some of our best holiday
memories? The simple
pleasure of eating good

Lamb Shank - with


Wasabi Mash
INGREDIENTS
2 tablespoons plain flour
1/2 teaspoon Chinese five-spice
powder
4 lamb shanks, Frenched
40ml (2 tablespoons) olive oil
1 onion, finely chopped
4 garlic cloves, crushed
1 small red chilli, seeds removed, finely
sliced
1L (4 cups) beef stock
40ml (2 tablespoons) red wine vinegar
40ml (2 tablespoons) oyster sauce
20ml (1 tablespoon) soy sauce
1 teaspoon hoisin sauce
1 teaspoon Szechuan pepper, crushed
2 star anise
1 cinnamon stick
2 teaspoons cornflour
Wasabi mash
400g pontiac or desiree potatoes,
peeled, chopped
40g unsalted butter
1/3 cup (80ml) pure (thin) cream
3 teaspoons wasabi paste
Method
1. Preheat the oven to 180C.
2 Combine the flour and five-spice,
then roll shanks in the seasoned
flour. Heat oil in an ovenproof
casserole dish over medium heat.
Add the shanks and brown on all
sides, then transfer to a plate and set
aside.

3 Add the onion, garlic and chilli to the


pan and cook for a few minutes until
the onion starts to soften. Add the
stock, vinegar, sauces, spices and
lamb.
4 Bring to the boil, then cover and
place in the oven for 1 1/2 hours.
Remove from oven and strain sauce
into a saucepan. Transfer shanks to
a plate.
5 Combine cornflour with a little cold
water, stir into the sauce and bring to
the boil. Cook until thickened, then
pour over shanks.
6 Meanwhile, place potatoes in a
saucepan of cold salted water, bring
to the boil and cook for 10 minutes or
until cooked through. Drain and pass
through a potato ricer or mash well
with a potato masher.
7 Place butter and cream in a
saucepan over low heat. When
butter has melted, add potatoes
and wasabi paste and beat with a
wooden spoon until smooth and
creamy. Season with salt and
pepper.
8 Serve lamb shanks with wasabi
mash.

Chimney Balloons. Stop Draughts


So if you have a rarely
used or non-operating
fireplace and chimney at
home, you might have
noticed at this time of year
that is exactly where you
are getting draughts of cold
air and are losing heat from

then inflated as a tight
fit, stopping draughts,
soot, loss of heat and

place, making this an easy
operation for installation
and can also be deflated in
place, then removed easily.

Horticultural Society
(LHS) 'Daffodil Festival'
is turning 60 and the
celebration is certainly
more than a bunch
of oldies puffing out
candles.
The 60th Daffodil and
Floral Show in Memorial
Hall is having a face lift
with a new layout and
the embellishment of a
'History Room' off the
main foyer, where past
and present members
are honoured for their
contribution to the club
and the community.

LHS's community activities


are all horticulture related
and, though wide spread,
are not widely known.
The garden brightening
the grounds of the new
Leongatha Hospital
Complex is a recent
shared community project,
with LHS contributing
design ideas, plant
donations, funds for
earthworks and such,
and lots of labour. Over
time local parks, the
cemetery and more have
benefited, along with

areas devastated by fires


and floods like nearby
Boolarra and more distant
Kyabram.

Birthday celebrations will


light right up when TV
gardening personality
and author, Stephen
Ryan opens the show.
And all around town,
for the duration of the
show and especially on
Saturday, more than 20
group events and displays
form a Daffodil Festival.
Where in the past there
were parades, these days
the CBD is alive with
the sound of the Brass
Band, antique cars and
rockers rolling. For the
more cerebral there's a
book sale, different styles
of wood working, window
displays and craft work.
And as for art!
For the first time in several
years, the 'Rotary Art
Show' joins the party with
its own big birthday. The
40th Prom Country Art
and Photography Show is
again concurrent with the
Daffodil Show, just down
the road at Mesley Hall.

Known for its high caliber,


the show attracts artists
from near and far and
even better! All works are
for sale.
A teeny bit of icing on
the cake. The website,
Spring is South Gippsland
turns One! From just
an idea a year or so
ago, the website this
year has listings and
information about all kinds
of garden and nature
events throughout the
South Gippsland Region,
opening the 2016 spring
season with the Daffodil
Festival.

