Anlisis estadstico
Se emplearon los mtodos anlisis de la
varianza y el test de Fisher con el fin de evaluar
los resultados obtenidos empleando un paquete
estadstico SPSS versin 13,0.

Al analizar los resultados de color obtenidos
(tabla 1), se identifica que la parda pastusa es la
variedad que presenta una mayor prdida de la
luminosidad (L*), manifestada en un
comportamiento lineal descendente conforme
avanza el tiempo en almacenamiento. Esta
variedad es la que presenta de acuerdo a los
resultados de actividad reportados en la figura
2, la mayor actividad de la enzima PFO, datos

CONCLUSIONES
La papa Parda Pastusa es la variedad con un
actividad de la PFO significativamente mayor
(p-valor 0,05) que las variedades Pastusa
Suprema e ICA nica, la cual se ve
influenciada por el tiempo de almacenamiento
siendo el da 15 en el que se obtiene, su
mximo potencial al pardeamiento, en las
p-valor
