Green Tea
In Japan, at the sushi counter,

Toast Nori
Toasting the nori you will be using for sushi is an important step

nori, known as yaki-nori, but even yaki-nori is better if you

Nori comes in a few different sizes. The size we recommend is

uses of toasted nori require different-size pieces: sometimes
awholesheet, sometimes a half sheet, sometimes strips.
Make Dashi
For this recipe, you will need to buy young ginger, which can be
found in most Asian markets. Young ginger has thin, very pale
yellow skin, sometimes with a pink blush, and is not as fibrous
or as spicy-hot as more mature ginger. The easiest way to peel
ginger, young or older, is with a spoon. The skin is thin enough
that if you scrape the edge of the spoon over the skin, it takes
off all that needs to be removed. This leaves you with much
more ginger than if you use a peeler or a knife.
