designed in Zen

Manish Chopra,

2,200-sq-ft Gurgaon house. A peek
into the living room, and I see what he
means. Sunlight floods in through light
drapes on the tall French windows that
open into a balcony with a Japanese-
dining table looks out into the garden
through the same French windows.
It’s bliss, sequenced in modern,
spacious intimacy.
BUILDING A
PERSONALITY
“This was a DLF property and one of
their very few, anywhere, which had
such a tall ceiling at 16 ft. I fitted a
false ceiling of about 4 ft,” Manish tells
me of the house he bought in 2004,
and designed himself over the next

everything, whether it is the size of
the tiles, the angles of the walls or the
colours on them. I wanted a house that
was primarily a bachelor’s pad with all
the comforts and luxuries in it, without
making it look like a hotel or museum.

1 tbsp vegetable oil

2 cloves garlic, minced
¹�₂ tsp salt

950 gm white beans, rinsed and drained

Pumpkin seeds (pepitas),
toasted (optional)
PREPARATION
1. As part of a pre-preparation, in a small
bowl, combine 2 cups broth and 1 cup
pumpkin seeds. Cover and chill 12 to
24 hours (do not drain).
2. Now place a skillet over medium heat.
Add chilli peppers; cook for 3 minutes or
until fragrant and slightly darkened,
turning frequently.
3. In a medium saucepan, heat oil over
medium heat. Add onion and garlic; cook
for 5 minutes or until onion is tender,
stirring occasionally. Add salt and
coriander; cook and stir for 30 seconds.
4. In a blender or food processor, combine
pumpkin seeds with soaking liquid, chilli
peppers, onion mixture, remaining 2 cups
broth and half of the beans. Cover and
blend or process for 3 to 5 minutes or until
smooth. Return to saucepan; stir in
remaining beans. Bring to a boil; reduce
heat. Simmer, covered, for 15 to 20 minutes
to blend flavours.
5. If desired, serve soup with cilantro and
additional toasted pumpkin seeds.

1 tsp sesame oil over medium-high heat.
Add onion; cook for 2 to 3 minutes or
until nearly tender, stirring occasionally.
Add remaining garlic; cook and stir for
30 seconds. Add remaining 2 tbsps soy
sauce, broth, water, vinegar, honey and
crushed red pepper. Bring to a boil; stir in
meatballs. Return to boiling; reduce heat.
Simmer, uncovered, until meatballs are
cooked through (73°C). Stir in cooked
rice and basil.

900 gm potatoes (6 medium)

¹�₃ cup freshly grated Parmesan cheese
¹�₃ cup pine nuts, toasted*
3 tbsp water
2 tsp lemon juice
4 cloves garlic, minced

1 cup red and/or yellow tiny pear-
shape tomatoes, halved lengthwise

PREPARATION
1. In a large saucepan, cook potatoes in

20 to 25 minutes or just until tender.
Drain and cool slightly. Peel and cube
potatoes. Then place potatoes in a bowl.
2. For pesto, in a food processor or blender,
combine arugula, ¹�₃ cup cheese, ¹�₃ cup pine
nuts, water, lemon juice, garlic, salt and
pepper. Cover and process or blend until
nearly smooth. With processor or blender
running, slowly add oil through opening in
lid in a thin, steady stream, stopping to
scrape down sides as necessary.
3. Pour pesto over potatoes; toss gently
to coat. Stir in tomatoes. If desired,
top with additional pine nuts and/or
shaved cheese. Serve slightly warm or
at room temperature.
Makes 8 servings.
*Tip: To toast pine nuts, preheat the oven
to 175°C. Spread pine nuts in a shallow
baking pan. Bake for 5 to 10 minutes or
until light brown, watching carefully and
stirring once or twice.

hrough lesser-known dishes, ingredients and flavours from the
Northern and Central regions of Italy, Le Meridien Gurgaon, Delhi
NCR’s Bella Cucina is busting the belief that Italian in India is
primarily about pastas and pizzas. So, not only do sous chef Amit
Kumar and his team offer authentic, flavoursome Italian specialities, but
also present them in the most interesting fashion.
My evening began with antipasti, a tiny cup of aromatic, frothy and light
Cappuccino of Mushroom Soup, complemented with a buttery Porcini
Brioche, a bread roll flavoured with porcini mushrooms. Setting the bar
quite high with its deliciously smoky flavour, the must-have soup gave way
to two other show stealers—Compressed Beetroot with Goat Cheese and
Prawn Ravioli Bisque Emulsion with Young Tomato. The former, with rocket
lettuce, jelly made of goat cheese and beets, and caramelised walnuts to
render bursts of sweetness, was topped with goat cheese snow—a molecular
twist that also made the plating look dramatic. The aromatic, fresh ravioli
stuffed with prawns and cooked in a tangy young tomato sauce, was light,
smooth and scrumptious, thanks to it being cooked in dollops of butter.