A Truly Inspirational League

The Happy Achievers


bowling league is a
league specifically
started to give families
and bowlers with
disabilities a rewarding
and fun outlet on a
Saturday afternoon.
For the past 30 years
Happy Achievers
have made Saturday
afternoons at 2pm an
institution. This is their
story.

The Happy Achievers


bowling league
commenced on 1
February 1986 by Hilary
and Donna Shaw. They
came up with this initiative
for their daughter Kerry.
The league started with
16 bowlers with 5 original
bowlers still bowling to
this day. Other long time
bowlers who joined the
league in 1988 are Dianne
Rowley, Paul Bannister
and Dean Whittle
Hilary Shaw moved away,
Donna ran it for a couple
of years, then Janice
Rowley (Diannes mother)
took over the running of it
dedicating herself to the
league for over 25 years.
In its 30 years the league
has grown in size and now

boasts 40 bowlers, some


bowlers traveling as far as
Trafalgar and Sale every
week to participate.
If you have ever had the
privilege to see the league
in action you would find
not just a very competitive
environment but also
a happy and friendly
atmosphere with lots of
fist pumps and high fives
going around. This is a
fantastic place for people
with disabilities to compete
in a genuine league and
also to meet life long
friends along the way. It
is also a family friendly
environment.
Holding two seasons each

year the league bowls 44


weeks per year and also
holds dinner dances at
the end of each season.
Once again this evening
is a great night for bowlers
and family alike. The
dance floor is full all night
long with lots of smiling
faces. The dances have
been held at different
venues over the years but
most recently has been
held at the Morwell Bowls
Club. The Morwell Bowls
Club have been fantastic
supporters of the league,
even down to donating the
last lot of uniforms to the
bowlers.

During the year the league
also holds family days
where the bowlers family
is invited to participate and
over the Christmas period
Santa even joins them to
have a bowl.

On a sad note, at the end


of their last season in the
middle of July, the Happy
Achievers Bowling League
bowled their last game due

to reasons that were out


of their control. That night
they held their last dinner
dance, although there was
an air of sadness, being
the wonderful sports they
are the bowlers had a
fantastic night. This will
be the end of the Happy
Achievers as a league
but not as a group. Life
long friendships have
been made and bonds

have been formed with


participants and family
alike. Monthly social
meeting are on the cards
for the bowlers. This is
not goodbye, it is see you
around.

Open Day

On Sunday 14 August
the Paynesville Maritime
Museum are holding an
Open Day.
Founded in 2009 with
a view to documenting
and preserving the
maritime history of the
Gippsland Lakes and
East Gippsland. The
region has a rich history
in fishing, steam ships
and unique boat builders
and it really deserves
to be remembered. The
museum exists largely

due to donations and


volunteer researchers so
it's a great event to get
behind. The event is free
to attend and coincides
with the Paynesville
Lions Club Market, and
will be held in Shed 2 so

through the maritime

Bass Coast Shire Council Bleeds by Example to Win Blood Challenge


Bass Coast Shire Council
have helped save 54 lives
by rolling up their sleeves
contributing to and winning
a lifesaving blood donation
campaign.
From 1 April to 30 June,
councils across the nation
competed to see who
could save the most lives
through blood donation
in the Australian Red
Cross Blood Services
inaugural Red25 Councils
Challenge.
Bass Coast Shire Council
made 18 donations
helping them take the win
for the Highest Number
of Donations for a Small
Council in Victoria.

We are really proud of


the contribution made by
our staff and are aiming to
continue to increase our
number of donations, said
Bass Coast Shire Council
CEO Paul Buckley.

Bass Coast Councillor,


Neil Rankine, who has
been donating blood
from the age of 18, also
encouraged anyone who
is able to donate to get
involved. Blood isnt made
in factories, donations are
vital.
The Blood Service has
revealed Wonthaggi
needed more donors
to step-up and fill
appointments during the

last two weeks of June, a


critical time of the year for
blood donations.

