COMIDAS DE GUATEMALA

El mapa culinario guatemalteco se divide regularmente en cinco regiones, segn los puntos
cardinales. Sin embargo, recientemente se ha adoptado un mapa culinario, elaborado por
el INGUAT (Instituto Guatemalteco de Turismo). Guatemala est dividida en 22
departamentos y 23 tnias, cada una de estas etnias as como los departamentos tienen su
propia cocina que vara dependiendo del rea geogrfica donde este situada ya que, no
todos tienen acceso a los mismos cultivos.
Ademas cada uno de los departamentos tiene sus propias celebraciones, ferias y
procesiones; pero todas estn ligadas a sus tradiciones culinarias en todo el pas. En la
mayora de la gastronoma guatemalteca se puede ver la influencia espaola recibida
durante la conquista y la poca colonial.

Clasificacin culinaria
La clasificacin culinaria efectuada por el INGUAT, divide a Guatemala en siete sistemas
tursticos, cada uno distinguindose por sus propias riquezas y caractersticas culinarias.
Aqu les presentamos los siete sistemas tursticos de Guatemala y cada una de las zonas
con sus platillos tpicos.

Guatemala Moderna y Colonial


Es el sistema turstico nmero uno, integrado por los departamentos de Guatemala
y Sacatepquez. Los planos tpicos principales de esta regin son:
Guatemala: Atol de elote, Tamales rojos o colorados y negros , tamalitos de
chipiln, fiambre y chuchitos tostadas.

Aventura del Mundo Maya


ste comprende nicamente el departamento de Petn; sus platos tpicos son: Bollitos de
chaya, Ixpeln, Tamales Peteneros, Ixpasa, Palmito, Empanadas de shiquinche, Pescado
petenero, Cosan, Itsites, Conservas de chip.

Caribe Diferente
Es el sistema nmero cuatro, esta integrado nicamente por el departamento de Izabal; sus
platos tpicos principales son: Pan de coco, Tortilla de harina, Pan de camote, Cazabe
Tapado. A finales del siglo XIX, la mano de obra que se emple en la costa atlntica del pas propici
la inmigracin de personas de las islas del Caribe, quienes trajeron sus propias recetas. El tapado es
bsicamente un caldo de mariscos que se diferencia de otros por la leche de coco.

Verepaces, Paraso Natural


Es el sistema turstico nmero cinco, el cual esta compuesto por Alta Verapaz y Baja
Verapaz. Sus comidas son:
Alta Verapaz: Saquic, Tamal, cobanero, Chirmol, Jubil, Polco de chile, Kak-ik,
Tayutos.

Oriente, Mistico y Natural


El sistema turstico nmero seis, esta integrado por los departamentos de Zacapa, El
Progreso, Chiquimula, Jutiapa y Jalapa. Sus comidas tpicas son:
Zacapa: Quezadillas, empanadas, rosquillas, pan de yemas e iguana en iguashe.
FOODS OF GUATEMALA
The Guatemalan culinary map is regularly divided into five regions, according to the cardinal
points. However, a culinary map has recently been adopted, developed by INGUAT
(Guatemalan Tourism Institute). Guatemala is divided into 22 departments and 23 ethnic

The culinary classification made by INGUAT, divides Guatemala into seven tourist systems,
each distinguished by its own riches and culinary characteristics. Here we present the seven
tourist systems of Guatemala and each of the areas with their typical dishes.

Guatemala Modern and Colonial


It is the number one tourist system, made up of the departments of Guatemala and
Sacatepquez. The main typical plans of this region are:
Guatemala: Atoll of elote, Tamales red or red and black, tamales of chipiln, ham and
toasted chuchitos.

Maya World Adventure


This includes only the department of Petn; Its typical dishes are: Bollitos de chaya, Ixpeln,
Tamales Peteneros, Ixpasa, Palmito, Shiquinche empanadas, Petanthous fish, Cosan,
Itsites, Canned chips.

Different Caribbean
It is system number four, it is integrated only by the department of Izabal; Its main typical
dishes are: Coconut Bread, Flour Tortilla, Sweet Potato Bread, Cazabe Tapado. At the end of
the 19th century, the labor force that was used on the Atlantic coast of the country led to the
immigration of people from the Caribbean islands, who brought their own recipes. The
capping is basically a seafood broth that differs from others by coconut milk.

Verepaces, Natural Paradise


It is the tourist system number five, which is composed of Alta Verapaz and Baja Verapaz.
Your meals are:

Orient, Mystic and Natural


The tourist system number six, is integrated by the departments of Zacapa, El Progreso,
Chiquimula, Jutiapa and Jalapa. Their typical meals are:
Zacapa: Quezadillas, empanadas, donuts, loaves of bread and iguana in iguashe.
