The first tim e I heard about this dish, I didnt botch the nam e at all.

Me, Ill have the chicken sharm waram aram larm awahllalrwah, please. The waiter
thought I was such a darling that he wiggled his naked toes right in m y food.
Have you shawarm alaram ad before? Its basically a popular M iddle Eastern wrap
where you grill all kinds of m eat on a huge vertical rotating spit for like, ever. And

then you shave the m eat off and wrap it all up in warm pita bread with grilled
veggies and this piiiim p dressing with tahini and yogurt and lem on. I m ean,
technically this isnt a TRUE shalarwarewalugh because I dont own a spit. Well, I
alm ost did. It was between that and a life-sized glow-in-the-dark blow-up giraffe
AND W E BOTH KNOW W HAT THE OBVIOUS CHOICE IS HERE.

So yeah, check it: youll m arinate the chicken in a stellar m ix of spices, oil and
lem on juice. I let m ine sit overnight, because Im exercising m y patience skills this
sum m er like a good girl.
(You should probably stick your finger in that m arinade <before you add the
chicken!> and taste it and freak your face and annoy your husband for the 20th tim e
that hour. I m ean day okay hour.)
And then saut som e onions and peppers. Do a little dance. Grill the chicken. Slap ya

Really. Really, really really. The warm , soft pitas cradling all of the spicy, tender
chicken and veggies, coated in a sm ooth, bright yogurt sauce with fresh tom atoes
and crisp lettuce? Saddle up, kittens.

W hat it took for 4 wraps:


* 1 Tbs. sm oked paprika
* 1 Tbs. ground cum in
* 1 Tbs. ground cardam om
* 1 Tbs. chili powder
* 1 Tbs. ground coriander
* 3 cloves garlic, m inced
* 5 Tbs. extra-virgin olive oil, divided
* 1 lem on
* 2 boneless, skinless chicken breasts
* 1 white onion, sliced
* 1 green bell pepper, sliced
* 1/2 cup cherry tom atoes, halved
* 1/4 cup tahini
* 1/2 cup plain Greek yogurt
* 1/2 cup shredded rom aine lettuce
* 4 pitas
* coarse salt and freshly ground pepper
In a bowl, com bine the paprika, cum in, cardam om , chili powder, coriander, garlic,
juice from half the lem on, a pinch of salt and 3 Tbs. oil. Using a fork, whisk until it
becom es a paste. Add the chicken and toss to coat. Cover and m arinate in fridge for
at least 4 hours, or overnight.
Using an indoor or outdoor grill, grill the chicken until cooked through and browned
on both sides, about 10 m inutes. Cover and let rest 5 m inutes. Thinly slice.
In the m eantim e, heat the rem aining 2 Tbs. oil in a m edium skillet over
m edium -high. Add the onions and saut 3 m inutes, until they start to brown on both
sides. Add the peppers and saut another 3 to 5 m inutes. Season with salt and
pepper.
In a sm all bowl, com bine the tahini, yogurt, juice from the other half of the lem on, a
good pinch of salt and pepper. W hisk to full com bine.
Heat your pitas on the grill, m icrowave, oven, whatevs.
Layer som e grilled veggies, sliced chicken, tom atoes, and a good dollop of the tahini

sauce in each pita. Top with cherry tom atoes and shredded lettuce and get to eatin.
