BAKED POTATO PIZZA

4-5 of those little potatoes from the bottom of the bag


1 recipe Pizza Crust
1/4 cup milk
1/3 cup sour cream
salt to taste
1 pound sliced bacon, cut into 1" pieces
1 medium onion
1 small sweet red pepper, chopped
1 1/2 cups shredded mozzerella (6 oz.)
1 1/2 cups shredded Cheddar (6 oz)

Peel and cube the potatoes, and boil them for 20-25 minutes until tender. Prepare
your pizza crust and put it onto a large flat pizza pan. You should have edges for
this recipe (not flat to the outside of the pan). Prick the dough with a fork and
bake it at 350 for 10-15 minutes or until lightly browned. Drain the mashed
potatoes and mash them with the milk, sour cream, and salt until smooth and fluffy.
Spread them over the crust. Cook the bacon (not to a crisp) in a skillet and add
the onion and red pepper. Cook until the bacon is nearly done and the vegetables
tender. Drain and arrange these over the potatoes. Sprinkle the cheeses on top.
Bake at 375 for 20 minutes or until cheese is melted.

NOTE: you can add other toppings like green peppers, mushroom, black olives etc.
