WEEK 1

INTRODUCE ASING BOARD

Your restaurant's licensing board displays all of the licenses and operating permits from your city, county and
state that are required to be open for business. The AP makes sure all permits are up to date so the restaurant isn't
fined. Any costs associated with a license fee or violation fine would hit your stores PnL above the Profits After
Controllable PAC line. This week you'll learn about your licensing board and how to keep it up to date.

LICENSING BOARD
The licensing board includes:
Food/Health License (except DC)
Sales and Use Tax License (except OR & MT)
Business License (except OH, CT, NY, VT, ID, IA, NE & TX)
Liquor License (if you sell margaritas and/or beer)
Any other licenses, depending on your state

Throughout your training and as an AP, you'll need to:

Check your license board once a month. If any of your licenses or permits are nearing their expiration date,
email licensing@chipotle.com right away. Your board should only have current licenses and permits posted
unless instructed otherwise
Check your mailbox on a regular basis. All licenses and permits are sent via regular mail
Immediately scan and email any of the following to licensing@chipotle.com as soon as your restaurant
receives them:
Renewals/invoices for license and permit fees
Renewal paperwork from the city, county or state
Tickets or fines
Liquor violations

ACTIVITY
Together with your trainer, review your license board and write down all of your licenses along with their expiration
dates. For any licenses nearing their expiration date, track when you contacted Licensing.