While the challenge helped


to bolster winter blood
stocks, as cold and flu
season ramps up the need
for blood never stops.
Councils like Bass Coast
Shire Council have been
fantastic supporters
of blood donation with
individual staff members
donating and also through
the Red25 group donation
program, Blood Service
spokesperson Ms Wendy
Todd said.
Were hoping their
leadership will inspire
other locals to rise to the

occasion and make an


appointment to donate
in blood when the Donor
Mobile Unit returns
between Monday 10
October to Friday 21
October. This will be critical
to helping the one in three
Australians who will need
donated blood this winter.

From Cowgirl to Vegan One Womans Journey of Personal Integrity


Hi fellow Gippslanders.
Ill start at the beginning: I
spent my childhood years,
during the 1970s, in the
south-eastern suburbs of
Melbourne, but suburban
life was very different
back then and the area
where we lived was still
very much surrounded
by paddocks. My dad is
from a small rural village
in Italy, so of course he
always had an enormous
vegetable garden. My
mum sewed our clothes,
cut our hair and used
the produce from dads
vegetable garden to keep
us well fed. I grew up
with three older siblings
and we were raised with
a strong outdoor focus.
It was a happy childhood
but it was also about hard
work and self-sufficiency.

I became a Gippslander
when my dad bought
some vacant land in Nar
Nar Goon when I was
about 10 years old, and
this may sound funny,
but as a little kid I always
thought of myself as a
cowgirl, (maybe because I
watched so many western
movies), so I was in my
element when I was at
Nar Nar Goon. I spent
every weekend there
riding my pony, sometimes
rounding up my dads
cattle, and occasionally
digging in the vegetable
patch. We moved onto a
larger property in West
Gippsland when I was
thirteen, and that felt
perfect for me because the
outdoors is always where
I feel most comfortable. I
was then able to surround
myself with an evergrowing assortment of
animals, which has always
been something that
makes me happy.
I now reside with my
husband and I moved
onto small acreage in
Bunyip more than twenty
years ago. Bunyip is
a great town, which is
slowly growing, but we
still have a relatively small

population, and well


probably live here until we
retire. Weve even joked
about being buried in the
local cemetery after we
die.
I have spent many
years working as a
horticulturalist, (because
my parents instilled in me
their love of gardens), but
Ive spent the last eleven
years in the animal care
industry. Im currently
working as a surgical
nurse in a veterinary
specialist hospital. Much
of our day is spent
conducting CT scans and
carrying out orthopaedic
repair work. All our
patients are referred to us
from General Practice vet
clinics. Its an interesting
job, very satisfying to me,
and I work with a great

team of professional
people.
I dont consider myself
as unique, but certainly
many of my fellow
Gippslanders might
consider me different.
Im a country girl, but Im
vegan, which means I
dont use or consume any
animal products. That
also compels me to be
very particular about what
activities I engage in and
which charities I donate
money to. Ive been vegan
for about twelve years
now.
I guess many people
would feel that was a
contradiction of sorts.
There is an assumption
that country folks are quite
comfortable killing and
eating animals and once
upon a time I certainly
was that person. When
I was younger, homeslaughtering was a regular
event: cattle, sheep, pigs
and poultry and not
many people know this
about me, but in my late
teens my hobbies included
leatherwork and hide
tanning, rabbit shooting
and rodeo riding. So
choosing to be vegan was
a significant change of

eat animals, but also farm
them, and slaughter them.
People can get incredibly
defensive when they
feel like they are being
judged and this can
cause animosity, which is
unpleasant for everybody.

