trapped moisture to circulate
and help to avoid mould and mildew
developing inside your machine. From
time to time, check the rubber seal
(around the door) to make sure its clean
and intact. If the rubber is damaged, its
fairly easy to replace and can be bought
from the local agent for your brand of

machine. Over time you may also need


to replace the hoses (at the back of your
machine), which become damaged
through normal wear and tear, causing
them to leak or rupture. When pulling the
machine forward to check the hoses, be
sure to check they dont loosen as you
put the machine back, or you could end
up with a big, watery mess! Does your
machine bounce around when on the
spin cycle it could be nothing more than
the machine not being stable. First check
the machines feet and tighten any loose
screws. If the problem persists youll
need to call out a handyman.

YOUR OVEN
Keep your oven clean. Old, caked-on
food can affect the circulation of heat
and interfere with cooking. Not great
when you consider the money and
effort that goes into making a great
meal! Not cooking like it used to? This
could indicate that the door isnt closing
properly. Avoid hanging heavy items
on the oven door as over time this can
lead to the door hinges loosening. Check
the door seal the same way you would
your fridge, using the paper trick (see
above). Its also a good idea to check
the temperature inside your oven (using
a thermometer) is the same as what
youve selected on the outside if theres
a big difference youll need to call out
a handyman to determine the cause of
the problem.

YOUR TUMBLE DRYER


Clean out lint in the machines filter
after each load. Built-up lint can reduce
the heat distribution in your machine,
making it take longer to dry your clothes
this can be costly as itll increase your
electricity bill, plus its a fire hazard.
Check that its level if the machine
hops while working, components
supporting the drum will wear out quickly
and itll also be noisy. Is the machine
working but not drying your clothes?
If the machine has a vent pipe and its
damaged in any way, it can cause air to

160ml (2/3 cup) desiccated coconut
250ml (1 cup) xylitol
4 eggs
10ml (2t) vanilla essence
200g butter, melted and cooled

double-thick cream, to serve

Preheat oven to 180C. Line a 23cm


springform cake tin with baking paper.
Combine the almonds, coconut and xylitol.
Beat together the eggs, vanilla and butter.
Mix into the almond mixture. Scrape into the
prepared tin. Scatter the flaked almonds on top.
Bake for about 55 minutes or until cooked
when tested with a skewer. Cool in the tin.
Serve warm or cold with double-thick cream.

South Africa in 2013. She lives
in Newlands, Cape Town.
My first TV gig was as the Friday morning
Knorr cook on Expresso. I was nervous and it
was obvious. I cant look back at those early
clips because they really are simply cringeworthy! But thats when the TV bug bit. As
a child I was a competitive ice skater, so the
limelight was not new to me. But TV really is
an entirely different ball game.
Winning MasterChef South Africa in
2013 changed my life. It showed me that
anything is possible, if you give yourself the
opportunity. I was going to enter the first
season of MasterChef but chickened out.
I finally listened to my gut and it turned my
life around! One of the greatest moments on
MasterChef was winning the first challenge,
which was to make bread. All the other
contestants went straight for the yeast, while
I decided to make flat bread.
It was never really clear cut that Id be
here: I have qualifications in marketing,
copy writing, yoga, scuba and sign
language. Ive worked as a Red Bull promo
girl, as a communications director and as
an events planner. All these experiences
allowed me to meet various people and
experience situations that have allowed
me to broaden my horizons.
Since winning MasterChef Ive started
starring in my own show Girl Eat World. It
was no easy feat getting it off the ground
we had to overcome many rejections, but
now its broadcast on Food Network
in Africa, Europe, the Middle East, India,
South East Asia and the Philippines, and
on SABC 3 and Netflix.
While MasterChef certainly boosted
my cooking career, I think it started long
before that with little things like sitting on my
grandmothers porch while she chewed on
orange peels, or licking the batter spoon
while perched on my moms kitchen counter
as she made cupcakes.
Girl Eat World is about travelling the globe
and experiencing cuisine. It was amazing to
see how different cultures have carried their
food influences with them around the world.
From the beginning, I was motivated to make
a show that would appeal to international
audiences. And we succeeded! I love being
the designer of my destiny.

Im on the right path

lives in Durban North.
She made her TV debut
when she won South Africas first
Survivor series in 2006.
When I was a kid, I didnt think I could
make it to this exact space, but I did
have an idea of the things I hoped to
achieve. And I was lucky enough to
find my passion in media. I featured in
an advertising campaign when I was
16 and the media bug bit. Im very
shy, and being out there challenged
me to overcome that. Winning
Survivor was an achievement on
several fronts: personal, mental and
physical. Nothing quite prepares you
for the first night on the island
(in Panama), but it allowed me to
achieve a lot of personal victories.
I think knowing when to be quiet
helped me to win. The show taught
me to get up when youre down, and
to trust myself more.
It also helped me to develop
my career in media, and move on
to greater things. Although I was
a model before, the show helped

me become more visible to the


public. I still do a lot of modelling
for magazines and advertising
campaigns. The show opened
doors for me into TV presenting and
MCing and I even had a stint in radio
on Vuma103FM in Durban. I also
became a presenter on a magazine
show called The Power Within, where
I shared stories about brave women.
The exposure allowed me to build
my personal brand it was definitely
the greatest launch pad anyone could
ask for. Since then, Ive also worked
in the wine industry, doing marketing
for a local winery. Plus Im focusing on
speaking at events, and doing public
talks about youth. It gives me the
opportunity to meet people different
people in different circumstances.
I like being able to entertain and
educate, and to be educated and
entertained in return. I try my best to
be kind people respond better to
positivity.
Some days I know Im on the right
path when all the things Ive worked
towards have made things easy.

Our show made a difference

has worked in TV since she
was a teen. She opened
her home to the world when she and
her husband, Riaan, built a 100 per
cent green house on Love & Mortar.
Michelle, Riaan and their five-yearold son, Rainn, have recently moved
from South Africa to Atlanta, USA.
Michelle still jet sets to South Africa
for work.
Ive been in front of and behind
the camera for 24 years now. But
my greatest achievement has been
building South Africas first off-the-grid
house, complete with all sustainableliving ethics of waste management and

water conservation. That house formed


the premise for my reality show with
Riaan, Love & Mortar.
It was South Africas first reality
TV series that actually went into the
stars personal life. We even chose to
document my pregnancy with Rainn!
Riaan and I actually argued quite
a bit on camera it was a very trying
time, having so much of our lives take
place in front of the camera. But we got
through all of it.
My first TV gig was playing the lead
actress in an SABC action TV series
called Sentinel, where my teenage
character Ricky used karate and stuntdriving on motorbikes to get herself out

of tight spots. Ive since worked


on Top Billing and Morning Live
as a presenter, and worked as
a conservation journalist reporting from
around the world. Ive created shows
like DIY with Riaan and African Hot
Rods as executive producer. Its
been amazing.
To produce Love & Mortar, Riaan
and I raised the funds to buy the
airtime from The Home Channel, and
produce the show. We put our total life
savings into building the house. We
worked closely with the Green Building
Councils rules and regulations, and
housing regulations. It was quite
a challenge!
Ive accepted the responsibility that
comes with being a public personality
and being a fine-tuned role model at
all times.
The green home was motivated by
years of working with animals on shows
such as Wild Ltd and Bush Radar Kids,
where I realised the huge stress our
natural world and environment is under
on this generations watch!
Love & Mortar changed my
perspective on green living, and
showed me that its possible for
everyone. After the show I became
the senior writer for the South African
National Energy Development Institute,
an organisation that works directly
with the minister of energy. Our
focus is on promoting the uptake of
renewable energy sources like solar
and wind power.
Everyone still asks me about the
show from petrol attendants to CEOs;
they all want to know how to walk more
lightly on the planet. That tells me our
show made a difference to the world!
My wish for South Africa is that we
know how important our environment
is to our future wellbeing, and that we
choose to grow with sustainable-living
practices as king.

nke Pietrangeli, 33, from Paarl, was the


winner of Idols South Africa in 2003.
Im a girl from the platteland I grew up in
Kimberley. I only started singing in public at school
and church when I was 16. I had no idea it would
become my future. I thought Id probably end up in the
medical field.
Becoming a well-known TV personality was a Wow
experience for me and my family. It was one of the best
moments of my life especially after getting through
awful times like the elimination rounds and forgetting my
words during the auditions for the show. I feel honoured
that I am seen as a beloved icon in South Africa. Ive
since worked on Dis hoe dit is met Steve and Liriekeraai,
was the opening act for Westlife and Boyzone, and won
a SAMA award for best female vocalist.
Winning Idols made me an independent and strong
human being. It gave me experience in working with
people, and showed me how the industry and world
works. Knowledge and experience are powerful.
The show opened a lot of doors for me as an upand-coming artist, but achieving what I have has been
hard work. You need to keep moving forward to get
somewhere in life. I love what I do now music is food
for the soul. I love seeing how much music affects
people, and makes them happy.
In the past few years Ive released three albums and
Im also working on a single for the Missing Childrens
Foundation. Ive just finished recording new singles with
a well-known band called The Reckoning. The songs
feature a few popular artists and musicians. Their style
and love for progressive country rock will get you on
your feet in no time. The singles will be on the radio
soon so listen up!

