housing evolution.
Sunderland Crescent is one of your housing
projects within the Hobsonville Point
Development. Can you tell us a bit about
it? Hobsonville Point is a whole lot of blocks
of diferent typologies making up a whole
community and Sunderland Crescent is one
of those blocks. In Hobsonville Point it’s all
focussed on medium-density living (example
pictured below) – you have some standalone
houses but very few. This is really, from our
point of view, a great example of where the city
needs to be going, in terms of moving towards
higher-density living. We can’t keep relying on
expanding further and further out and having
standalone houses. Support structures and
service structures are getting stretched and
that’s of course what the Unitary Plan is all about
– intensifying the city environs. So this is a really
great example of how to design and build well
for medium-density living.
———
So we’ll start to see more and more of this type
of housing in Auckland? In my view, there’s
no doubt that we will. Auckland has to do this
because the ability to keep paying for sprawling
infrastructure [is unsustainable]. We still need
to do developments further out in the city but
we also need to intensify in the city environs –
not just the central city. That has two efects: it

with a 22nd generation German baker
on a new venture in Point Chevalier.
TEXT KATE RICHARDS — PHOTOGRAPHY DAVID STRAIGHT

Daily Bread is a soon-to-open Point Chevalier bakery and

deli run by the team behind Orphans Kitchen. An old
art deco bank is becoming a destination championing a
slow approach to food, using age-old techniques for bread
baking, pickling, curing and smoking. Tom Hishon and
Josh Helm (from Orphans Kitchen) have joined Patrick
Welzenbach (who hails from a German baking dynasty
and brings a 600-year-old sourdough starter with him) on 1

the new venture; the trio see the shop as a return to a time
when people purchased groceries from different purveyors
instead of making a weekly trip to the supermarket. They’ll
sell sandwiches, pastries, pretzels and other baked goods,
as well as cured meats, cheeses, pickles and more.

1. Kūmara sourdough (top shelf), and sprouted lentil loaves

(middle) will be everyday ixtures on the menu. German stollen
(bottom) – a cake studded with dried fruit, nuts and spices – will
be a festive seasonal speciality.
———
2. Hishon likens the way the lid goes down on this 120-litre bread
mixer to the doors on a Lamborghini.
———
3. This Fortuna bun divider is a hand-me-down from Welzenbach’s
German grandfather. One large slab of dough (up to 4kg) goes into
the machine. The lid then comes down and the machine undulates.
The weight of the machine and motion it makes creates 30 identical
bread rolls from the larger original piece of dough.
———
4. The copper bowl under this pastry mixer, designed to whip
things like cream and egg whites, is roughly 100 years old and
belonged to Welzenbach’s great grandfather.
———
5. This is a retarder. It can prove, chill, and freeze dough as
required. It will be pre-programmed each evening for whatever is
inside so it will be ready to bake come morning time.

Daily Bread opens 10 Jan, 2018. 1210 Great North Rd, Pt Chevalier.

My Auckland
Janine Russell (aka J9) roams
from Mount Albert to Avondale
Markets, Silo Park and beyond. 4

1. It wouldn’t be My Auckland without a mention of my cat Mow

Mow (pronounced Mao Mao). Not long after I moved into my house,
she showed up in the garden, extremely skinny, very scared and
hungry. I started feeding her and now she shows her gratitude by
constantly death staring at me at every given opportunity. She wears 5
the pants in our relationship. The moves I pull to get out of my bed
each morning so as not to disturb her precious sleeping self would
impress even the most supple contortionists.

2. On a summer weekend, I like to get up early, pack my tiny
chillybin with snacks and beverages and head to Point Chev Beach
to ind a good spot before the rest of Auckland arrives.
———
3. This is me! *Waves* Hi!
———
4. It’s become a Sunday morning ritual to visit the Avondale Market
and stock up on veges. All you need is a friendly smile, a handful
of gold coins and maybe some patience for shuffling, as the aisles
can get quite busy. It’s worth wandering to see what else is on ofer;
stallholders have everything from carpet to pushbikes, lawnmowers,
bric-a-brac and watches. Pictured are bitter melons, which I haven’t
yet cooked with, but I have some recipes to try out now.
———
5. I love the annual Silo Park Cinema. We usually grab a ridiculously
oversized beanbag, a couple of blankets, and head down early to get
a good viewing spot. They’ve recently released their 2018 schedule –
nothing is going to stop me from attending the Labyrinth screening!

6. A few years ago, I enrolled in a ceramics class, and I fell head over
heels in love with the process. So much so I lew to Greece to take
part in a nine-day intensive pottery course. Fast-forward a year of
saving and I inally own my own wheel. It’s not a very tidy hobby,
especially for a Virgo. This is the “before” photo – taken the day I
purchased my wheel, brought her home and set up my pottery nook!
———
7. A very lazy wander down the hill from my house lays the sprawling
Western Springs Stadium and Park. It’s home to many an event
including Auckland City Limits, which I have the pleasure of being
involved with.
8

8. When I was younger and far more adventurous, I’d go on treasure
hunts to ind graiti all around Auckland. I’d take my ilm camera,
and create artwork with the developed photos. This particular mural
by Owen Dippie and Hipara August is near my gym in Morningside.
I love how our city has embraced street art, but I still think there’s