I guess in the end my
love of animals was the
driving force that enabled
me to change my habits.
The transition began in
my early twenties, when
I stopped eating meat
and you can believe me
when I tell you that at that
time I had no intention
of ever becoming vegan.
But as the years went by
I educated myself about
the reality of the practices
that had to take place in
order to produce certain
animal-based products.
I read books, I watched
documentaries, and I had
in depth conversations
with some intelligent
people. Eventually I
decided that to live a life of
integrity I had to align my
heart with my values, (and
it was a painful process
to open my heart), but
Ive never looked back.
Im healthier now, both
physically and emotionally,
than Ive ever been.
I initially thought I was the
only vegan in my area,
but Ive discovered there
are lots of us! And I guess
I shouldnt be surprised
by that. Country people
often build up special
bonds with the animals
they interact with, and
it is the honouring of
those connections which
eventually drives people
to change. From talking
to like-minded others I

can see that although


everyones journey is
different, the end result is
always about embracing
our relationships with
animals. Its about
minimising the negative
impacts that we have on
our fellow beings and on
our planet.
I started a project a couple
of years ago which invited
other vegan country folks
to tell their stories and
not everyone wants to
speak about their journey
in a public forum but the
project has progressed
into a website called Rural
Vegans, and a few of the
vegan country folks in
my network have made
their stories public on that
website. There are lots of
country people currently
in transition toward
a healthier and more
compassionate lifestyle,
and I think its important
for them to know that
they are not alone in their
experiences.
Choosing to be vegan in
a small country town can
be a challenge. When
I removed myself from
the cycles of animal
production I was aware
that some of my friends
and neighbours were
offended by my choices
because they felt it was a
personal criticism against
them and the way they
live their lives. Obviously, I
am interacting all the time

The Rural Vegans project


has two main goals: Firstly
it is about supporting
new vegans in rural and
regional areas, hopefully
lessening the sense of
isolation they may be
feeling, and secondly it
is about bridging the gap
between vegans and nonvegans in country areas,
opening up some dialogue
with farmers and other
rural neighbours so that
local relationships dont
break down.
Country towns are great
places to live, but change
happens slowly, and lots of
people are wary of things
they dont understand.
The profiles on the
website will help others
in a farming community
understand why someone
from an animal-agriculture
background might
suddenly choose to live a
vegan lifestyle.
The Vegan community is
growing. Some friends and
I have recently initiated
the West Gippsland
Vegan Group so that local
vegans can catch up with
others who are on their
wavelength. We try and
meet once a month, and
sometimes its just an
excuse to eat mountains of
vegan food. I think most of
us are shameless foodies!
Theres an ongoing joke
that vegans only eat grass
and twigs but the truth is
that but becoming vegan
takes the experience of
food enjoyment to a whole
new level.
Somebody recently
discovered that chickpea
water, now universally
known as aqua faba,
can be whipped up into
an amazing meringue
for desserts. So the
current trends in vegan
baking include traditional
favourites like pavlova and
lemon meringue pie.
It used to be quite a
challenge dining out, but
its getting easier all the
time. My local pubs and
cafs are pretty good at
catering to people who
dont eat animal products,
particularly if you let them
know youre coming
beforehand. Theyre
always eager to please
and very accommodating.
As for the practical things
I use in my everyday life,
(like gloves and boots),

a lot of local grain stores


carry good quality nonleather gloves which
offer protection when
handling fencing wire or
firewood. And if I cant
find something locally I
can usually find it on the
internet and arrange to
have it posted to me. For
instance, a few years
ago I found a great pair
of steel-capped work
boots on eBay, made by a
cobbler in Melbourne who
uses microfibre instead of
leather. These boots are
of exceptional quality, they
are so comfortable and
incredibly tough.
On our small property
we have a wide range of
species in our care: goats,
sheep, alpacas, and many
others. My childhood pony
is still with us too, and he
is turning 36 in September.
The current headcount on
our property is 50 animals,
but more than half of those
are hens. Most of our
animals are rescues, some
are retirees, and one is
with us in temporary foster
care. They are a funny
bunch of personalities and
they enrich our family life
in a multitude of ways!
To unwind I play the
guitar! And Im not a
great musician, but I am
a passionate songwriter.
Music is a valuable
therapeutic outlet for me.
I also enjoy photography
animals, flowers,
landscapes, rural imagery
and historical architecture
but just as a hobby. I
still spend a bit of time
studying each week for my
job, but then I counteract
that with my adult
colouring books, (which
I know some people find
very amusing, but its a
very relaxing activity which
doesnt require much
effort).