iphokazi Mdlankomo, 40, was the runner-up


in MasterChef South Africa 2014. She lives in
Newlands, Cape Town.
Ive always had dreams of becoming something one
day. Finally, my wishes came true. Being the runner-up in
MasterChef South Africa was something from my wildest
dreams! I was the first domestic worker to reach that far in
MasterChef and Im now a brand ambassador for Pick n Pay.
How cool is that! My mothers dream was for me to become
a fashion designer, but all I wanted was to be an opera singer.
If only we could have seen where Id be one day.
I work for a family in Cape Town as a domestic worker. In
2014 Liz, my employer, encouraged me to enter MasterChef.
In 2012 I had entered a competition that was on The Home
Channel for the Kia Cook-Off SA, and I was one of the top
27 contestants. So I already felt comfortable in front of the
camera. From the moment I entered MasterChef, I had fun.
I was doing what I love: cooking and in front of the camera
to boot! Thats when I realised being a TV personality is
definitely something Id love to pursue.
The show taught me how to delicately plate food, and how
to work under pressure. And to just be me.
Now I spend a lot of time cooking for dinner and birthday
parties, and Ive appeared in front of the camera for a few
episodes of cooking shows that will be out soon. Ive also been
touring with The Good Food and Wine Show. Getting where
I am has required strength and passion, but theres still a long
road ahead, to get to a point where I can fully support my
family and build a life for us. It may look easy from the outside,
but getting somewhere in life requires immense discipline.
Right now, Im working on a live performance show, Short Chef,
Skinny Chef, with Claire Allen, who was a fellow contestant on
MasterChef South Africa. My cookbook, The Little Black Recipe
Book (published by Metz Press) is on shelf in January.

Dane and I were on our way
to meet up with friends to
do the Whale Trail. It was a
Tuesday sunny and bright and full
of anticipation. Wed been on the road
for a while when he opened the cubby
hole and passed me a piece of paper.
It was a letter of retrenchment: polite
words expressing a stark reality. He
told me hed received it the previous
day, but hadnt known how to tell
me. My heart ached at the thought
of him carrying this knowledge for
24 lonely hours.
I looked up the word retrench in
The Chambers Dictionary. Its defined
as to shorten, delete, or abridge, and
comes from the French retrenchier,
meaning to cut, from Latin truncare
to lop. How appropriate! My husband
had been excited to join the company
two and a half years previously. Hed
looked forward to a future there. Now
all that had been taken away. Hed
been cut off.
My initial response was one of
calm, arising from great respect
for my husbands abilities. He built
his career with diligence, integrity
and skill. Between 2010 and 2013
he completed an honours degree
and an MBA, achieving both with
distinction while continuing to work
full-time. I was confident he would find
something. My husbands response
was, understandably, very different.

for maintaining a steady income.
He was filled with uncertainty about
continuing to finance our life. He
worried about the expenses lying in
wait, with our boys nearing the end of
their school career (tertiary education,
for example). My husbands sense of
identity, profoundly tied to the role of
provider, and his confidence in himself,
were shaken, in spite of the fact that
many others at the company were
facing the same struggle. He knew in
his head that this was not personal; it
was not a reflection of his abilities or
skills. But it felt personal.
Other concerns surfaced. We knew
it might be difficult for him to find work
in our home city of Cape Town. The
possibility of relocation was very real.
We knew this could be unsettling to our
boys, and didnt want to disrupt them
at this crucial time. Our older son was
18 at the time, and made it clear he
was not open to leaving.
I was reminded again of our
closeness to that season of life
in which children fly the nest. I
recognised that my sons could leave
home in the near future, but I was
hoping to be in the same city, to have
them close enough to visit. I wanted
to ease the transition. The idea that
they could be here, while we lived
in another part of the country (or in
another country altogether), made me
anxious. I wasnt ready for them to
leave. Although I knew that moment
would come at some point, the
thought that it could come sooner than
expected gave me the opportunity to
reflect on my feelings.
I realised that as a parent I would
always wonder whether I did enough
to prepare my sons for life outside our
home and protection. I thought about
the choices and challenges they may
face, over which I have no control.
Now was the time to make peace with
that. To let go of the need to tie up
all the loose ends. I recognised the
need to acknowledge the impossibility
of sending your children out neatly
packaged and perfectly ready for the
world. As a result of these reflections,
I came to a greater sense of peace
and readiness for the day I finally have
to let go.
I was concerned about relocation

for other reasons too. The thought of


saying goodbye to my beloved Cape
Town brought tears. I didnt want to
leave the connections made over
the years, to lose my communities.
I thought about the time and care it
has taken for me (a profound introvert)
to create the network of relationships in
my life. I reflected on the value of these
friendships. One of my closest friends
emigrated earlier this year and I felt the
loss of her presence deeply. Thinking
about leaving my much-loved horse
behind also overwhelmed me.
The greatest sense of sadness
about going, however, was related to
my parents. As my own children have
approached adulthood, Ive become
increasingly aware of my appreciation

We found that
our connection
tolerated the
stress of differing
perspectives
for my own parents. I wanted so much
to be around them in the time we have
left together. Other family, including
in-laws, came to mind. I knew I would
miss them dearly too.
My husband, on the other hand,
was excited at the thought of putting
down roots elsewhere. He talked
about the value of exposing our
sons to other environments, and of
opportunities to explore and travel.
I was excited about this too. I reflected
on the pleasure I enjoy when exploring
unfamiliar places, my enjoyment of
new experiences, and recognised that
moving to another part of the world
could be a wonderful adventure.
I imagined a fresh environment as
a kind of blank sheet, an invitation to

reach into new territory, both of the


inner landscape of my heart and the
outer world of activity and endeavour.
Part of me wanted to take the leap into
places beyond my known horizons.
I tried to communicate my support
to my husband, to tell him that no
matter what happened I would give
myself to the process. I wanted him to
feel he was not alone, that I would walk
with him wherever this journey took
us. But I also wanted to be honest. It
seemed important that now, more than
ever, we committed to being open with
one another. We were facing a moment
in our lives in which big decisions
had to be made, decisions that could
change the trajectory of our future in
significant ways.
I didnt want either of us to feel we
had compromised and that we were
left feeling resentful, manipulated
or pressurised into choices we later
regretted. Those conversations had
to happen now, and they were not
easy. Communicating honestly and
graciously was complicated. It often
felt like walking a tightrope.
The process left me feeling
drained and frustrated at times, but
it also came with its own rewards.
We discovered a new kind of tenacity
and strength in our relationship. We
found that our connection tolerated
the stress of differing perspectives.
We found ways to tell it like it is while
still conveying respect and love.
Considering that nothing gives my
husband greater joy than seeing us
thrive and grow, he felt torn between
some of the dreams and goals he had
for himself, and the needs and wants
of the three people he loved most.
After more than 70 job applications,
over two months of uncertainty and
much soul searching, my husband
found a job, and it was right here in
Cape Town. This was an unexpected
and very welcome surprise.
I loved seeing him able to use his
gifts and abilities meaningfully. The
relief he felt at being able to continue
providing was evident. The journey
was hard; it wasnt one I would have
chosen for us, but I found myself
feeling thankful for it. It reminded us
again of what we valued most and
strengthened our commitment to those
things, and that has been a gift.

2 cups Epsom salts


cup bicarbonate
of soda
zest of 1 lime
5 drops lime
essential oil
5 drops peppermint
essential oil

2 cups brown sugar


1 cup almond oil
1t vitamin E oil
1t vanilla extract
15 drops lavender
essential oil

Combine the
ingredients in a large
bowl. Stir with a
wooden spoon to mix.
Pour half a cup of the
soak into a bowl of
warm water. Soak for
a few minutes. Store
in the fridge and use
within two weeks. The
soak soothes aches,
and softens, exfoliates
and energises the skin.

Combine the
ingredients in a bowl.
Stir with a wooden
spoon to mix well.
Use the scrub within
a few weeks. This is
a soothing, fragrant
scrub, which mildly
exfoliates the skin,
leaving it soft and
smooth.

face and rub in circular

mixture into the jar.
Add the cotton pads
a few at a time, and
agitate the jar so
that they soak up the
solution. Add more

Combine the ingredients in a jar.
Shake well to mix. Apply to wet
hair and leave on for 20 minutes.

massage to remove dead skin cells.
Rinse with warm water, and apply lip balm.

Mash the blueberries with a


spoon and mix into the yoghurt.
This antioxidant-rich mask
will soothe sunburn and help
exfoliate damaged skin.

1 organic cucumber,
roughly chopped
(or juiced)
juice of 1 large lemon
1t honey

3T bay rum
1T bergamot essence
2t hair placenta

Peel and juice the


cucumber, or drop it
into a blender and then
pour the cucumber juice
through cheesecloth
to filter the liquid and

a jar. Apply to clean dry
skin using cotton pads.
Store in the fridge for
up to a week.

scalp after washing
and conditioning, and
massage into your

prevent your hair from
shedding and stimulate

Select a powdery
but smudge-proof
eyebrow pencil.
Your eyebrow should
ideally start directly
above the inner corner
of your eye. It should
end at the point where
an imaginary line drawn
from the corner of the
nose passes the outer
corner of the eye.
The arch should be
at the point where
an imaginary line drawn
from the outer corner of
the nose extends through
the outer corner of the iris
of the eye.

