GINGERBREAD CHRISTMAS CAKE

BEETROOT, RADICCHIO & WALNUT SALAD

A beautiful white Christmas cake with sweet spices and lashings of ginger for the festive season.

A sweet and satisfying salad with a gorgeous Moroccan spiced dressing.

Perfect as a side or on its own for lunch or a light dinner.

250g plain flour

Preheat oven to 160C. Lightly grease UltraPro Round 2.5L Base and set aside.

1 beetroot, peeled & cut into pieces

Combine all cake ingredients in a Thatsa Bowl Junior. Mix until mixture
is smooth.

1 tbs tarragon
2 tbs honey or maple syrup
1-2 tbs (20-40ml) red wine vinegar

1 pinch ground cloves

Transfer mixture into greased UltraPro Round 2.5L Base. Place into oven
to bake uncovered for 30 minutes or until cake bounces back when touched.

Fit the Fusion Master Grater with the Slicer Cone and slice the beetroot.
Place onto a baking tray. Toss with the tarragon, honey or maple syrup, red
wine vinegar, olive oil and salt and pepper. Place into the oven to roast for 30
minutes or until tender and sweetened

1 pinch ground nutmeg

Remove from oven and allow to cool before turning out onto wire rack.

2 tsp baking powder

To make the icing, beat egg whites in the Speedy Chef until beginning to foam.
Gradually add in the icing sugar to create a soft meringue before adding in the
lemon juice to create a more liquid icing (should still be thick enough to hold
shape).

100g walnuts

350g brown or coconut sugar

1 tsp ground ginger
1 tsp cinnamon

1 tsp baking soda

Pinch salt
4 eggs
3 tbs (60ml) molasses
200g butter
200ml milk or light cream
FOR THE ICING
2 egg whites
1 cups pure icing sugar, sifted
1 tbs (20ml) lemon juice
(more if needed)

Pour the icing over the cake and decorate with rosemary sprigs and any other
decorations of choice.
TUPPER TIPS
Dust with icing sugar for a snow effect on the cake after decorating.
Cake can be made gluten free by using gluten free flour.
Substitute dairy products with a vegan alternative (such as soy or almond milk
and Nuttelex) for a dairy-free option.

3 tbs (60ml) olive oil

1 French shallot, peeled

Using the Slicer Cone, coarsely grind the walnuts. Repeat with the French
shallot and radicchio. Place ingredients into an Allegra Bowl and set aside.
Remove beetroot from the oven and toss with all ingredients to combine.
Sprinkle over goats cheese, fresh parsley and olive oil.

1 head radicchio, cut into pieces

TUPPER TIPS
Add on extra vinegar and olive oil to taste.

FOR THE DRESSING

Roast walnuts for more flavour and crunch.

100g goats cheese, crumbled

3 tbs fresh parsley, finely chopped
Olive oil, to drizzle
1 tsp ground coriander
Salt and pepper
