“Como en ninguna otra comunidad religiosa, el soplo de Dios está muy presente en los fogones judíos.
Así, el ama de casa hebrea al cocinar, el cabeza de familia al recitar las bendiciones en la mesa, el
agricultor al dejar reposar cada cuatro años sus tierras, el matarife al sacrificar las reses,… y cada judío al
comer, todos ellos con su acatamiento a los preceptos recogidos en la Torá (o establecidos por los
rabinos) sellan y renuevan continuamente la alianza del pueblo de Israel con Yavé.
La religión es el principal condimento de la cocina sefardí. Una cocina portadora de claves alegóricas y
gustativas a través de las cuales se expresa su universo religioso y su cultura. Unas veces, el signo delator
era algún ingrediente especialmente apreciado por esta comunidad como las berenjenas, el aceite de
oliva, los huevos haminados, las torrijas (“rebanadas de parida”) o los buñuelos con miel y canela. Otras,
el tipo de preparación culinaria, tal sería el caso de la adafina (y demás guisos cocidos a fuego lento
propios del sabat), las albóndigas y las empanadas y empanadillas. De todo ello tratará la conferencia.”

La Real Academia de Bellas Artes y Ciencias Históricas de Toledo se fundó en junio de 1916. Desde
entonces ha realizado una intensa labor destinada a fomentar un proyecto de ciudad en el que las señas
de identidad del pasado, se consideren como elementos básicos para el futuro.
En la actualidad, la Institución sigue siendo necesaria, al permitir un seguimiento de las decisiones de
las administraciones públicas. También por proponer actuaciones en las que priman los intereses
técnicos en tiempos que superan los marcos que establecen las legislaturas.

Aunque son raros los textos poéticos sefardíes cuyo tema esté específicamente dedicado a lo gastronómico,
sí encontramos en ocasiones asuntos relativos a guisos, comidas y bebidas en canciones y coplas, cuyo tema
central no es precisamente el culinario. Como no podía ser menos, muy frecuentemente en tales poemas
figuran las comidas en estrecha relación con el vino y con las bebidas alcohólicas, e incluso hay algunos
textos poéticos dedicados de modo específico a las bebidas y sus efectos. En la presente conferencia voy a
ocuparme de algunos de esos textos que tienen referencias gastronómicas. Todos los textos que vamos a
comentar pertenecen a la tradición de los sefardíes del Imperio otomano y de los Balcanes.
