DIJON POTATO SALAD

YIELD: 4 SERVINGS

INGREDIENTS
1.5 lbs Red new potatoes
(scrubbed & halved)
1 Tbsp White wine vinegar
1 Tbsp Dijon mustard
Coarse salt & ground pepper
2 Tbsp Olive oil
1/2 cup Fresh parsley, chopped

DIRECTIONS
Place a steamer basket in a
saucepan filled with 1 inch of
water. Bring to a gentle boil
and add potatoes. Cover, cook
just until tender, 15-20
minutes, tossing occasionally.
In a serving bowl, combine

vinegar and Dijon; season with


salt and pepper. Add hot
cooked potatoes; toss. Let cool,
tossing occasionally.

treat. Grilled veggies make great sides!

Be creative! Add it to desserts or infuse


your water!

Add oil and parsley to cooled

potato mixture. Season with


salt and pepper, and toss.
