SUMMARY

The Correlation between Food Consumption and Nutritional Status with The Incident of
Hypertension among Elderly (Study in the Integrated Health Care of Elderly, Working
Areas Wuluhan Primary Health Center of Jember District); Rina Fitriana; 112110101038;
2015; 144 pages; Departement of Public Health Nutrition, Faculty of Public Health, Jember

Hypertension is one of the non infectious diseases often occurs in elderly. Based on
national health research data in 2013, the prevalence of hypertension in Indonesia was 25,8%.
Hypertension in Indonesia was the third leading cause of death after stroke and tuberculosis,
reaching 6,7% of the mortality population in all ages. The cause of hypertension is not known
exactly, but there are some risk factors that can be lead to increase blood pressure, which are
consumption high sodium, high saturated fat, and low fibers.
The purpose of this study is to analyze the correlation between food consumption and
nutritional status with the incident of hypertension in integrated health care of elderly
, working areas of Wuluhan primary health centre of Jember district in 2015. This study was
analytic observational with cross sectional approach. The population of this study was 321
elderly with 71 respondents as the samples. The result of this study were analyzed by using
statistical test Cramer Coeficient C. This study was done in the integrated health care of elderly
on Juli-August 2015. There were two variables in this study, the independent variables which
include: the characteristic of elderly (age, sex, education, knowledge, income, employment, and
genetic), nutritional status, the level and pattern consumption of sodium, fiber, saturated fat and
dependent variable which includes hypertension on the elderly.
The results of the univariate analyze showed that the distribution of the respondents based
on the characteristics of age for elderly were 60-70 years (80,3%), female (91,5%), basic
education (97,2%), moderate knowledge (49,3%), levels income less than IDR of Jember district
(84,5%), farmers (62%), and there was no family history of hypertension (70,4%). Blood
pressure of the majority of the respondents were in the category of severe hypertension (39,4%).
The nutritional status of the majority of the respondents were in the over category (49,4%).
Sodium consumption level of the respondents more than 2400 mg/day (59,2%), the level of

fibers consumption less than 25 gram/day (80,3%), and the levels of saturated fat consumption
more than 8% of total energy (63,4%). The results of bivariate analyzing by using Cramer
Coeficient C test showed that there was a correlation between the level of knowledge, over
nutritional status, level of sodium consumption was more than 2400 mg/day, fibers less than 25
gram/day, and saturated was fat more than equal to 8% of total energy needs with hypertension
among elderly.
Based on the study, suggestions that could be given to Wuluhan Primary Health Center by
doing counseling about food needed and must be restricted to be consumed by the elderly
regularly in the elderly group (recitation), advocating the head of the village of each region to reactivate the elderly cadres integrated health care who were not active in order the elderly can get
a medical examination like another elderly, and demonstrating healthy food for the elderly. For
people, especially the elderly, suggested to consume food sources of potassium and antioxidants
that was beneficial for their health, although no complaints conduct a routine check up at least 1
time a week to see the blood pressure of elderly at the nearest health facility, and familiarize with
a healthy lifestyle. For further research can make this study as a reference, do research with
variable macro-nutrients, infectious diseases, and hypertension risk factor that can be modified
such as smoking and stress levels, and conduct research by providing treatment with the DASH
diet (Dietary of Approaches to Stop Hypertension) for patients with hypertension.
