This study aimed to create a health beverage from salak fruit bark, which contains antioxidants. Salak bark was treated with oxygen gas for different time periods (6, 12, 18, and 24 hours) and tested for antioxidant activity, polyphenol content, and other properties. Antioxidant activity and polyphenol levels decreased with increased oxidation time. However, longer oxidation time improved the flavor of the bark samples. The results showed that salak bark has health benefits and can be developed into a functional beverage ingredient.

Guided by Ir.Hastami Murdiningsih, MT and Rahmiah Sjafruddin, ST, M.Eng Skin barking has not be usedwell as the lack of public knowledge about the health benefits to the skin barking. Skin barking has many benefits because it contains antioxidant compounds that may counteract free radicals and prevent the development of disease. Therefore, this study aims to create a health beverage ingredients of skin barking. Making health beverage ingredients of skin barking barking begins with the provision of a clean skin, then fed with oxygen gas. Time drainage or administration of oxygen used as study variables. Time used are respectively 6, 12, 18 and 24 hours, provided the skin also control barking without flowing oxygen. After flowing oxygen milled bark barking then be sampled to test the antioxidant activity by DPPH method, the levels of polyphenols by UV - VIS spectrophotometric method, the method reflux caffeine test, test total dissolved solids and water content by gravimetric method, using a water activity meter Aw, test the pH with a pH meter and organoleptic tests . The results of the study for the oxidation of 6 hour period has amounted to 30.82% antioxidant activity, polyphenol content of 0.302%, for the oxidation of 12 hours have antioxidant activity of 28.57%, polyphenol content of 0.238%, for the oxidation of 18 hours have antioxidant activity of 23.57% , polyphenol content of 0.174%, for a 24 hour oxidation have antioxidant activity of 20.54%, polyphenol content of 0.097%, and for skin barking without oxidation have antioxidant activity of 37.20%, polyphenol content of 0.376% . From the analysis it can be concluded that the longer the oxidation time, the lower the antioxidant activity and total polyphenols were obtained, but the length of time of oxidation can enhance the flavor of the skin samples barking on organoleptic testing.