Spring is almost here you can feel the ground starting too wake up! Dont forget!
This is your last month to bur Bare rooted trees, shrubs, roses and vegies at
substantial savings! Some folks are concerned because their gardens are lacking
colour. Not to worry. To mention just a few ideas. Have a look at the naked
stems of the 4 Seasons Pack They are a warm gold. Placed near an Acer
Senkaiki with its lovely red stems surrounded by white primulas and you have a
beautiful combination.

Ensure you are not


growing plants of the
same type as last year
you can do this twice
but then need to rest the
area. This is called crop
rotation. Failure to do
this will result in pests,
diseases and nutritional
problems. It will eventual
occur.

I love the white bark of a snow gum. The silver on a Birch Trunk and the mottled
pinky grey of a Crepe Myrtle.
For foliage colour, how about a Coprosmas. These shiny-leafed shrubs come
in a myriad of hues from pink to red to yellow to almost black. The flowers are
insignificant, but that leaf. Wow!! Lorapetalums have purple to red foliage with
horizontal stems, giving a Japanesy feel. Stachyurus praecox has that same
feeling, but white bell flowers hang in racemes from the arching stems Elegance!
Another shrub in full flight right now is the Pieris clan They vary in size from one
to four metres, all having Lily of the Valley like flowers with a pendulous habit.
Lets not forget Daphnes. The new one, Eternal Fragrance, either pink or white not
only flowers now but spots throughout the year. Garrya Ellipica grows to 3 metres
and is so graceful with her long greenish catkins. Oops; here it is time to hand
this in, and I havent even touched on flowers . Try primulas, polyanthus, violas,
pansy, allysum, or linaria for just a start. Cyclamen are looking great too! Try just
a few of these plants and we guarantee they will brighten any winter day. Ask your
Nursery person and you will find this is just the tip of the iceburg! Cheers.

them to the compost pile.
Except for the really nasty
ones like Couch, Oxalis,
Kikuyu and Sorrel.

If the soil has a lot of


clay in the soil (more
than 20%) add 2kg of
powdered gypsum to
improve soil structure.
Add any available worm
castings to the soil.
Mix all these in with
a good strong garden
fork, ensuring all these
components are well
mixed and the soil clumps
are broken down. Once
this is done check the soil
pH. This should be 6.5 for
your spring vegetables.
Allow the bed to sit for
three weeks and then dig
the whole garden over
again. Allow to sit for
another three weeks and
then prepare to plant.
If you have followed
both the checklists and
task, you should have
a fantastic vegetable
garden this Spring and
Summer.

Versatile cockatiel has wide appeal

The Cockatiel
(nymphicus hollandicus)
comes in a multitude of
different colours these
days, is easily affordable,
and, once tame from
being hand reared
makes an adorable and
devoted pet. Relishing
attention and human
companionship both
sexes can be taught to
say a number of short
sentences and phrases.
This Aussie is often
considered the connecting
link between Cockatoos
and other species of
parrots. The Cockatiel is
often a bird owners first
purchase up the ladder
of the parrot family after
owning a Budgie. It is fast
becoming the nations
favourite pet and aviary
bird. Hand reared birds
make the most wonderful
pets and become quite
devoted to their owners.
Breeding birds are usually
eager to go to nest and
adapt well to aviary life.
Cockatiels are sweet docile
birds and should never
be housed with larger or
more aggressive species.
Even Budgies or some
of the more aggressive

finches can monopolise


feed bowls and harass
cockatiels especially during
the breeding season.

Cockatiels as with other


parrots fly back and forth
not up and down like
helicopters therefore they
should be housed in cages
or aviaries that are longer
rather than taller and round
cages are a real no-no and
this goes for all parrots like
species who absolutely hate
this type of cage, they need
space to spread their wings
and move around freely a
round and tall skinny cage
does not allow this.
Cages housing pet birds
should be positioned away
from direct draughts ~~ this
includes heaters, windows,
and air conditioners, your
pet birds cage should never
to near the kitchen area of
the home as cooking fumes
can be harmful to or even
kill your pet. House hold
pets and small children
should also not be left
alone with your bird even if
it is as you consider safely
in its cage as accidents
do happen and you risk
cages getting knocked over
or doors opened. If you

choose to cover your birds


cage at night that is fine
but if you start to do this
you must continue to do so
as your bird will become
to depend on this as it
provides security and also
warmth on cold nights.

