aceite; retirar y freír luego las piezas de pollo, para que se doren bien, a fuego suave. Agregar el
jitomate y especias molidas, dejarlos freír y añadir agua; sazonar con sal y azúcar. Añadir las
aceitunas y el resto de las pasas y las almendras picadas; retirarlas del fuego cuando el pollo esté
cocido. Servir el platillo acompañado de chiles serranos en vinagre. La receta alcanza para 8
raciones.
Almond chicken

1 kilo carne de res 3 jitomates
250 g papas 2 clavos
250 g ejotes 2 chayotes
100 g chile chilcoxle o guajillo 2 hojas de hierbasanta
50 g masa de maíz 1 cebolla chica

Para preparar amarillo con carne de res hay que cocer la carne en agua suficiente, con ajo y sal.

caldo de la carne, los ejotes y chayo tes (previamente cocidos y rebanados), las papas cocidas,
hojas de hierbasanta, tomates, cebolla y jitomates picados. Sazonar con sal y dejar hervir. Desleír
un poco de masa en caldo para espesar el guiso; al resto de la masa se le pone un poquito de
manteca y sal. Formar bolitas con la masa, haciéndoles un hueco en el centro para que se cuezan
con el guisado (se llaman chochoyotes). Servir con jugo de limón mezclado con cebolla finamente
picada. La receta alcanza para 8 raciones.

las verduras. Añadir la rama de apio y sal al gusto; tapar y cocer a fuego suave. Retirar cuando se
consuma el agua y el arroz esté cocido. Adornar con tiritas de chile pimiento. La receta alcanza

tengan un color negro; licuar con agua. Quemar la tortilla a fuego directo, hasta que se ponga
completamente negra. Moler muy bien la tortilla, los clavos, pimientas y cominos, las semillas y los
chiles con un poco de caldo; colar muy bien. Moler el jitomate, tomate y ajo asado. Freír todo en

en que se cocieron las carnes y las hojas de aguacate asadas en el comal. Preparar los chochoyotes
con masa revuelta con manteca y sal al gusto; tomar bolitas del tamaño de una ciruela chica y
hacerles un hoyito. Incorporar los chochoyotes para que se espese la salsa; si es necesario, se
agrega un poco más de caldo y se deja cocinar. Cuando estén cocidos los chochoyotes, agregar las
carnes y las verduras para que todo dé un hervor. La receta alcanza para 10 raciones.
Chichilo

agregar la carne deshebrada, la canela, las aceitunas, almendras, alcaparras, perejil, vinagre y las
pasas. Cuando reseque, sazonar con sal y azúcar; retirar del fuego y rellenar los chiles (asados,
desvenados y limpios) con esta preparación. Batir las claras a punto de turrón y agregarles después
las yemas. Espolvorear los chiles con harina, cubrir con huevo batido y freírlos en aceite caliente.

cochinita y freirías en aceite; a medio cocer, agregar picados el jitomate, cebolla y ajo; orégano,
pimienta y hierbas de olor, las zanahorias y las papas, cocidas y picadi- tas; chícharos, alcaparras,
pasitas, chiles y sal. Rellenar la cochinita (adobada con sal, pimienta y ajo) con el picadillo anterior
y cubrirla con papel aluminio. Hornear durante dos horas aproximadamente; cuando ya casi esté
cocida, quitarle el papel aluminio y dejarla dorar. Servirla con el picadillo sobrante. La receta
alcanza para 15 raciones.
Cocina de coles
Receta mexicana de Cocina de coles del Estado de Oaxaca, México.
• 1/4 kilo jitomate asado
• 300 g chorizo, en trocitos
• 100 g tocino
• 3 tazas de caldo
• 1 taza de garbanzos
• 2 dientes de ajo
• 1 col chica, rebanada
• 1 cucharada de perejil
• 1/2 cebolla
• pimienta
• sal
Para preparar cocina de coles hay que picar y freír el chorizo y el tocino en su misma grasa. Agregar
el jitomate, molido con el ajo y la cebolla; cuando la preparación reseque, añadir el caldo, y cuando
esté hirviendo, agregar los garbanzos cocidos y limpios, la col y el perejil. Sazonar con sal y
pimienta y cocinar hasta que se cueza la col. La receta alcanza para 8 raciones.
Coles cooking
Mexican recipe for cabbage cooking in the State of Oaxaca, Mexico.
• 1/4 kilo roasted tomato
• 300 g chorizo, in pieces
• 100 g bacon
• 3 cups of broth
• 1 cup of chickpeas
• 2 cloves of garlic
• 1 cabbage girl, slice
• 1 tablespoon of parsley
• 1/2 onion
• Pepper
• Salt
To cook cabbage, you have to chop and fry the chorizo and bacon in the same fat. Add the tomato,
ground with the garlic and onion; when the preparation dries, add the broth, and when it is
boiling, add the cooked and clean chickpeas, the cabbage and the parsley. Season with salt and
pepper and cook until the cabbage is cooked. The recipe is for 8 servings.
Coliflor gratinada
Receta mexicana de Coliflor gratinada del Estado de Oaxaca, México.
• 1 coliflor cocida
• 1/2 litro de leche
• 50 g mantequilla
• 50 g queso
• 2 cucharadas de harina
• pimienta
• nuez moscada
• sal
Para preparar coliflor gratinada hay que fundir la mantequilla, agregar la harina y, antes de que
dore, añadir la leche tibia; sazonar con sal, pimienta y nuez moscada. Agregar la coliflor en
porciones para que se impregne bien de salsa. Acomodaría en un refractario; espolvorear el queso.
Gratinar en horno caliente y servir luego. La receta alcanza para 6 raciones.
Grated cauliflower

• 1 cooked cauliflower
• 1/2 liter of milk
• 50 g butter
• 50 g cheese
• 2 tablespoons of flour
• Pepper
• nutmeg
• Salt

Conchas de pescado
Esta receta mexicana de Conchas de pescado de Oaxaca, México lleva los siguientes ingredientes:
• 1/2 kilo salmón (cocido y molido)
• 1/2 kilo robalo (cocido y molido)
• 1/2 kilo jitomate
• 100 g pan molido
• 50 g mantequilla
• 1 taza de salsa blanca
• 8 conchas para horno (moldes)
• 3 cucharadas de aceite
• 1 cebolla finamente picada
Para preparar conchas de pescado hay que picar y acitronar la cebolla en aceite; ahí mismo freír el
jitomate, asado y molido; agregar el robalo y el salmón; revolver y sazonar al gusto. Untar las
conchas con mantequilla y llenar cada una con el pescado guisado. Espolvorearlas con pan molido
y cubrirlas con salsa blanca previamente preparada. Hornear durante veinte minutos, hasta que
doren; servirlas calientes. La receta alcanza para 8 raciones.
