Pancake mix Cake

I first had this cake about 15 years ago. My good


friends mom owned a catering wagon and had
this cake on her menu. Years later, my aunt
passed on her version of the recipe, basically all
the ingredients are the same except hers
increases the pancake mix and an extra egg. I
found her recipe to be a little lighter/fluffier
than my old recipe. I'm not sure were this recipe
originated from, it was also passed on along to
her.
I've heard of people adding orange zest and
substituting orange juice for the milk. I haven't
tried it myself, but heard it works well. I
normally bake this cake in a bundt mold, and
drizzle my cake while its still warm with
condensed milk. My family loves this cake warm
with a big glass of milk, let me tell you this hits
the spot every time!

Pancake Mix Cake

2 1/2 c. complete pancake mix ( I use Krusteaz


complete buttermilk pancake mix, I have used
generic brands before and worked well)
1 c. sugar
5 whole eggs
1 c. oil
1 c. milk

Mix all ingredients with a mixer about 2 to 3


minutes. Pour into a greased and floured bundt
cake mold and bake at 350 degrees for 35 to 45
minutes.

Test with wooden skewer for doneness.


Drizzle with
condensed
milk while
still warm,
slice and
serve.

I bet a maple glaze would be delicious too! I'm


gonna have to make this!

I make my own pancake mix, is that okay or


should I buy the boxed variety? What brand?

This whole condensed milk idea is blowing my
mind! I have never heard of using it like that,
but I bet it is so good. I will be trying this soon!

I agree with Monica, this cake qualifies as
breakfast food! I know I'm making this for
breakfast next Sunday morning! :)

My sister-in-law uses this same recipe for her


tres leches cake. She just adds chopped pecans
to the batter. Delicious!

Krusteaz is such a good pancake mix. Making a
cake with it is even better. This would make a
great breakfast dessert.

I cant wait to try this with Aunt Jemimima
Pumpkin Pancake mix! I dont have a bundt
mold, but I do have a mini bite-size donghnut
mold! Was also thinking of baking a regular
round cake with it, till the top is solid, and then
pouring in a thin cheesecake batter and cooking
some more!

I did this in a cast iron skillet and added
cinnamon, orange zest, sliced almonds, and
covered the top with sliced apples then a
generous pinch of cinnamon sugar to keep them
from oxidizing while cooking.

Love this!! made a 2 layer birthday cake for a
friend using this recipe (and using Hungry Jack
Funfetti Pancake Mix) with another recipe for
cream cheese frosting, had to work with what I
had, came out Amazing!! Tasted just like a
regular box cake mix :):) Awesome!

its a brilliant idea using pancake mix.\But using
1 cup oil .isnt it too much?? is there any
substitute for oil

I suppose you could cut the oil in half and
substitute your milk for buttermilk. I've
never tested it this way, but don't see why
the results wouldnt be tasty.
The amount of oil in this recipe fours sound
alarming, but it's really a moist cake and
doesn't have a greasy taste to it.