Perches should be of
varying thicknesses which
helps with exercising the
feet, natural perches of
such things as eucalyptus,
willow, or tea tree are ideal

fans, open toilet bowls,
windows without any form
of curtaining (birds see a
pane of glass as a clear
space).cooking fumes,
overheated Teflon products
and pans of hot/boiling
water. It is essential for
the safety of your bird that
these issues are addressed
and no bird is left flying free
unsupervised.

Situated in a relaxed
pocket of seaside
Melbourne suburb
Sandringham,
Brooklands Classic Cars
has been a haven for
classic car enthusiasts
for 10 years. Adam Davis
had the chance to chat
with company owner,
Paul Sabine.
Its funny how all stress
seems to fade away from
the mind when one who
has a passion for classic
automobiles pulls up
outside Brooklands. Take
a wander through the wellpresented sales area and
drink it all in, the shapes
and atmosphere of an
era passed coming to the
forefront. Your imagination
picks for you a different
story as you admire each
model. Aston Martin,
Maserati, Ferrari, Porsche,
Jaguar, they are all here,
ready to be savoured for
those with the will and the
way. After several minutes
of daydreaming, I look up
and notice that owner of
the family-run affair Paul
Sabine is in the office, and
he beckons me into his
office to so talk about his
business.
Paul Sabine is vastly
experienced in the
automotive world, helping
to start the Mercedes

Benz car club of Victoria


in the early 70s after
being part of the MG car
club and enjoying their
motoring events, at one
stage holding the record
at the Morwell hill climb.
The Aston Martin Owners
Club also appealed, and
he quickly moved up
through the ranks there,
becoming the Australian
representative on the
AMOC Committee of
Management (UK). He
created Tickford car sales
in 1979, Astons being
his main business, also
running the Melbourne
Classic Car Show between
1985 and 1989. As auction
director role with Shannons
Paul was instrumental in
developing the Grand Prix
Auction when the Formula
1 circus moved to Albert
Park. Finally, he branched
out with former business
partner Murray Richards
to establish Brooklands in
1996.
The main thrust of
Brooklands continues to be
Aston Martin sales, along
with the extensive parts
division specialising in the
British marque. Talking
with Paul, you realise that
Astons are more than a
way of life for him- they
are clearly a passion. His
previous business, Tickford
sales, was established in

1979 primarily as an Aston


sales exercise, and when
I ask him which car he
most regrets selling, he
assumes a look that says
as much as his words.
The unequivocal reply is
The DB4 GT. Sold in
1989, and a misty green in
colour, a photo sits proudly
on the wall of his office.
From a clients perspective,
dealing in classics is done
at a more relaxed pace.
This is unlike a lot of new
car dealerships, where
eager salesman can cause
potential buyers to lose
interest in their quest to
meet a quota. In this light,
Paul sees himself as a
provider of information
and stock rather than
a salesman. The cars
character generally does
a lot of the talking for
itself, and the buyers are
generally enthusiasts
who have some idea of
what they want. Pauls
experience allows him
to compliment the cars
character by providing
the extra information the
enthusiast may require. It
is a method that makes the
process much more inviting
to the client.
We step out of the office
to peruse the current
stock. Sharing space
with the usual Astons are

Gran Turismo (in the true
sense of the phrase, we
arent talking Playstation
here!) and touring cars.
Asked about his current
stars, Paul ponders for
a moment, then states
that they are all stars in
their own way. He feels
that each classic has its
own special appeal to its
own audience. Warming
to the subject, Paul then
cites the 1965 white Alfa
2600 coupe, the 1966 red
Corvette Stingray and the
1973 E-Type Jag roadster
specifically, which sums
up the wonderful diversity
of cars available at
Brooklands.

Paul that he has a passion
for the brutish V8s; When
the racing Astons I drove
got too expensive to
keep competitive my son

get a V8 he says with a

sweep of the stock, to
re-ignite the imagination
in preparation for the drive
home in my modern car.
