Fish Bag N Bake parcels with Teriyaki


& Ginger sauce plus 4 salmon pieces
1 tbs vegetable oil
1 long red chilli, deseeded, finely chopped
2 garlic cloves, crushed
1 bunch broccolini, trimmed, quartered
1 bunch baby buk choy, trimmed, halved
150g snow peas, trimmed, thinly sliced
2 tsp sesame oil
steamed jasmine rice, to serve

1 Cook salmon parcels following packet directions.


2 Meanwhile, heat a wok over high heat until hot. Add oil and
swirl to coat. Add chilli and garlic. Stir-fry for 1 minute. Add
broccolini and stalk ends of buk choy. Stir-fry for 2 minutes.
Add snow peas and leafy section of buk choy and toss until
well combined. Add 2 tbs water. Cover and cook for 2 minutes
or until vegies are tender. Add sesame oil, toss until combined.
3 Spoon rice onto serving plates. Transfer cooked fish and
sauce onto rice and serve with vegetables.
