Tagliolini Cacio e Pepe



Fast food, the Italian way!



Serves: 4

Ingredients
For the tagliolini
• 4 eggs
• 400g of 00 flour
• Semolina for dusting
• Pinch of salt

For the sauce
• 80g grated pecorino cheese
• Black pepper (to your liking)
• A few tablespoons of pasta water

Method
Place the flour on a wooden board, make a well in the centre and drop in the eggs
and salt. Combine using your fingers or a fork, then knead vigorously for about 10
minutes. Shape into a ball, wrap in plastic film and rest for 30 minutes.

Using a pasta machine, roll out the dough to a thickness of 3mm, then run it through
the spaghetti setting. Flour with semolina and hang to dry.

Bring a pot a salted water to the boil. Drop the pasta in and stir. Cook for 90 seconds.

In the meantime, put a large pan on the stove and add one ladleful of pasta cooking
water to the pan. Drain the pasta and add it to the pan, stirring well to release the
natural starches. Turn off the heat, add the pecorino and pepper, stir vigorously until
creamy and serve hot!