Draw two parallel lines


from the start of the
eyebrow up to the arch.
When the arch is
reached, slope the
two lines down to a point
where the eyebrow ends.
Now fill in the eyebrow
with the pencil.
Finally, use the
opposite end to brush
the eyebrow up towards
the arch, then down from
the arch towards the
end point.
To keep the eyebrow
in place, give a clean,
dry brow brush (or
mascara wand) a spritz
of hairspray and gently

avocado terrine with smoked salmon


Serves 6 Takes 30 mins + straining + setting
500ml Bulgarian yoghurt
30ml powdered gelatine
60ml water
45ml lukewarm cream
250ml avocado, mashed
squeeze of lemon juice
Tabasco sauce, to taste
8 slices white bread, crusts
removed
80g smoked salmon
small handful sprouts, to serve

Whip up a few of
these old favourites
from our recipe library
for New Years Eve

1 For the terrine, place wet plastic


wrap on the inside of 3 x 250ml
loaf tins or 1 x 1L tin, allowing it
to overlap down the sides. Line
a sieve with muslin cloth, spoon in
the yoghurt and cover. Place in the
fridge to drain for at least 4 hours.
2 Sprinkle the gelatine over the water
and leave to bloom for 5 minutes.
Heat the gelatine in the microwave
on the defrost setting for a few

seconds until melted. Mix through


the cream and season with salt and
white pepper.
Add 2/3 of cream mixture to the
yoghurt and mix through. Carefully
spoon into the prepared tin.
Mix the avocado, lemon juice and
Tabasco together. Season. Mix the
remaining 1/3 cream mixture through
the avocado mixture and spoon on
top of the yoghurt mixture. Cover
and set overnight.
Preheat oven to 180C. Roll the
bread out with a rolling pin until flat,
cut into small triangles and place on
a baking tray. Bake for 10 minutes
or until lightly golden around the
edges. Cool on a wire rack.
When the terrine is set, turn out onto
a serving plate. Curl the smoked
salmon on top and sprinkle with
sprouts. Serve with the Melba toast.

beetroot gazpacho
Serves 4-6 Takes 25 mins
1 cucumber, cubed
500g cherry tomatoes
1 red pepper, seeded and chopped
2 spring onions, sliced
4 medium beetroots, peeled and
roughly chopped
2 garlic cloves, crushed
60ml olive oil
15ml apple cider vinegar
handful mint
lime wedges, to serve
1 Reserve 125ml of the chopped
cucumber, tomato and red pepper
mixture as garnish for the soup.
Blitz the cucumber, tomatoes, red
pepper, spring onion, beetroot and
garlic until smooth.
2 While processing, add the oil and
vinegar. Season and serve with the
reserved vegetables, mint and lime
on top.

1 punnet black mushrooms, chopped
2 garlic cloves, crushed
100g Serrano or sandwich ham, chopped (optional)
1 egg, beaten
125ml breadcrumbs
250ml vegetable oil
spicy tomato salsa, to serve
1 For the white sauce, melt the butter over medium heat and
add the flour. Stir to form a roux or thick paste. Remove
from heat and slowly add milk, whisking well to get rid
of any lumps. Add the remaining milk and return to heat.
Continue whisking until sauce has thickened. Add the
cheese and season. Pour the sauce into a bowl, cover
with plastic wrap and chill in the fridge for 1 hour.
2 Heat the olive oil on medium-high and saut the
mushrooms until softened. Add the garlic and cook for
1 minute. Season and allow to cool before adding to the
chilled white sauce, along with the ham (if using).
3 Spoon out 15ml of the mixture and roll into a ball before
rolling it into the extra flour. Dip in the egg, and roll in the
breadcrumbs. Place the croquetas in the fridge to firm
up for 10 minutes.
4 Heat the vegetable oil and fry small batches of croquetas
for 2-3 minutes until golden and crisp. Drain on paper
towel. Serve with the spicy tomato salsa.

625ml cooked and mashed sweet potato, warm
4 spring onions, thinly sliced
handful coriander, chopped
lemon juice, to taste
24 sheets frozen spring-roll wrappers, thawed
vegetable oil, for deep-frying
FOR THE GRANADILLA DIP
6 granadillas, halved
1 red chilli, finely chopped
2cm ginger, grated
15ml soy sauce
juice of 1 lemon
30ml sweet chilli sauce
1 Flake the snoek and mix with sweet potato, onion,
coriander and lemon juice. Season.
2 Place 1 spring-roll wrapper on a surface with a corner
pointing towards you. Place a heaped tablespoon of
filling onto the corner of the wrapper. Brush edges
lightly with water. Fold corner over the filling, then roll up
firmly, folding the edges in. Press to seal. Place onto
a tray. Repeat with the remaining wrappers and filling.
3 Place enough oil to come 1/3 of the way up the sides of
a large saucepan. Deep-fry the spring rolls in batches
for 3-5 minutes or until golden. Drain on paper towel.
4 For the granadilla dip, combine all the ingredients.
5 Serve the spring rolls with the granadilla dip.

6 yellow and/or orange peppers


400g feta, drained
180ml plain yoghurt
2 garlic cloves, crushed
60ml olive or avocado oil
180ml pitted olives, chopped
handful Rosa tomatoes, quartered
small handful oregano, chopped

3 large brinjals, halved lengthways


45ml olive or avocado oil
4 garlic cloves, skin on
lemon juice, to taste
125ml plain yoghurt + extra
60ml mint + extra
mini pita breads, to serve
red onion, chopped

1 Preheat oven to 200C. Line a triangular or


rectangular 1.25L terrine tin or mould with
plastic wrap.
2 Place the peppers on a baking tray and pierce each
one with the tip of a knife. Roast for about 25 minutes
or until the skin is blistered and blackened. Place the
peppers in a plastic bag until cool.
3 Peel the skin from the peppers and discard.
Open the peppers and remove all the pips
and membranes.
4 Blitz the feta, yoghurt, garlic and 30ml of the oil until
smooth. Season. Line the sides of the terrine tin with
the peppers, reserving some for the top.
5 Spoon the feta mixture into the terrine tin, pressing
down well. Lay the remaining peppers on top and
cover with plastic wrap. Place a baking tray or board
on top and weigh down. Chill for 4 hours or overnight.
6 For the salsa, combine the olives, tomatoes, oregano
and remaining 30ml oil. Season.
7 When ready to serve, turn the terrine out onto
a board, discard the plastic and cut into slices
(around 3cm thick). Serve sprinkled with olive salsa.

1 Preheat oven to 200C. Line a baking tray with baking


paper. Place the brinjals and garlic on the tray, drizzle
with 15ml of the oil and season. Roast for about
30 minutes or until the brinjals are soft.
2 Remove from the oven and cool slightly. Scoop out the
brinjal flesh, squeeze out the garlic and mash together.
3 Add the lemon juice, yoghurt and mint. Season.
Refrigerate for 30 minutes before serving with warm pita
breads, onion, extra yoghurt and mint.

Brinjals are a family favourite so this dip
went down a treat. The taste is fresh and
flavoursome. Its an easy recipe and the
dairy can be substituted for a non-dairy
alternative, such as Orley Whip with a
drop of lemon juice for tang, making it
a great appetiser for dairy or meat
meals in our kosher home, says Arlene.

using paper towel. Slit the tubes in
half then score using a sharp knife to
create a diamond effect.
2 Combine the calamari, chillies
(to taste), lemon zest and juice,
coriander and garlic. Season. Cover
with plastic wrap and refrigerate for
30 minutes.
3 Heat the oil on high and cook the
calamari in batches for 2-3 minutes
on each side or until just cooked.
4 Serve with coriander and
extra lemon.

5 Serve the meatballs and spicy
tomato sauce with cubes of
crusty bread.

the mince mixture in the fridge for
30 minutes. In the meantime, soak
15 wooden skewers in water.
2 Remove the mince mixture from
the fridge, take small handfuls of
the mixture and shape a kebab
on each skewer. Place the kebabs
back in the fridge for 10 minutes.
3 Heat a griddle pan on high and
brush the kebabs with oil. Griddle
in batches for about 8 minutes on
each side or until cooked.

250g ripe tomatoes

FOR THE GARLIC-HERB OIL


60ml olive oil
250ml mixed fresh herbs (like basil, thyme, rosemary,
parsley or oregano)
1 garlic clove, crushed
8 toasted baguette slices
handful rocket

FOR THE GUACAMOLE


2 avocados, mashed
lemon juice, to taste
15ml olive or avocado oil
small handful coriander, chopped + extra
250ml Bulgarian or plain yoghurt
breadsticks or crackers, to serve

1 Preheat oven to 200C. Run a sharp knife between the


skin and flesh of each lemon and use a spoon to scoop
out the flesh and set aside.
2 Mix the cheeses and chilli together, season and spoon
into the lemon halves. Place on a baking tray and bake
for about 30 minutes or until the cheese has melted.
3 For the garlic-herb oil, blitz together all the ingredients.
Add some of the reserved lemon juice to taste. Season.
4 Drizzle the garlic-herb oil over the cheesy lemons and
serve with bread and rocket.

