f spring is the start of the silly season, summer is definitely party season. We are just
weeks away from the big family Christmas bash, the New Years Eve with friends and all
those pool parties in between.

When organising parties, I love to use the barbecue as much as possible. Barbecuing for
parties can be as simple as a couple of snags slapped between a slice or two of bread, or
so much more.
What I love about barbecuing is that it is a really forgiving method of cooking. Matching
wines with grilled foods is just as forgiving.
For the majority of us humble barbecuers, most barbecued dishes are relatively simple;
theres a main ingredient (usually a protein of some kind), plus the possibility of various
seasonings in the form of marinades and sauces.
To choose a wine to match, two things need to be considered: firstly, how hearty is the
food, and secondly, what is the dominant flavour? For lighter foods such as white-fleshed
fish, vegetables or chicken breasts, pick a lighter wine. For heartier foods including
sausages, burgers and steak, choose a more robust wine. (Both reds and whites can be
light, medium or full-bodied.) Now, think about flavour. For steaks and butterflied legs of
lamb, even if theyre marinated beforehand, the dominant flavour will almost always be the
meat itself. But with foods like chicken slathered in barbecue sauce or prawns with a fiery
garlic chilli sauce, the sauce or seasoning is the main flavour of the dish. The dominant
flavour is a key thing to consider when selecting a wine.
Here are some suggestions with matching wines to barbecued foods:
Sparkling Wines go well with anything salty, such as oysters natural or Kilpatrick, chicken
breast and/or salmon.
Sauvignon Blanc accompanies grilled veggies such as asparagus, artichoke or witlof and
anything seafood.
Chardonnay is well matched to all things chicken, squid or scallop.
Ros is so versatile, from grilled chicken to BBQ prawns, sashimi or paella. If there is a
mayonnaise or aioli sauce accompanying a dish, think ros.
Cabernet Sauvignon and Merlot go hand in hand with anything beef, from burgers, ribs,
to prime rib on the bone.

razio DElia served his food apprenticeship in restaurants all around Italy as
well as exotic locales such as MonteCarlo andMadagascar before landing in
Australia, yet it is still his Neapolitangrandmothers that provide the greatest
culinary inspiration.
As the co-owner and head chef of thriving restaurant Da Orazio Pizza and Porchetta,
DElia has always had a passion for outstanding food. Born in Naples - the birthplace of
pizza, young DElia spent many hours in the kitchen watching his skilled grandma prepare
authentic Italian dishes. As a young adult, he qualified as a professional chef with a
diploma in hospitality management then cooked his way across Europe and Madagascar.
He first travelled to Australia in 2004 hoping to improve his English skills, and visiting
hischildhood friend who now ownsLucio Pizzeria in Darlinghurst. After a brief return to
Naples to work as a salesman for the family business, DElia returned to Sydney and
reignited his love of authentic Italian cooking. Over the next few years, he was positioned
as head chef at Limoncello in Double Bay, then head chefat Popolo in Rushcutters Bay. He
joined Icebergs in Bondi as co-head chef inlate 2012.
DElias most recent venture, Da Orazio Pizza and Porchetta, offers a stylish beachside
dining experience that successfully captures the authentic warmth and charisma of the Italian culinary culture. In the bustling eastern
suburbs kitchen, DElia cooks his pizzas in an oversized 2.7 tonne wood-fired pizza oven imported all the way from Naples. Fresh

All of Nauticas dishes are designed to share and are generous in their
servings. Indulge in their traditional moussaka: layers of succulent minced
beef, sweet eggplant and creamy bchamel sauce all baked to perfection.
Another favourite is the souvlaki plate, where diners pick from either juicy lamb
or chicken skewers accompanied by delicious Greek salad, pita bread and
refreshing tzatziki.

or preparing for a Christmas gathering? Nautica
has simplified your planning with a three-course
Mediterranean banquet. Begin your dining experience
with heavenly grilled halloumi and a medley of dips with
