The Castoro Experience
After 33 years in business, Castoro Cellars still strives to offer one of the most diverse wine
country experiences around. Its no secret they have been producing a wide variety of award
winning wines for decades but for them the experience doesnt stop at the bottle. From live music
and disc golf to yoga and brunch theyve got something for everyone.
In 2014 Castoro debuted the Whale Rock Disc Golf Course and Ranch Tour, a roaring success.
Played much like traditional golf, disc golf uses a disc in the place of ball and clubs. The intent of
the game is to throw a disc into an elevated metal basket instead of a hole as in traditional golf. The
setting of the course is truly stunning with a variety of old growth oak trees, vines and rolling hills.
One of the best things about disc golf is that its family friendly and if nothing else a great excuse to
get outside and enjoy Mother Nature. Located a short distance from our tasting room, its the
perfect way to break up the day and do something a little different.
Another wonderful experience that has grown in the past year is the monthly yoga and brunch
classes. These classes feature an hour long all-levels-yoga class followed by a delicious brunch and
our Methode Champenoise sparkling wine. Guests are able to enjoy early access to the property and
a serene setting for both yoga and the tasty experience that follows! In house Yogini, Lauren
Harvey, teaches all classes, and they strive to utilize the best local food they can find. Reserving a
spot in advance is strongly advised.
Their most diverse offering of the year is Beaverstock, a two day music and arts festival in the
vineyard that features talent from all over the country and activities for all ages. Attendees can
enjoy world-class music, art exhibitions, yoga classes, craft beer, delicious food and of course Dam
Fine Wine! Set amongst a grove of old growth oak trees you really couldnt ask for a better spot to
enjoy this family friendly festival. Beaverstock benefits the local Templeton School District and
takes place the third weekend in September every year so mark your calendars, tell your
friends and join us for an unforgettable time! The entire family is invited to come
experience Castoro Cellars, open daily 10am to 5:30pm.

Winery
Century of Excellence
An integral part of Californias wine history, San Antonio Winery began its legacy
in downtown Los Angeles in 1917, surviving the challenges of Prohibition, the Great
Depression and World War II. As one of the oldest producing wineries in California,
San Antonio Winery was built upon tradition, with four generations of the Riboli family
involved in the art of traditional winemaking.
Luck is always important! However, hard work and risk management are very
important as well, said Anthony Riboli. My grandmother always challenged business
decisions. She always felt that you have to take some risk.
To produce award-winning wines, the Riboli Family has established sustainable
vineyards in Californias most prestigious regions, including the El Pomar District and
Creston AVAs of Paso Robles, Rutherford AVA of Napa Valley, and the Santa Lucia
Highlands and Arroyo Seco AVAs of Monterey County.
Every year is different but we always strive to keep our wines consistent, said Riboli.
I love the whole winemaking process. Mother Nature does not make it easy thats the

TALLEY VINEYARDS
The Arroyo Grande and Edna valleys are made of incredible landscapes of
impressive hills, sprawling farm land and winding country back roads. When
speaking of world-class wines, the region is most recognized for the highly
acclaimed estate vineyards of the Talley family. Talley Vineyards has been
producing luxury Chardonnay and Pinot Noir grapes from these near perfect sites
since 1982 when Don Talley first planted a trial plot at what is now known as the
Rincon Vineyard. Once the trial was deemed a success, a real winery was built
in 1991, the estate vineyard plantings expanded and the Talleys embarked on
the journey which has culminated in an ongoing legacy of producing exemplary
Central Coast wines from the Arroyo Grande and Edna valleys.
The estate vineyards now include 190 acres split between six vineyards in
the area. Rincon, Rosemarys, Monte Sereno and Las Ventanas Vineyards are
all located within the Arroyo Grande AVA. In Edna Valley, Talley has Olivers