1 For the tomato dip, blitz together all the


ingredients until smooth. Season. Drain any
excess moisture through a sieve.
2 For the guacamole, combine all the
ingredients. Season.
3 Layer the tomato, guacamole and yoghurt

1 Combine the lime or lemon zest, coconut milk,


coriander, garlic, chilli, fish sauce, soy sauce,
prawns and lime juice and coat well. Cover with
plastic wrap and refrigerate for at least 1 hour.
2 Thread the prawns onto lemongrass skewers.
Heat a griddle pan on medium-high and cook
the prawns, brushing with the reserved coconut
milk mixture, for about 3 minutes on each side
or until pink and lightly charred.
3 Serve the skewers with lime wedges, coriander
and rice.

250g baby tomatoes (use different varieties for
a colourful effect)

2 x 150g halloumi
3ml dried mint (optional)
30ml cornflour
canola oil, for frying
1 lemon, cut into wedges
1 Cut the tomatoes in half and add the onion, vinegar
and oil. Season and garnish with mint.
2 Remove the halloumi from the packaging and pat dry.
Combine the dried mint and cornflour, and sprinkle
this over the halloumi on both sides.
3 Heat the oil in a shallow frying pan, and fry the
halloumi for 2-3 minutes on each side or until golden
brown. Drain on kitchen towel.
4 Serve immediately with lemon wedges and the
tomato salad.

16 asparagus spears
16 strips of streaky bacon
FOR THE DRESSING
45ml olive or avocado oil
30ml red wine vinegar
5ml honey
1 clove garlic, chopped
15ml soy sauce
30ml sesame seeds, lightly toasted
1 Soak 8 wooden skewers in water for 15 minutes.
2 Remove the hard woody ends of the asparagus
spears if necessary and wrap a piece of bacon
around each spear. Place 4 wrapped asparagus
spears next to one another and skewer them
crosswise with two skewers.
3 Mix together all the dressing ingredients.
4 Grill the asparagus spears over hot coals or
in a griddle pan for 4-5 minutes on each side,
turning once.
5 Drizzle the dressing over the warm asparagus
and serve.

BASIC WAFFLE RECIPE


Makes 6 Takes 1 hr
250ml (1 cup) milk
1 For the waffles, bring the milk to a boil on medium80g butter
high heat. Add the butter and vanilla and stir until

melted. Cool.
430ml (12/3 cups) cake flour
2 Sift together the flour, baking powder and salt.

Make a well in the centre. Beat the sugar and egg

150g nougat, chopped + extra

EGG FREE Replace the eggs with about
125ml ( cup) extra buttermilk. Replace
the nougat (which is made with egg whites)
with 100g extra white chocolate.
SUGAR FREE Replace the sugar with xylitol
or leave it out altogether. Serve with diabeticfriendly ice cream instead of the sauce.

80ml (1/3 cup) peanut butter
80ml (1/3 cup) strawberry jam
FOR THE CUSTARD

30ml (2T) castor sugar
60ml ( cup) milk
3ml (t) vanilla essence
pinch salt

1 Spread butter on one side of each slice of bread.


Spread the peanut butter and jam on 4 buttered-side
slices and sandwich together with the remaining slices.
2 For the custard, beat all the ingredients together and
pour into a flat dish. Working with one sandwich at

Friends come home
from the beach with a copper
bucket filled with freshly
plucked mussels and we all
gather around the stone table
underneath the pomegranate
tree. An icy ros is poured and
crusty bread broken.

MENU
Mussels with crusty bread
Salt-crusted whole white fish
Asparagus and artichokes

MUSSELS, WHITE WINE


AND PARSLEY
Serves 4 Takes 30 mins
1kg whole mussels, beards
removed
350ml white wine
handful thyme
6 spring onions, chopped
1 chilli, seeded and chopped

1 Rinse the mussels and drain.


2 Add wine and thyme to a large
saucepan and bring to a boil.
Add mussels and onions. Cover

ARTICHOKES AND ASPARAGUS


Serves 4-6 Takes 15 mins
4 small artichokes
50ml olive oil
50g butter
500g asparagus, washed
handful basil

1 Slice the artichokes lengthways in


thin slivers. Heat oil and butter on
medium-high and quick-fry the
artichokes until they are crisp. Set
aside. Toss the asparagus in the
same butter and oil mixture until
lightly cooked. Season.
2 Serve on a bed of basil.

SALT-CRUSTED WHOLE WHITE FISH


Serves 4 Takes 40 mins

Baking fish in a salt crust ensures that


its utterly succulent and flavourful. This
is deceptively simple but delicious!
olive oil, for brushing
1,5kg white fish, cleaned
white pepper
1 lemon
3 egg whites
1kg salt
1 lime, thinly sliced

1 Preheat oven to 180C. Rub oil into


a baking tray. Place the fish on top of
the tray and season lightly with white
pepper and a little lemon juice.
2 Fold the egg whites into the salt
and, using your hands, pack the salt
thickly over the fish, leaving the head
and tail uncovered. Place the slices
of lime on top of the salt and slide
the fish into the hot oven. Cook for
30 minutes.
3 Remove the fish from the oven. Keep
the crispy lime slices on the side.
Lightly whack the hardened salt with
the back of a spoon to crack it open.
Remove the pieces of salt from the
fish beware of the steam!
4 Gently place the cooked fish onto
a serving platter, redecorate with the
lime slices and serve immediately
with the artichokes and asparagus.

CHEESECAKE WITH WHITE CHOCOLATE AND SUMMER BERRIES


Serves 6-8 Takes 1 hr + cooling
2 x 200g packets Tennis biscuits,
finely crushed
100g butter, melted
3 eggs
1 egg yolk
125g castor sugar
500ml smooth cream cheese
125ml double cream
150g white chocolate, melted
fresh berries, to serve

1 Preheat oven to 160C. Combine the


biscuit crumbs and butter. Line the
base and sides of a 23cm tin with the
mixture, and refrigerate.
2 Whip the eggs and egg yolk with the
sugar until foamy. Spoon the cream
cheese into the mixture and whip
thoroughly. Gently fold in the cream.
3 Pour the mixture into the chilled
crust and bake the cheesecake for
about 40 minutes. When the cake
has risen well and set properly, turn
off the oven and open the oven
door. Allow the cake to rest in the
cooling oven until cold.
4 Spoon the chocolate over the
cheesecake and serve with berries.

Easy ideas for a South African favourite

BOEREWORS KEBABS

Serves 6 Takes 30 mins

Serves 6 Takes 30 mins

Press the meat from 1kg boerewors out of


the casings. Combine with a small handful
of chopped thyme. Divide the meat into
6 equal balls. Flatten the sausage meatballs
in the palm of your hand and place
a medium boiled egg in the centre. Gently
work the meat around the egg until it is
sealed completely. Fill a shallow bowl with
100g seasoned flour, another bowl with
egg wash (1 egg lightly whisked with
a pinch of salt) and a third bowl with 100g
fresh breadcrumbs. Roll the meatballs in
the flour, then the egg wash, followed by the
breadcrumbs. Deep-fry the scotch eggs in
500ml sunflower oil for 4-5 minutes or until
golden brown. Drain on paper towel.

Heat 15ml olive oil over medium and


saut 1 chopped onion. Press the
meat of 500g boerewors out of the
casings and fry until browned. Add
60ml chutney, 1 chopped chilli and a
handful of chopped coriander. Season.
Use samoosa pastry strips or cut 4
phyllo pastry sheets into 8 x 24cm
strips. Place a teaspoon of filling on
the end of a strip and fold over to form
a triangle. Continue folding over until
all the pastry has been used. Deepfry the samoosas in batches in 500ml
sunflower oil for about 5 minutes or
until golden brown.

and cut into large cubes
500g boerewors,
cut into bite-size pieces
12 lemon leaves
30ml olive oil
FOR THE SALSA
1 mango, diced
1 small cucumber, diced
1 small red onion, diced
15ml lime juice
handful coriander, chopped

1 Thread the pineapple,


boerewors and lemon leaves,
alternating, onto 6 sosatie
sticks. Drizzle with oil.
2 Heat a griddle pan or braai
on medium-high and grill the
sosaties for 3-4 minutes on
each side or until sausages
are cooked through.
3 Combine all the ingredients
for the salsa. Season.
4 Serve the boerewors kebabs
with the mango salsa.

FRITTATA
PASTA

Serves 4 Takes 25 mins

Press the meat of 500g boerewors out of
the casings and pinch into bite-size balls.
Heat 15ml olive oil over medium, add the
meatballs and fry for 5-7 minutes or until
browned on all sides. Add 250g cherry
tomatoes and fry for another 2 minutes.
Add 125ml passata and cook on low heat
for about 15 minutes or until the sauce
has slightly thickened. Add a small
handful of basil leaves. Season.
Serve on cooked spaghetti and
add Parmesan shavings.

