I first met Kelly in January 2017, shortly after she
arrived in-country to take on the intimidating
role as PC Vanuatus Country Director. When
she visited my site on Efate, my first impression
was simply how experienced she was in her
work as well as how warm and approachable
she was. Through many storians with her, I have
found her life to be an exciting and worldly
one - so much so, I felt compelled to share it.

2 cups flour or 14-16 spoonfuls
1-1 1/2 cup water/milk

Korean Green Onion Pancake

Green onions are one of the easiest things to grow.


Grow some and make this simple but delicious recipe!

1. Mix all ingredients together except water/milk in a bowl.
2. Add water at 1/2 cup increments, mixing well before adding more water.
Once it becomes a solid mass but is still sticky, put it aside and let it rise for 10-15 minutes. This is
a good time to start your fire/charcoal stove.
3. Bring a saucepan of water to boil.
4. Flour your fingers and rip the dumplings from the rest of the mixture. They can be whatever shape

blob again. Since these are fresh noodles they wont take long to cook. Once they float to the top
(or ~2-3 min) they will be cooked and ready for your enjoyment.