8 8 8 8 8 8 8 8 8 For the most part, going wine
tasting is about the easiest thing in
8 8 8
the world, especially in California
8 8 8 8 8 8 8 where wineries and tasting rooms
abound. Mostly, wine tasting is a
8 8 8 8 8 8 8 matter of doing a little research and
planning your day. Here are some
8 8 8 8 8 8 8 8 8 8
tips that have proven to be helpful
8 8 8 and are designed to help make the
sensory adventure of wine tasting
8 8 8 all the more enjoyable.
Before you start off, pack a few
8 8 8 8 8 8
essentials. Water (plenty of
8 8 8 8 8 8 8 8 8 8 water) and something to snack
oncrackers or a baguette.
8 8 8 8 8 8 Many wineries have picnic areas
and there are plenty of delis and
8 8 8 8 8 8 8 8 8 8 8 8 8
bakeries that can make up a lunch
8 8 8 8 8 8 8 for you, or make your own.
Be sure to nibble during the day and
8 8 8 8 8 8 8 8 8 8 8 make time for lunch. Two tips: drink
at least twice as much water as
8 8 8 8 8 8 8 8 8 8 8 8 8
you do wine, and remember that
8 8 8 8 8 8 8 8 8 8 8 8 8 8 8 you dont have to drink everything
poured into your glass.
8 8 8 Dont be afraid to ask questions.
Time again I have heard
8 8 8 8 8 8 8 8 8 8 8 8 8 8 8
knowledgeable winery workers
8 8 8 8 8 say that there is no such thing as
a stupid question, and they mean
8 8 8 that.
You can drink what you want, in the
8 8 8 8 8 8 8 8 8
order you want. If you like reds, say
8 8 8 8 so; if you dont like sweet wines,
speak up. But the idea of starting
8 8 8 8 8 with whites, then going on to reds
and then sweet wines is a good
8 8 8 8 8 8 8 8 8 8 8
guide.
8 8 If there is a particular wine you want
to try and it is not on the list, ask. Most
8 8 8 8 8 tasting rooms are happy to pour a
little if you show enthusiasm.
8 8 8 8 8 8
Look for tasting rooms in towns.
8 8 8 8 8 8 8 8 8 Many of these are cooperative
tasting rooms, where in one place
8 8 8 8 8 8 you might find wines from a
dozen or more small-to-medium
8 8 8 8 8 8 8
premium producers.

Importance of Proper Wine Storage
Taking Care of Your Wine
Weve all heard certain wines must be aged to arrive at their
peak quality. To ensure the aging process goes as intended there
are several variables to take into account. Although the importance
of proper storage is common knowledge few know the details and
adhere to them.
The quick answer for proper storage is to maintain the
following conditions:
1. The ideal temperature is around 55 degrees.
2. Maintain a consistent temperature, avoid fluctuations.
3. Humidity should be high, around 70%.
4. Expose your wine to infrequent and indirect lighting.
5. Keep the cork in contact with the wine, lay your bottles down.
Aging wine is both a science and an art. It is a science because
chemistry is the foundation that drives the process. These BEFORE AND AFTER
reactions are predictable, illustrating why proper storage and
conditions are vital. It is an art because the composition is so Then the real fun starts, the aesthetics. Wine cellars are such a

others would be far more content with the primary flavors!
Winemakers put so much passion and time into creating an
intentional wine. We feel it is important to honor their work and
enjoy the wine the way they intended for it to be enjoyed.
Collectors and enthusiast have more serious storage needs.
Many fine wines will improve with age and will reach their full
potential after years in the bottle. This is why proper storage
is critical. Specific tastes develop at different times during the
maturing period of wine. It is fun and even exciting to note and
track these differences over time. The development of "online" and Green Goods Mission/Vision

A Sit Down Tasting usually

requires an appointment, and
there may be a slightly higher

8 Walk Around Tasting
A Walk Around Tasting is
8 8 a combination of a tour and a
tasting. Your host brings along
several bottles of wine on your
8 8 8 8 tour, and may take you to a
garden area of the winery to pour
8 8 8 the first round. Then you move to
another place within the winery

experience continues until all the
wines are tasted.

Barrel Tasting
8 8 8 Another popular tasting
experience that can be part of a
8 8 tour or a Walk Around is a Barrel
Tasting. Your guide takes a wine
thief, a special siphon placed

to extract tasting samples of a
8 8 8 maturing wine. The sample allows
you to taste what the wine is like

full potential.
Why make an appointment?
8 8 8 8 8
Some wineries are so small
that they need to know when you
8 8 are coming so someone will be
there to greet you. Others have
8 8 8 8 sit-down tastings that start and
end at specific times. Its always
a good idea to schedule your

Bell Street Farm is an acclaimed eatery and market in the heart

I work with local artisans, food purveyors, winemakers and
farmers to create a distinct dining and retail experience at Bell

space is an expression of my lifelong passion for fine foods and we
use only the freshest ingredients found along the California Coast.
The eatery was designed in 2011 and reflects elements found
from the original 1916 building with a modern charm. Gluck
scoured the area to find materials and design elements that would
work with the design. He works with California artisans and