Heat 30ml olive oil over medium and


cook 250g sliced boerewors for 8-10
minutes or until cooked. Add 250g
grated baby marrows and fry for a
few minutes. Add 2 handfuls of baby
spinach leaves and stir through. Pour
in 6 eggs, whisked. Season with salt
and nutmeg. Lower the temperature
and allow the eggs to cool slightly.
Add 125g mozzarella cubes and 125g
Cheddar cubes. Bake at 200C for 5-10
minutes or until it puffs up. Remove
from the oven and allow to cool slightly.

4 paninis, sliced open
45ml butter
300g halloumi, sliced
80ml basil pesto
80ml pumpkin seeds
handful basil

FOR THE BALSAMIC REDUCTION
15ml sugar
125ml balsamic vinegar
FOR THE ROASTED PEARS
4 pears, peeled and cored (halved or quartered)
60g butter, melted
honey, to drizzle
250g streaky bacon
4 thick slices ciabatta
olive or avocado oil
125g (1 small) Camembert round, sliced
handful rocket leaves
small handful baby leaves (optional)

1 Preheat oven to 200C. Place the butternut in a deep


roasting tray and drizzle with oil. Season and bake for
15 minutes.
2 Add the tomatoes and mushrooms and roast for 15 minutes.
Add the paninis, drizzle with oil and bake for about
5 minutes or until golden.
3 Meanwhile, melt the butter on medium-high and fry the
halloumi for about 1 minute on each side or until golden.
4 Spread pesto onto each panini and top with the halloumi
and roasted veg. Serve with the pumpkin seeds and basil
scattered over.

1 Preheat oven to 200C. For the balsamic reduction,


heat the sugar and balsamic on medium for about
30 minutes or until thick and syrupy.
2 Meanwhile, for the pears, place in a deep roasting tray
and drizzle with butter and honey. Roast for 10 minutes,
spooning the butter mixture over occasionally.
3 Add the bacon and roast for about 15 minutes or until
bacon is crisp and pears are golden and cooked through.
4 Drizzle oil over the bread. Heat a griddle pan on high
and fry the bread for about 1 minute on each side or
until charred. Top the bread with roasted pears, bacon,
Camembert and rocket. Serve with the balsamic reduction
and baby leaves scattered over.

beef burgers with beetroot tzatziki


Serves 6-8 Takes 1 hr 10
FOR THE BURGERS
2 slices of bread, crumbed
125ml Bulgarian yoghurt
5ml mustard powder
1 garlic clove, crushed
70g feta, finely crumbled
zest of 1 lemon
1kg beef mince
handful parsley, chopped
vegetable oil, for frying
FOR THE
BEETROOT TZATZIKI
1 small beetroot,
peeled and grated
125ml Bulgarian yoghurt

5ml cumin seeds


1 garlic clove, crushed
FOR THE
BEETROOT CHIPS
vegetable oil, for deep-frying
4 medium beetroots,
thinly sliced
pinch sea-salt flakes
TO SERVE
8 bread rolls
2 salad tomatoes, sliced
1 red onion, thinly sliced
handful rocket

1 For the burgers, combine the breadcrumbs and yoghurt


and set aside for 10 minutes to soften.
2 In the meantime, combine the mustard, garlic, feta, lemon
zest, mince and parsley. Add the soaked bread, mix well
and season.
3 Divide the mince into 6-8 patties, slightly flattened with
the palm of your hand, and refrigerate for 10-15 minutes.
4 For the tzatziki, combine all the ingredients. Season.
5 For the beetroot chips, fill a small saucepan with vegetable
oil 1/3 of the way up the sides and gently heat. Fry the beetroot
slices in small batches until crisp and drain on kitchen towel.
Sprinkle with salt flakes and set aside.
6 Heat a frying pan and coat the beef patties with oil. Fry until
golden brown and firm.
7 Place the patties on the bread rolls and top with tomatoes,
onion, rocket and a generous dollop of beetroot tzatziki.
Serve with warm beetroot chips.

60ml cake flour
500ml milk
250ml mature Cheddar,
grated
15ml wholegrain mustard

FOR THE SANDWICHES


60g soft butter
8 thick slices sourdough
bread
4 thick slices gypsy ham
paprika, to dust (optional)
45ml olive or avocado oil
4 eggs
watercress, to serve

1 For the cheese sauce, melt the butter on medium. Add the
flour and cook for a minute. Slowly add the milk, stirring to
prevent lumps, and cook for 5 minutes. Stir the cheese and
mustard until melted. Mix in the parsley and season.
2 For the sandwiches, spread the butter onto the bread
slices and top 4 slices with half of the sauce. Top each with
a slice of ham and the remaining bread slices to make a
sandwich. Place on a baking tray and spoon the remaining
sauce on top and dust with paprika. Place the sandwiches
under a heated grill for 2-3 minutes, until bubbling and
golden.
3 Heat oil on medium and fry the eggs for 5 minutes or until
cooked to your liking. Season. Serve sandwiches topped
with eggs and watercress.

250ml bocconcini or

handful baby spinach

1 For the marinated chicken, combine all the ingredients and


marinate for at least 20 minutes.
2 For the marinated onions, combine all the ingredients and
marinate for 20 minutes. Drain, season and set aside.
3 For the sweet chilli mayo, mix the sweet chilli sauce and
mayonnaise together.
4 Heat a griddle pan on high and fry the pineapple for
about 2 minutes or until charred.
5 Drain the chicken and fry on the griddle pan in batches
for about 5 minutes or until charred and cooked on all
sides. Season.
6 Top the bagels with the cheese and cook under a heated
grill for about 3 minutes or until the cheese has melted.
Top with the baby spinach, grilled chicken, dollops of
sweet chilli mayo, pineapple and drained onions.

FOR THE CHOWDER
1 onion, chopped
1 garlic clove, crushed

120g butter
30ml cake flour
4 skinless hake fillets
375ml milk
375ml cream
5ml Dijon mustard
handful parsley, chopped

1 For the bread bowls, cut a lid out of the sourdough or


ciabatta rolls. Hollow out using your fingers and reserve
the removed crumbs.
2 Grease the insides of the rolls with olive oil or melted
butter. Place on a baking tray and bake for 5-8 minutes or
until crisp. Remove and set aside on the baking tray.
3 For the quick chowder, fry the onion and garlic in 60g of
the butter. Add the flour to the butter and stir well. Place
the hake fillets on top of the onions and steam, covered,
for 6 minutes.
4 Mix the milk, cream and mustard together. Pour over the
fish, mix, heat through and season. Add parsley.
5 Mix the remaining 60g butter with 250ml of the reserved
breadcrumbs. Ladle the soup into the bread bowls and
scatter buttered crumbs over the top. Bake for 6-8 minutes
or until the soup is warm and the crumbs are golden.
tip Dont throw away dry rolls turn them into
delicious bowls for comforting soups instead.

The marinated chicken and pineapple bagel was delicious the
perfect quick weekend meal. The creamy cheese, fresh spinach
and citrusy chicken topped with sweet caramelised pineapple
was simply yum! It paid off to stick to the recipe, says Jolene

Heat the remaining oil on medium-high. Fry the onions
and garlic for 5-8 minutes or until slightly caramelised.
Combine the potatoes, bacon and chopped onions.
Whisk together the sour cream, mustard, vinegar
and honey. Toss the dressing through the potato salad.
Sprinkle with spring onions and parsley.

250ml orange juice
30ml sugar

FOR THE DRESSING


5ml each of soy sauce, sesame oil and balsamic
vinegar
45ml olive oil

Preheat oven to 200C. Place the cauliflower


and eggplant in a roasting pan. Drizzle with
oil, cumin and honey. Season. Roast for about
30 minutes or until golden brown. Cool.
Combine cauliflower, eggplant, lentils and
onions. Whisk the dressing ingredients together
and season. Toss the dressing through the salad.

410g tin tropical fruit,


drained

mint, cream and fresh
granadilla, to serve

Add 45ml water to the gelatine and set aside. Spray


4 small dariole moulds or tea cups with cooking spray.
Combine the granadilla pulp, orange juice and sugar on
medium heat. Stir to dissolve the sugar. Just before the
mixture starts to boil, remove from heat. Add gelatine to the
mixture and whisk until dissolved.
Pour cm layer of jelly into each mould. Place in the
fridge for about 20 minutes or until set.
Fill the moulds with tropical fruit, leaving cm space at
the top. Fill each mould with the remaining jelly mixture.
Place in the fridge for 1-2 hours or until completely set.
Unmould the jellies by swirling the mould in boiling water
for 1 second. Gently press the sides of the jelly to remove.
Serve with pineapple chips, mint and fresh granadilla.

1 Preheat oven to 120C. Line a standard baking tray with baking paper.

For the meringue, beat the egg whites until soft peaks form. Slowly add
the sugar, while beating until stiff peaks form.
Swirl the colouring through to create a marbled effect (see tip). Spoon into
a piping bag tted with a star nozzle and pipe dollops onto prepared tray.
Bake for 2 hours until dry.
For the strawberry cream, blitz the strawberries and sugar until a coulis
forms. Whip the cream to soft peaks and fold 1/3of the strawberry pure
through until marbled.
Crush some of the meringues and spoon layers into 6 different-sized jars
with the ice cream, strawberry cream and remaining strawberry coulis.
Serve with extra strawberries, remaining meringue and wafer cookies on top.

