Happy Spring!

This is a great time to be a part of MOMS Club. We have a lot of events


to look forward to this month such as a Delta Ponds Hike, Sanipac Tour,
Firehouse Tour, and Easter Egg Hunt at Solvang Retirement just to name
a few. The warmer weather is a great time to add your own event to the
calendar, as simple as inviting your MOMS Club friends to join you at
your neighborhood park.

Another event I'd like to highlight is our "Moms Night Out" brunch at 5th
Street Market on April 9th. Apart from Moms Night Out always being a
great time filled with kid free conversation we are also hoping to rally
our members to keep Moms Club going strong. We need members to
step up to board positions so that our club can continue to be a
resource for local stay at home moms. Please come with an open mind
and any questions you may have of our current board members.

MOMS Club of Eugene, Oregon
In March, members of MOMS Club of Eugene, Oregon took a guided tour
of the brand new Whole Foods Market located at 353 E Broadway Street.
A friendly employee walked us through each section of the store
pointing out the unique qualities of Whole Foods Market such as an
array of organic and local produce and a full service butcher shop. In

the sustainable seafood department all of the seafood is labeled
according to the Monterey Bay Aquarium Seafood Watch program to
HILLBILLY ELEGY by J.D. Vance make it easy for shoppers to make environmentally informed decisions.

In addition to a deli, Whole Foods Market includes a bakery, cheese


shop, floral department, an olive bar, and a place to buy hot pizza,
tacos, and beer on tap. The deli department includes a delicious variety
of prepared hot and cold foods. Kids can check in at the customer
service counter for a coloring book and stickers and help themselves to
a free piece of fruit from the kids club fruit basket at each visit.

After the tour, we enjoyed a bite to eat and some samples from Ellenos
Greek yogurt at a reserved seating area upstairs. The variety of food and
drinks available along with the private space made this a great (and
free!) location for our group. We should definitely keep Whole Foods
Market on our radar MOMS Club get togethers in the future. Thank you
to Tia Merwin for organizing this great event!

Mexican Beef 'N Rice Skillet

Join us this month in reading Hillbilly Elegy: a Memoir of Family and


Culture in Crisis by J.D. Vance. We meet to discuss the book and enjoy
some delicious home baked goods. Kids can play while we drink coffee
and chat. The book club will meet Wednesday, April 26th at 9am at
Crystal's house. See Facebook event for details.

These recipes for Potstickers and Hot and Sour Soup come from Jasmine
Eacret. We hear they are delicious!

Part of the support we have in MOMS Club of Eugene is helping each
other during times of family additions, upheaval, and stress. This is not
just limited to having a baby, things like moving or illness in the family
also warrant a need for this program. Our Helping Hands program
provides moms with assistance, usually giving several meals in a time of
need. However, this program can provide more than just meals. We can
arrange assistance with child-care, running errands, even a phone tree!
We want all of our members to benefit from this program in a time of
need and we are more than willing to customize an assistance schedule
that works well for each situation. Please let us know if a circumstance
should arise in your life and you feel this program would help you!

Potstickers:
1/2lb ground pork
3/4 C minced mushrooms
1Tbsp soy sauce
3/4 C minced cabbage
3 green onions diced fine
1/2 tsp minced ginger
1/2 tsp minced garlic
cornstartch
75 potsticker wrappers (keep potsticker wrappers covered with plastic
wrap only use 10 at a time to prevent drying out, they don't taste good
when the wrapper dries out.
Oil for frying

Pan for frying


Pot with lid for simmering
Paper towels

Mix together first 7 ingredients


Make a slurry of cornstarch and water

Assemble potstickers:
Put 1Tbsp of mixture into wrapper and take a finger dipped in
cornstarch water slurry wipe along edges and seal potsticker so it looks
like a a half circle/triangle with crimping by smooshing edges with
fingers or potsticker press.

To freeze for later: Freeze potstickers by placing them on a parchment


lined cookie sheet not touching and cover with plastic wrap. After an
hour in the freezer, you can move the potstickers to a ziplock bag.
Keeps 3-6 months depending on how cold your freezer is.
Welcome the birds back this spring by helping your littles make this easy
bird feeder using a toilet paper roll, peanut butter, bird seed, and string. To cook: Set up fry pan and separate pot of simmering water with a lid.
Find instructions at The Resourceful Mama. First heat oil so its really hot then fry potstickers until golden brown.
Transfer fried potstickers to the simmering water to finish cooking (less
than 3 minutes). Place cooked potstickers on paper towels to drain. For
some people it works better to switch the cooking steps, so try it
different ways.
Fa mily Event at Coldfire Pizza
Easy Asian dipping Sauce:
1/2 C soy sauce
2Tbsp rice vinegar
1/4 C honey
3 cloves minced garlic
2T minced ginger
2 tsp sesame seeds
2tsp sesame oil

Simmer in saucepan.
To thicken, make a cornstarch slurry, approx 2Tbsp cornstarch to 2
Tbsp cold or room temp water mixed together before adding to
simmering sauce. Let it cook 5 mins or so stirring occasionally. Let cool
in desired dish because it will thicken a little.

Hot & Sour Soup:

M O M'S NIGHT OUT 2 tablespoons canola oil
1 inch piece fresh ginger, peeled and grated
1 Tablespoon red chile paste, (sriracha)
Brunch and Chat at 5th St Market 1/2 cup canned bamboo shoots, sliced
1/4 cup soy sauce
1/3 cup rice vinegar
1/4 teaspoon salt
1 teaspoon ground white pepper
Pinch sugar
1 box broth (chicken or vegetable)
3 Tablespoons cornstarch mixed with 1/4 cup water
1 large egg, lightly beaten
Green onions, chopped for garnish
Cilantro leaves, chopped for garnish

Heat the oil in a wok or large pot over medium-high heat. Add the
ginger, chili paste, bamboo shoots, cook and stir for 1 minute then add
soy sauce, vinegar, salt, pepper, and sugar mix well. Add broth, bring
the soup to a boil, and simmer for 5 minutes.

Dissolve the cornstarch in the water and stir until smooth. Mix the slurry
into the soup and continue to simmer until the soup thickens.

Remove the soup from the heat and stir in 1 direction to get a current
going, then stop stirring. Slowly pour in the beaten eggs in a steady