Suzelle: Well, Im very excited about


the book. It is basically just a lovely
extension of the SuzelleDIY videos.
Its very bright and colourful and
vibrant; there are lots of nice things to
do and make in the book. Theres lots
of different DIYs, different chapters.
Theres kitchen DIY, household
DIY, recipes, and a DI-braai section
too; Marianne even has her own
section shame.
What was the most
challenging part of getting
the book together?
Suzelle: It took a lot of time to get all
the things together, and to take all
these photos. It was quite hard to do.
And we only had a short time, so it
was quite intensive, but I enjoyed it.
And Marianne did she
enjoy it?
Suzelle: Marianne was a bit of
a pain, at times, but she enjoyed
it, and she actually helped me
a lot, shame. She really helped,
especially with her own section and
the DI-braai section. Shes also very
good at computers, so if you need
something, she helps me with that.

STAR YARN
Light cotton, a beautiful drape, pastel summer
garden colours, and all with a South African touch

Crafter of the month


This gorgeous quilt was made by Cecile Kotz, 64, a Reach
for a Dream administrator, for her daughter Petro. Petro says,
I collect fabric from every country I visit, as its so lightweight
and versatile. After ticking a number of countries off my bucket
list (Zambia, Mozambique, Zimbabwe, India, Laos, Cambodia
and Vietnam are just a few!), the pile of material was becoming
a tad high. So she roped in her mom to make a quilt from the
fabric collection. Cecile says, I loved feeling like I was part of
Petros adventures! Petro wanted a huge quilt and as we had
enough material I went overboard. It was quite a complicated
make, with the variety of materials, but the biggest challenge
was handling the size and sewing all the blocks together. Not
all the fabric was actually quilting material so with some of the
pieces I had to make a double layered block. In the end
I made the whole quilt in five different
sections. Creativity is like therapy
for Cecile. I cant survive without
my sewing machine and interesting
materials. Its like a meditation
session for me!

BEESWAX AND COCONUT OIL LOTION BARS

MINI PINEAPPLE CHOCS

Keep your skin smooth and moisturised this holiday with our
simple-to-make lotion bars.

YOU WILL NEED


700g block of
beeswax
800ml coconut
oil (scented or
unscented)
essential oil in the
fragrance of your
choice (optional)
grater
double boiler or glass
bowl over a pot
spoon
moulds in the shape
of your choice

YOU WILL NEED


chocolate balls in
golden foil (we used
Ferrero Rocher)
toothpicks
glue
mini pineapples,
printed from

TO MAKE

Grate the beeswax into the


container you want to melt it in.
Place the bowl with the grated
beeswax over a pot of boiling
water to melt. This does take
some time so be patient!
Once all the beeswax has
melted add the coconut oil and
mix together while still liquid.
Add 20 to 30 drops of essential
oils, depending on the strength
of fragrance you prefer.
Carefully pour into the moulds.
Set aside to cool overnight.

Trace silhouettes of the printed


pineapple onto gold paper, and
cut them out (you can fit two
onto one A4 page).
Spray the pineapple cut-outs
with spray glue, and stick them
onto the party hats.
Spray paint the pom-poms gold,
and leave to dry.
Using your scissors, poke
a small hole into the top of the
pom-poms.
Spray the top point of the hat with
spray glue, and mount the pompoms on the top. Leave to dry.

Cut out the palm tree trunk and leaves
separately. Use these to trace out the
trunk shape on the brown board, and
the leaf shape on the green board.

Cut out the pieces. Using glue or sticky
tape, tape the leaves and trunk together.

Using sticky tape, attach your stick to
the palm tree.

Draw a rough oval on the back of your
cardboard, and cut out as many as
desired (using your original oval as
a template).

Draw triangular spikes resembling the
top of a pineapple. Cut out as many as
required, using the original as

sticky tape, and attach the swizzle stick
the same way.

Cover your working area with an


old cloth or newspaper.
Cover the top third of the bottle
with tape to prevent the glue from
sticking to the bottle top.
Wear latex gloves. In a wellventilated area, apply spray
adhesive glue to each bottle
in small sections and sprinkle
with glitter until the bottle is well
covered in all sections.
Shake off excess glitter, then
display! Feel free to put sparkly
bottles on ice. Some glitter will
come off when the ice melts.

when they hang, they are heavier
at the bottom.
Thread the twine through both holes of
each pineapple.
Space the pineapples evenly, and hang
the bunting as desired.

HOW TO MAKE A T-SHIRT SHOPPING BAG


It is great to see so many people reusing fabric grocery bags
at the shops instead of buying more plastic bags (which
make holes in the ozone layer).
I like to be a little bit creative and make my own grocery
bags. Here is an easy way to turn your old T-shirts into
shopping bags and there is no sewing required!
notes
You can jazz up your
bag with decorations,
such as badges,
ribbons and buttons
if you like. Use your
creativity to make
your bag reflect your
personality.

YOU WILL NEED


an old T-shirt
sharp scissors
a bowl
a pencil or laundry
marker pen

TO MAKE

Place the bowl over the


neckline and trace around
it using your pencil or
laundry pen. Cut out
a semi-circular shape.

Turn the T-shirt inside out


and determine how deep
you want the finished bag
to be. At that point, trace
a line across the bottom
of the T-shirt.

YOU WILL NEED

three empty plastic drinks bottles


with lids (or use as many as you like,
depending on the space available)
a craft knife
a drill
planting soil and compost
any plants (I am using herbs and
vegetables here)
brackets that fit around your bottles

Cut the sleeves off the


T-shirt (I keep the offcuts and use them as
lappies in the kitchen).

Cut slits up to the line


along the bottom of the
T-shirt. The slits should
be about 3 cm apart.

Rinse out your bottles and cut


a little window into them with
a craft knife.
Cut the bottoms off the bottles.
Drill a hole through the lid of each
bottle to allow drainage.
Turn the bottles upside down and
fill them to about halfway with
a mixture of soil and compost.
Plant your plants so that they
peep out through the little
windows.
Secure the brackets to the wall
and, starting from the bottom,
build a bottle tower by slotting the

rather as a fun activity you can enjoy.
Track your progress in an exercise
diary or with a fitness tracker. Dont
punish yourself if you dont get around
to the gym as youd planned. Make up
for it with a 10-minute walk, or a few

in alcohol
When it comes to alcohol, prevention

be having a heavy night, drink at
least a few litres of water beforehand:

A new treatment known as scalp


cooling may be able to prevent
chemotherapy patients from losing
their hair. The treatment uses cold
caps tight-fitting, strap-on hats filled
with gel chilled to between -25C and
-40C to constrict the small blood
vessels around hair follicles, allowing
minimal blood to get through. This
reduces the amount of chemotherapy
medicine that reaches the hair follicles.
The caps are worn up to an hour
before chemo, during treatment, and
for a few hours after. But the tools
needed the caps, gel, a freezer to
cool the gel, and protective gear for
handling the extreme cold are not yet
readily available in South Africa. That
didnt stop our reader, Lizelle Knott,
from trying the treatment. Lizelle, a wife
and mom who survived lymphoma
through chemotherapy at the age of
16, was diagnosed with breast cancer
in her 30s and couldnt accept losing
her hair again. She contacted GVI
Oncology (Cancercare.co.za), and
they helped her to source everything
she needed. She used the cold caps
throughout her six chemotherapy
sessions. Thanks to the -32C cold
caps freezing my head, I managed
to save most of my hair, she says.

Youre in a restaurant with friends


and the bill arrives. What happens
next? Does someone grab the bill
and yell, OK, who had the prawns?
Or do you just split it between you?
Angela, 48, a marketing manager,
says this is when salary differences
between friends can really impact.
I earn good money now, but Ive
seen it from both sides, she says.
I remember when I wasnt earning
much and someone would say, Lets
split the bill. I would think, But dont
you know I cant afford it? Youve
deliberately picked the cheapest
items so splitting the bill isnt fair. Yet
people who earn good money often
assume everyone earns the same
as them. They arent out to offend
theyre just being thoughtless.
Several of Angelas friends earn
much less than she does, but
on the flip side, she also has
a wealthier friend who is bankrolled
by her parents. Shes never had to
rent a flat her parents bought her
one when she was 18. She has no
idea what its like out there, yet that
doesnt stop her thinking shes an
expert. People who have a lot of
money can be inconsiderate.
The microcosm of friendship
reflects our general ignorance about
other peoples earnings. Might our
reluctance to talk about money be
part of the problem? Psychologist
Dr Dorothy Rowe, author of Friends
and Enemies, certainly thinks so.

When I asked people about


money, something thats very rare
in my experience happened they
all gave the same reason for not
wanting to talk about it: If other
people know what I earn theyll
either pity me or envy me. Being
pitied is horrible and being envied
is dangerous people want what
youve got.
But a friendship is a relationship
between people who see each other
as equals the rest of the world
might not, but thats how they see it.

Zethu, 32, a copywriter, agrees.
One of my oldest friends is now
a doctor, married to a dentist, she
says. They have much more money
than the rest of our group of old
school friends. But she doesnt flash
it about. She buys her share of drinks
for everyone and expects everyone
else to buy theirs. The important
thing is we all knew each other when
we were still wearing school shoes.
Our friendship isnt influenced by
social status or income its much

deeper than that.


Zethus experience also illustrates
changing pay disparity. Once upon
a time, a copywriter, la Don Draper
in Mad Men, earned much more
than a doctor. Now healthcare
professionals earn a lot more than
advertising executives.
Pay disparity between friends is
one thing, but what happens if your
partner earns much more, or less,
than you? Journalist Karen, 35, has
experienced both. When I met my ex
I was a broke student and he had
a full-time job, so he used to pay for
lots of things, she recalls. I didnt
expect him to, he just did. Then
he lost his job. By this point I was
working and he expected me to help
him out while he didnt even bother
trying to find a job.
Karen says while she didnt mind
him earning less than she did, she
did mind him thinking he didnt
need to contribute because she had
money coming in. I couldnt enjoy
my success because he resented me
having money while simultaneously
exploiting it, she says. I didnt care
about the inequality of our earnings,
I cared about the skewed power
balance it created. Part of the reason
why we broke up was that he kept
complaining I was obsessed with
money. No I was just the only one
earning any!
If money comes between you
and a friend or partner, its best
to give voice to it, says Rowe.
Relationships can only survive if
disparities of income dont matter.
It doesnt work when one or both
of you only value each other, or
yourselves, for what you do and
what you earn. Wouldnt we all like
to think were worth much more
than just money?

Recent laws preventing smoking near kids under


the age of 18 to protect them from the harmful
effects of second-hand smoke are long overdue,
but should moms and dads be concerned about
the mushrooming of e-cigarette booths in every
shopping mall? Originally intended to wean
smokers off cigarettes, marketers might have us
and our impressionable teenagers perceiving
e-cigarettes as a cool new trend...
Instead of producing smoke from combustion,
electronic cigarettes, or e-cigarettes, produce
vapour from liquid containing nicotine.
The act of inhaling e-cigarettes is
known as vaping. The odourless,
colourless vapour is allegedly
neither toxic nor harmful as
secondary smoke, making it
supposedly safe to smoke in
closed public spaces. Even
in the US, where research is
very limited, findings illustrate
a need for further testing before
e-cigarettes can be portrayed as
a safe alternative to traditional
smoking for smokers and those
breathing in the air around them.

Spring
Potty training a toddler

with teaching your
teenager to drive.
Theres only one way
theyre going to get the hang
of it, and thats
by practise.
Explanations,
star charts,
musical potty
thrones they
can only take
you so far. Until
a child has had the
experience of wearing the undies and
going to the potty (or not getting to the
potty, as the case may be), its all just
theory. Thats why the best method is to
wait until spring and let them run around
outdoors, without a nappy.
For some, this is also time for spring
cleaning. I say, wait until the kids move
out. Its only another 18 years or so.
Children are the mechanism by which
stuff enters the home. Once, I lived
a simple life, buying the occasional
book, some light groceries, the odd
item of clothing. Then I had children,
and thus commenced a pitched battle
against things made of plastic, starting
with farm animals and blocks, and
graduating to cellphone accessories
and rugby mouth guards.
Spring is also the time to apply your
mind to a very important matter what
to dress your toddler in for Halloween.
This is significant, particularly for
first-time parents. Personally, I favour

cute over ghoulish for small humans.


A lady bug is nice. A pumpkin. Some
sort of small mammal, a bunny or kitty

Summer
This is the season when we realise
how simple parenting can be. A basin
of water, a couple of kitchen items,
a watermelon, and the afternoon is
pretty much taken care of. Theres
something about dipping a small child
into water that just works.
Summer also means the sun and
mozzies. The two have a lot in common.
You can be an exemplary parent day
in and day out, but one small slip, and
the whole effort is for nought. Miss
a patch and the poor little thing is burnt
to a frazzle/eaten alive. One of my
memorable bad mom moments took

place on a weekend in Mpumalanga.


I popped my darling boy into his travel
cot and plugged in the electric mozzie
discourager. Unfortunately, the plug was
not working, and I woke to find a poor
puffed-up knobbly little thing scratching
furiously. We counted 68 mozzie bites
on the very small surface area that
constitutes a one-year-old.
Late summer also means back to
school (or first time to school). Happy
days! Its fun shopping for school lunch
snacks, and think of all the oodles
of time youll have while children are
occupied for big chunks of the day.
(Youve forgotten about the schoolrelated admin thats about to rain
down on your head!)

Autumn
The lovely thing about autumn is the
arrival of winter baby clothes. Were
fortunate to live in an era blessed with
a range of snuggly fleecy materials, and
onesies with ears. You can also start
cold weather cooking, in particular, tasty
soups in which multiple vegetables lurk
palatably, ready to be eaten by children.

Winter
Its now that you discover one of the little
design flaws in the almost perfect being
that is a small child: their nostrils are not
big enough. A tiny bit of snot the size
of a grain of rice blocks up the whole
system, turning your cheery little baba
into a wheezing, whining misery.
Snuggle the snotty noonoo in the
bunny onesies and remember that
spring is around the corner.

oping skills are brain habits, and if they arent learnt


by the time children are 11 or 12, kids are more
likely to struggle with the emotional changes and
challenges that affect their ability to get over stress,
anger and sadness. Feelings originate in the brain, and
being able to cope helps us feel more capable and confident.
A brain that doesnt cope releases stress hormones over
long periods, which interferes with the ability to learn and pay
attention. This goes for not being able to get over emotional
pain, too. Healthy coping skills help kids deal with stress and
the ability to focus on learning new facts and ideas. Plus, it
makes them feel better about their surroundings.

WHAT IS INSULIN RESISTANCE?


Insulin is a hormone made by the pancreas
that helps cells absorb glucose (sugar) from
the blood to use as energy. Your body digests
foods that contain carbohydrates and releases
them as glucose into your blood. Insulin, which
is released when you eat, helps the body
maintain a healthy level of circulating glucose by
allowing glucose from the blood to go into the
cells. This lowers blood sugar, and the cells use
the glucose for energy.
Some people, including children, develop
insulin resistance, which means the pancreas
produces insulin but the cells dont use it as
well as they should, leading to a build-up of
sugar in the blood. If blood glucose levels are
higher than normal but arent high enough to be
considered Type 2 diabetes, youre said to be
prediabetic. Obesity is a contributing factor for
those who are insulin resistant, and they may
go on to develop Type 2 diabetes. A sedentary
lifestyle can also result in prediabetes or Type 2
diabetes, especially if youre also overweight.

Nasal irrigation is particularly useful for treating


rhinitis (hay fever): post-nasal drip, sneezing, nasal
dryness and congestion. It helps by rinsing out
allergens and irritants from the nose. Saline rinses
also clean the nasal lining. Its wise to use nasal
irrigation before medicated sprays to get a better
effect from the medication.
Nasal lavage with warmed saline can be
performed once or even twice daily if symptoms
are bad. Nasal lavage carries few risks when
performed correctly and using saline made with
sterilised water. Saline nasal sprays and irrigation
kits (with saline mixes) can be bought over-thecounter, while making your own solution might
be more cost-effective. Some moms swear by
neti pots as a non-medicated way of alleviating
the annoying symptoms of hay fever obviously
when their kids are old enough and dont mind
this method of flushing out the nasal passages
and sinuses over a basin. At least 200ml of fluid
(salt solution made with distilled or boiled-andcooled water or sterile saline, not tap water) is
recommended for each nostril.
Nasal glucocorticoids (steroids) delivered by a
nasal spray are the first-line medicated treatment
for the symptoms of allergic rhinitis. They have
few side effects and dramatically relieve
symptoms in most cases. Studies have shown
that nasal glucocorticoids are more effective
than oral antihistamines for symptom relief.

which germinating seeds love,
as well as allowing light in.
(Dont forget to punch some drainage
holes in the bottom, otherwise you will
waterlog the seeds.) Shallow bonsai
containers are also a good choice.
Different seeds will germinate at
different rates, so dont mix varieties
together unless you know they will
grow at the same speed. If you want
mixed microgreens, rather grow each
type of seed in a separate container.

(Larger seeds, such as peas,


mealies and chickpeas, benefit
from being soaked for 24 hours
before sowing.) Add a 4 to 6cm-

When growing microgreens,


start with untreated seed as you
dont want them contaminated with
pesticides and fungicides. Often we
have many more seeds than we can
use in our vegetable gardens and, as
seeds have limited viability, growing
microgreens is a great way to use
these up. All of the following and
more are suitable: alfalfa, amaranth,
Asian greens, beetroot, broccoli,
buckwheat, cabbage, cauliflower,
celery, chickpeas, chives, clover, flax,
kale, lentils, lettuce, mealies, mustard,
onions, peas, quinoa, radish, rocket,
sesame, spinach, sunflowers, Swiss
chard, turnip, watercress and many
herbs. Recycled plastic takeaway

containers are ideal for growing


microgreens, with the lid

to the container. (If growing in an
outside bed, the soil should be raked
as smooth as possible before sowing.)
Moisten the soil and firm it down
gently. Sprinkle the seeds evenly over
the entire surface. Sow the seed quite
thickly you will be harvesting them
quite small, so they dont need the
same space as an adult plant.
For small seeds, cover them with
a layer of finely sieved compost, and
press down again gently. Larger
seeds dont need this. An alternative
to covering with compost is to cover
the seeds with thin cloth or paper towel
and spray with a mister until completely
damp. This creates a moistureretaining blanket for the seeds and
works well for larger varieties. (Once
the seeds germinate they will start
pushing the paper towel or cloth up
and it needs to be removed.) Covering
the containers with a lid will speed up
germination. Either use the takeaway
plastic lids, or thin clear plastic shower
caps. Place the containers on a warm
light windowsill or shelf.

They need to be watered every


day so position them where
you will see them. Check that
they dont get too humid and hot
under the lids, otherwise mould can
form or the heat can even cook the
seeds. A germinating seed must stay
moist and if the growing medium is
allowed to dry out, the seed will die.
Water the seeds every day, and in
hotter climates twice a day. Once
the seeds have all germinated,
remove the lids. Depending on the
microgreen, they can be harvested
within 7 to 14 days by snipping them
off at the surface with scissors. They
do not keep well, so it is best to
harvest them just before eating.

or even a windowsill. They are quickgrowing and add a healthy dash of
home-grown taste to a meal. Although
suited to mini spaces, they can just as
easily be grown outdoors in a larger
vegetable garden. Bigger than sprouts
and smaller than baby salad leaves,
microgreens are picked once they have
developed two true leaves. These are
ones that are produced from a stem,
not the seed. This means the plant has
already developed roots and therefore
contains more nutrients and flavour
than a sprout. Unlike sprouts, which
need only water, microgreens are
rooted in a thin layer of fertile growing
medium. Although they require a bit
more care than sprouts, microgreens
provide a much wider range of
textures, shapes and colours.

through a stressful situation, what would you say?
Parenting is not always easy, but its the most vital role
in your life and the most fulfilling. Seek the answers and
support that are needed in order to help your child. I see
parents who have applied dynamics from my book and
the absolute relief when they reach the turnaround point
they were looking for. Their children naturally share in the
dynamic change. Happy children happy parents.
Have todays parents lost control of their children?
No, its not a control dynamic. Parents can feel
challenged at times in their parenting approach and
possibly even helpless when they see behaviour in
their children that society may label as difficult. Some
tweaking in a parenting style resolves many of these
behavioural dynamics. My book takes a parent through
a self-help assessment of parent and child behavioural
dynamics. One of the aims is to assist in identifying
aspects that need tweaking. It also
provides solutions to implement so as
to effect the change they would require.
What is your number one rule
regarding technology?
Balance as with anything in life.
Dont overexpose, and keep it age
appropriate. Make time to put it aside
each day and spend time together
without the intrusion of technology.

Dealing with an anxious pet


Does your pet chew or scratch
everything in sight when you leave the
house? Does she howl until you return

youre away? Dont label your pet as
being badly behaved just yet she

15 minutes before and after leaving
the house. This will teach her that
your comings and goings are
nothing to get excited about.
Try gathering your things together
and, instead of leaving, watch TV
for a while instead. Over time
this may help to lower her predeparture anxiety.
Make sure your pet gets enough
stimulation and exercise during
the day.
Avoid punishing your pet when she
does something bad while youre out
of the house this will only intensify
her anxiety.
For indoor pets, play a CD with
white noise while youre out.
If all else fails, ask your vet for
advice. He will be able to offer
suggestions and, if necessary,
prescribe anti-anxiety medication.

Yebo,
T

he lanky dude with the


bookish specs rose slowly
from his easy chair in the little
park across the road from
Lebos Backpackers in Orlando West,
Soweto. The red cycling helmet that he
wore like a crown made him look even
lankier, as he stretched out a hand to
introduce himself with a drawl.
The name is Jazz, he said, Jazz
Ngwenya. And then, because we had
journeyed all the way from the other
side of the mine dump, he added:
Ngwenya means crocodile. He smiled,
not like a crocodile, but like a man
whose name is Jazz, and he gestured
at his fleet of mountain bikes and told
us to take our pick.

to attend the briefing with Jazz. He
started by telling us about the most
important part of a bicycle, which
I thought was the helmet, but he
pointed out was the brake. Then he
told us the first of many little-known
facts about Soweto, which was:
Soweto is a place of hills.
The good news, he continued, was
that according to the laws of physics,
what goes up, must come down. And
so we set off, with Jazz leading the
way, Amanda, Rachel, and her friend
Bronwyn behind, and me right at the
back, pedalling furiously and thinking
about the valleys.

He started by telling us about the most important


part of a bicycle, which I thought was the helmet,
but he pointed out was the brake
I picked a bike that looked a little
rickety, until I hopped on board, sped
off around the corner, wobbled through
a pothole, and realised it was a lot
rickety. Or maybe it was just me. You
never forget how to ride a bicycle, but
over time, you forget how to stop.
I scraped my shoes on the tarmac,

Like the rest of Joburg, Soweto


has very few formal cycle lanes, but
thankfully, tourists on bicycles have
become common enough for them
to be granted a small strip of territory
on the extreme left of the taxi lane, or
pavement, as it is sometimes called.
There was a lot of hooting as the

traffic overtook us, which I took to be


a sign of friendly greeting. I wanted to
wave back, but I was worried about
taking my hands off the brakes, so
I just followed Jazzs advice and called
out Yebo! every now and again.
We stopped on an open piece of
land, and Jazz swept his hand across
the panorama of dry, patchy veld,
and the grass-covered hillocks in the
distance, and in between, the rows
and rows of houses and the icons of
Orlando, the soccer stadium and the
brightly painted cooling towers.
Ola! said Jazz, to people who were
walking and driving by. It was Spanish
for Yebo, a legacy of the jubilant
cosmopolitanism of the World Cup,
although I began to suspect that Jazz
had actually taught it to the Spaniards.
We followed him to Vilakazi Street,
where the air was pumping with the
thump of House music and the buzz
of the crowd, strolling up and down
around Number 8115, the humble
facebrick house that Nelson Mandela
once called home.
Soweto is the heart and soul of
Joburg, and there are few better
ways to see it than from the saddle
of a bicycle, in the slipstream of
a man named Jazz, free-wheeling
on the downhills and taking it nice
and easy, waving to everyone you
meet, on the way back up.

Greekstyle Yoghurt
30ml honey
125ml PnP Full Cream Milk
a few ice cubes

for 3 freshly cut peaches.

for 1 chopped mango, the
pulp of 1 granadilla and
a sprig of fresh mint.

Blitz everything in a food


processor until smooth.
Serve immediately with
fresh berries.

300g PnP Cake Wheat Flour
30ml (2T) PnP Castor Sugar
10g sachet active dry yeast
pinch of salt
375ml (1 cups) PnP Full
Cream Milk
170g PnP Salted Butter, melted
2 PnP Free Range Eggs
honey, to serve
fresh PnP Berries, to serve

1 Combine the flour, castor


sugar, yeast and salt and mix with
a wooden spoon or hand mixer.
2 Whisk together the milk,
butter and eggs.
3 Add the wet ingredients to the
dry ingredients and mix until
combined. Place in a warm area
until doubled in size.
4 Heat a small knob of butter in a
non-stick pan and scoop spoonfuls
of the batter into the pan. Fry until
golden, turning halfway.
5 Serve with honey and fresh berries.

Delicious variants
Blueberry flapjacks: Add 180ml
( cup) fresh PnP Blueberries to
the batter and fry as above.
Traditional pancakes: Add
60ml ( cup) PnP Full Cream
Milk to the mixture until thinned to
a runny batter. Fry as above and
serve with cinnamon sugar.

2 PnP Eggs
125ml ( cup) PnP No Name
Cooking Oil
160g (185ml) PnP Brown Sugar
500ml (2 cups) PnP Full
Cream Milk
5ml (1t) vanilla essence
250ml (1 cup) wholewheat flour
375ml (1 cups) PnP Cake
Wheat Flour
500ml (2 cups) digestive bran
pinch of salt
10ml (2t) bicarbonate of soda
250ml (1 cup) dates, chopped
250ml (1 cup) dried fruit
cake mix

Preheat oven to 180C.


Line a muffin tin with casings.
Whisk together the eggs, oil,
sugar, milk and vanilla essence.
Combine the wholewheat flour,
cake wheat flour, digestive bran,
salt and bicarbonate of soda.
Make a well in the centre of
the dry ingredients. Add the
egg mixture and mix well. Add
the dates and dried fruit and
mix until just combined.
Rest the mixture for at least
30 minutes but preferably
overnight in an airtight
container, for rising purposes.
Spoon the mixture into the prepared
muffin tins. Bake for 20-25 minutes
or until a skewer inserted into the
muffin comes out clean.

Something different
Apple and cinnamon muffins:
Substitute the dried fruit cake mix with
500ml (2 cups) grated PnP Apple,
125ml splintered almonds and add
10ml (2 tsp) PnP Ground Cinnamon.
Banana and pecan muffins:
Substitute the dried fruit cake mix with
250ml (1 cup) mashed PnP Banana and
add 125ml ( cup) chopped pecans.
